Let’s wine & dine with Alexa

Tap into some of this culinary bounty that is an everyday part of Amazon Echo’s offerings – always CS-style recipes, sometimes tips and tidbits too

Caramel Bourbon Brownie Cookies   There’s a title that catches the eye. And it doesn’t even touch on the cocoa, chocolate chips and walnuts that also go into these treats described as chewy and chocolately with  a hint of spice. Includes some nice