♦♦♦  What is it about bacon? For many of us, the idea of it, the appearance of it, the aroma of it, just makes everything seem better. And now we can go into happiness overload with these 33 Bacon Recipes for BLTs, Burgers and Beyond. The “Beyond” gives us other sandwiches, pasta and other entrees, salads and other side dishes, tarts, the great sounding beer bread with brown ale, cheddar and bacon, and within the mix snacks and preps that can become snacks. Including these great tasting beans that we chose, with the maple bacon all but stealing the show.  Food & Wine

Serve the beans in small hot cups {be sure package specifies for hot foods & beverages} for snack time, and a little cheese on top can’t hurt

♦♦♦   To give credit where credit is due, the idea for this this fun s’mores-y treat for the sweet side of the Happy Hour table comes from a flyer in Sprouts Famers Market. Campfire Cones! No ice cream, instead filling coconut cones with chocolate, marshmallow, other stuff like coconut if you want, wrapping in foil and grilling.

We took off on this two different ways, in both cases using cup style cones and going a bit more S’mores-y with the addition of graham cracker crumbs . For our baby cone {see pic} we stayed ice-cream-free, layering hot fudge, marshmallow creme, fudge, creme, fudge, crumbs. For the larger one that does use ice cream along with the marshmallow and fudge, you’d probably want to set up a fun diy S’mores buffet.  CS

For the hot fudge the thicker ones work better like Hershey’s or Mrs. Richardson’s, either one OK right from the fridge. You don’t however want to refrigerate any filled cones as they will go soggy.

♦♦♦  In these lazy, hazy – OK, and HOT – days of summer, icy is nicy. Cooling off in the tastiest way is as close as these 12 Frozen Cocktails to sip into as long as the season lingers on. With one more colorful than the next and flavors galore there’s something for everyone to enjoy. Two I found particularly intriguing were the Miami Vice which uses frozen fruit instead of ice, and the Frozen Salted Espresso Martinis with all the interest right there in the title. ♦♦♦  Perfect summer fun. Any prep that starts with watermelon sure inspires further reading. And this one, Watermelon Dessert Pizza, whimsically has a thick slice of the melon taking on the role of “crust.” It then further rewards us with an innovative creamy layer topped off with some if the star’s cousins. And so, so easy. Btw, I took a clue from the comment section and mixed the coconut cream with cream cheese for a sturdier texture.  Tasty

♦♦♦  Look what just three ingredients can do. Unrolled and slightly flattened crescent roll dough is cut into squares, 3-Ingredient Bacon-Guacamole Crescent Cups lightly pressed into muffin cups, baked until golden. The remaining two ingredients in this prep add up to the title, Bacon and Guacamole Crescent Cups, and to a most tasty result.

In this case it’s store-bought guac but no one’s going to complain if you go past three and make your own. And of course all you creative CS-ers will find so many tasty and colorful ways to fill up those adorable cups.  Pillsbury

♦♦♦  It looks like the new kid in town these days is Kava. A cup of Kava tea. Or a can of Kava drink. Or an alcohol-free Kava cocktail. The root-based beverage, a long-time favorite in the Pacific Islands, is trending here and especially among the younger set but its reputation as a stress reliever, muscle relaxant and sleep aid may hold appeal for all ages. Further evidence of the Kava wave is the emergence now of bars based solely on this specialty beverage. ♦♦♦  One of our best ever recipes was featured last year, reprised here not only because it’s such a crowd pleaser but also as a no-bake prep it’s perfect as a summer indulgence. It was actually Alexa that brought to our attention this No-Bake Chocolate Peanut Butter Cheesecake. Vying for the richness trophy, the melted chocolate chip layer vs the peanut butter/confectioners sugar tier.

Would certainly be good as is. But just to gussy it up a bit, melted another 1/4 cup of chips to drizzle overall.

Btw, I cut this recipe in half and made it in a deep dish pie plate. Used semisweet chips but think bittersweet could work well too. Also, ran both layers through the food processor so they would turn out silky smooth. Note that it needs fridge time in the process and afterward.

And now I’m wondering, hmmm, how would this be made into bite size treats in a mini muffin pan (???)  Tasty

♦♦♦  Here’s yet another case of, that recipe idea came from where??? This time it’s a popular tv series and specifically the episode called “The Blacklist Declassified,” where in one scene Red, a known connoisseur of fine food and spirits, is enjoying French toast kabobs. Yum. There are several preps on google, but I like this French Toast Kabob recipe for its use of buttermilk and dense bread, plus a triple hit of fruitful color.  Martha Stewart

♦♦♦   After never hearing of a michelada for all of my life, in a short span I came across three separate references to this spicy Mexican beer cocktail. But not a recipe in sight for the trio. Ha! We know where to find a definitive prep, and they give us a demo too, where we hear it called a great daytime drink, combining the fizz of a mimosa and the savoryness of a bloody mary. ♦♦♦  Just seeing the words, “bacon wrapped,” snags attention pretty fast for many of us. And what’s behind the wrap here is also quite enticing. We’re talking about Bacon Wrapped Chicken Taquitos. ♦♦♦  Well here’s a fun way to gin up the party vibe. ♦♦♦  OK, back to bacon. This though is an encore with an enhancement. In our 03.18.22 Salon we featured cheesy bacon bread pudding. Very good as is, but since traditional sweet bread pudding is usually served with a sauce, why not a saucy companion for this savory one. I kept it pretty simple – mayo, enhanced with a touch of ranch dressing, lemon juice and dried parsley.  CS

♦♦♦  I feel like I’m being haunted by volcanos. In last week’s Salon, we featured our discoveries of volcano-shaped dishes for virtually every food group, plus wines from grapes grown on volcano slopes. Now a recent episode of “Bar Rescue” had a mixologist rimming a cocktail glass with volcanic salt. On Google it’s also called lava salt or black lava salt. Then searched using it for cocktails and found it’s mainly for rimming {but see below}. And among those finds was a pretty Strawberry Thyme Margarita from Food 52

♦♦♦  In a recent episode of The Kitchen, Broadway actor Daniel Breaker prepared a Baked Egg Bar. What an easy way to make multiple servings that are also fun and colorful. On the show, and in the linked recipe, delectable toppings are added to eggs and cream in ramekins before the whole panful is baked. The recipe notes that you can also have guests add their own to the unbaked dishes. Just thinking, what if you added, say, just some colorful chives and cheddar before baking, and then after baking have the guests top off as they wish from a “bar.” Whichever way, just a great idea.  Food Network

♦♦♦  Wow, was I happy to find this recipe for Baked Pancake with Pancake Mix. I used to buy the store brand that had a good version on the box, but that is no longer available. Even better, this prep shows a preference for the brand sitting right on my pantry shelf. So much good going on here. First, and as usual foremost, the taste is phenomenal, and would be even without the chocolate chips I added. Now just look at the photo and you can see how tender this is, the way it curves onto its platemate. And because it bakes in a 9×13, you can feed a lot or freeze a lot.  The Seasoned Mom

Also to note in the photo – the top of the pancake {left} does not brown in the oven. but the bottom does. So just flip over and you’ll be serving the golden one on the right.

♦♦♦  One of the great things about brunch is the option to set out little bites of good stuff, often with a breakfast vibe. Sort of like an early cocktail hour. And wowsie does this dish fit the bill. Mini Cinnamon Roll Bites. Easy! Starts with a refrigerated pie crust. Butter it up, sprinkle with sugar and cinnamon, roll it up and bake. A simple glaze prep in also included, which is presented as a dip but seems it could also be a drizzle. Demo too. Add a cup of coffee and it’s the perfect brunch finale.  Tasty

I haven’t made this yet, but would be inclined to use the whole crust, even if a few of the rolls ended up less than uniform. My mom used to create a few of these from the dough scraps whenever she made a pie. Just one of the ways she was my role model in finding ways to not waste food.

♦♦♦   What can make a classic brunch beverage take on such additional traits as fun, festive, tasty, colorful, clever. Answer – the easy technique for making these Rainbow Mimosas. What’s so appealing about these glassfuls is their multiple flavors since they’re created mostly with natural juices – cranberry, carrot, mango, matcha lemonade, blue curacao, butterfly pea flower tea – topped off with Prosecco or Champagne. Wondering if  blueberry juice instead of curacao and grape juice instead of pea flower could work. There’s always of course food coloring, and as well you certainly don’t have to make all 6 colors.  Food Network

♦♦♦  Does it make you kind of want to head for the kitchen just hearing about a recipe for Pizza Tots??? This one starts with 3 1/2 cups hash browns, seasoned, and eggy-ed up to create a moldable consistency. Small handfuls are then shaped around mozzarella and pepperoni, briefly frozen, then fried and served with marinara of your choice. Yum. Demo too.  Tasty

I found online that 3 1/2 c = 1 lb hash browns, but all the packages I saw were larger than that. No worries about leftover taters though . . .

♦♦♦  Here’s another dessert bar that’s sturdy enough to be cut to candy-size, especially if right out of the fridge. These Apple & Brown Butter Blondies can add a nice, sweet touch to the Happy Hour table. The mixer does most of the work, with the apple cutting being the only part that needs a bit of time – may experiment next time with apple pie filling or something else I found called fried apples. Meanwhile, may I add, these are really good.  AllRecipes

So, the recipe I used was is the AR magazine, but the link shown on their page {and now above} went to a slightly different title, and slightly different prep, with the most notable changes being the handling of the butter & the number of apples. I’ve posted the mag version on our Recipe Page.

There are soooooo many of them available, but good news checks in again because you can filter the results by price, rating, discounts and more. ♦♦♦  Lots of folks want their bourbon straight, some possibly inviting in a few ice cubes. But it can also be neat {sorry} to mix that spirit into tasty cocktails. Let’s not though take seriously “26 Bourbon Cocktails to Make Tonight” starting instead perhaps with one or two.      Love a big breakfast? Hate big preps when your eyelids are still at half mast? Solved! And in a mighty tasty way. These Reheat-able Breakfast Calzones are hearty too, plump with chorizo, potatoes, onions, peppers & seasonings. The prep list may look scary long, but it’s basically cook the chorizo, then the veggies, stir in seasonings. Roll out store bought dough {or make from recipe provided}, fill and freeze. They reheat right from the freezer. Thinking, to make it even more of an eye opener, swap out the bells for jalapenos or habaneros.  From Food Network

    Have you heard of Banoffee Pie? It’s sort of like banana cream gone wild. In the original English version there’s usually a biscuit base, but this prep calls for a graham cracker crust. Then it goes all caramel-y with a layer of dulce de leche that you make from sweetened condensed milk {or, guess you could just buy a comparable amount of dulce de leche}. Along with some cooling steps, then bananas, whipped cream and chocolate shavings. Btw, here’s another place where you would thank an offset spatula {mine from Amazon}.  From Tasty

     Move over potatoes, there’s a new chick in town. More specifically, Hasselback Chicken. The classic technique delivers a mouthful of flavor, as the slots are filled with spinach & ricotta, topped with cheddar and paprika. One thing, you may want to add the cheese later in the process. A tip I learned for anything hasselback is to lay wooden spoons or chopsticks on each side to insure you don’t cut all the way through.  From Tasty

     Promise you won’t run when I mention . . . Chocolate Salami. This confection by Giada is a clever sendup on the deli fave, with buttery chocolate supplying the background and then nuts and crushed biscotti playing the “fat” roles. As a final touch, the whole shebang is rolled in powdered sugar. Yet one more dessert that also serves as a conversation piece.  From Food Network Kitchen

    When Ixipixie, who posted this prep, calls it Hot Corn, you can believe that’s just what it is. And well beyond the warmth of being baked golden in the oven. That other kind of heat is contributed by a full 12 oz jar of jalapenos. Coming to the rescue, somewhat at least, is a lot of cream cheese and cheddar. The descrip says for this family it’s become “a must have for all holidays and special occasions.”  From AllRecipes

Kitchen TalkIn KT in our 11.12.21 Salon we talked about finally adding Gochujang to our seasoning repertoire but noted we’d not yet used it. Not being a big fan of ketchup, always used taco sauce for fries. Now? Gochu is the go-to!      If you need a decadent  treat in a hurry, here you go. Chocolate Chip Cookie in a Mug. Thanks Food & Wine.      Baking for the holidays? This could be helpful. The article “Don’t Make These Pie Dough Mistakes” from MyRecipes identifies a half dozen ways the process can go bad no matter which technique you use. {I’m trying not to take personal the one that says, Your fat particles are too big.}

Shopping FindsI just finished a truly pleasant read. Pamela Kelley’s tale of three sisters brought together inside “The Restaurant,” is a love story x 3, revealed by some gems excavated along the way – their Gram’s love secret behind the secret, the subplot for pet lovers, and love of comfort food, including a fish technique. Make that four when you add in the gentle love between the sisters who’ve lived apart for such a long time. Multiple formats, 4 stars on Amazon.   Which salsa to buy? This salsa taste test by MyRecipes gives you the scoop. Most should be at your market, but if not or you just want it delivered to your doorstep there’s a large selection on Amazon.

Well these are fun. Mozzarella and pepperoni are wrapped in seasoned hash browns and deep fried to golden crispiness. A nice dip in marinara and the pizza vibe is complete. Demo shows all the steps and details.  From Tasty

Chocolate Lasagna

Really? Well let’s take a look. Cream cheese stands in for ricotta. Chocolate pudding replaces Italian sauce. And admittedly a stretch, chocolate chips top it all instead of Parm. All in all, seems to qualify for the lasagna category, just checking in for dessert rather than main course.  From Southern Living

Bake Sale Winning-est Gooey Oat Bars

Oh CS-ers, these are good. The tender buttery crust is just the tasty start. After baked golden it’s spread with a filling reminiscent of pecan pie but instead of nuts a mix of coconut and other sweet treat goodies, in the case of ours here – chocolate chips, dates, and raisins. Then a final flurry of powdered sugar makes it pretty. As with many baked goods, even better the next day.  From Food Network

Butter Chicken

That star ingredient is magnetic enough, but then add in the wave after wave of flavor contributed by fragrant, maybe even exotic, Indian seasonings. And even so, chances are many of them are already in your pantry and fridge, like onion, garlic, yogurt, brown sugar, canned tomatoes. Well this could be a darn welcome resource for the holidays, especially if you have house guests. Generally sheet pan dishes simplify things and the ones here seem to be no exception.    Say what? Doing shots after the entree{s}? Turns out it’s a French tradition known as a trou normand. And it’s quite an interesting concept. The link takes you to a story on MyRecipes that pours out the whole story, the what and the why – and what the heck that term even means.

   If you can still find a Oct/Nov 2021 copy of Taste of Home, among the other always fine food features you’ll find one entitled “Wisecrackers,” {sorry could not find a link}, with a “Tasty Ten” ways of dressing up a basic or fancy cracker. Just some of the ideas, Apple butter, white cheddar, pear and sliced toasted almonds. Hummus, green & black olives, garlic, feta, and a drizzle of olive oil. Queso fresco, shredded pork, salsa and jalapeno.

Can’t find it? Just start with any crackers you have and look upon them as blank canvases, just waiting to be turned into little works of art with the help of your fridge and pantry.

  Nothing wrong with some mini desserts on the snack table. Like these! Chocolate Peppermint Cheesecake Bites, from AllRecipes. Great holiday flavor. And easy to make right in your muffin tin.

    Here’s a sweet and festive way to start the day. Strawberry Banana Pancake Skewers. Colorful too, as the golden pancakes, bright strawberries and banana slices alternate from end to end. Do we even need to mention the possible shortcut – store  – bought mini pancakes.  From Tasty

    The Kitchen’s Katie Lee’s love affair with veggies translates into some mighty fine dishes. Her Melting Potatoes, a case in point. The sear-then-roast process turns out bronzed beauties ready to pizzazz up any plate. They cook in a seasoned buttery sauce that is then poured over them for the perfect finishing touch.  From Food Network

    Note right upfront that this recipe for Chicken Tinga with Bacony Black Beans does need your email. Could be worth it because this is one great collection of ingredients. Or . . . you could use my shortcut – start with slightly crisped corn tortillas, top with a can of black beans mixed with 3 slices ccooked crumbled bacon and 1 t ea onion powder and cumin. Next add about 1 cup cooked shredded chicken into a can of rotel mixed with 2 T chili powder, 1 t onion powder, 1/2 t garlic powder and enough V-8 to create a nice texture. Top the hot mixtures with chopped onion, cilantro, and crumbled queso.  From Bon Appetit

    What we have here is a dyi version of a well known candy bar. Called Chocolate Coconut Bars, they are quite easy to make and taste fabulous. Btw if the measures show in metric, note you can click a button to convert.  I don’t think I’ve seen this site before, but with recipes like this, including other dyi’s, it certainly is worth checking out.  From Kitchen Stories

The title candy bar plays three roles here, in the crust, in the filling, and as garnish.   Giant Breakfast Sandwich   In our 08.20.21 Salon we featured two “giant” preps. Now those same folks are at it again, offering us another tasty way to go big. In this case, supersizing the start of our day with a sammie that stacks pork sausage, cheese and eggs on a homemade biscuit {with biscuit mix for a shortcut}. A triple “bath” takes it over the top, cream on the biscuit, hot sauce on the eggs, warm syrup on the whole shebang.  From Food Network

   Chipotle Cheddar Corn Chowder  Credit Alexa for popping up a prep for cheddar corn chowder. But then when I went to fetch the link for you, found this version with a spicy twist from the same source. Hatch chilies also get in on the act, along with butter, veggies, aromatic seasonings and a full package of bacon.  From Epicurious

   BBQ Pulled Pork Fries  Oh my, these look so good. First, mercy sake, it starts with French fries. Then the layers begin, bbq pork, red onion, pepper jack, scallions, then one more time. Lots of folks weighed in to give this dish 5 stars on the google page.  From Tasty

   Autumn Muffins  A taste of fall in every bite. What makes it autumn? Apples, cranberries, figs and hazelnuts, plus all the wonderful seasonings that fill the house with the aromas that tell us baking season is back.
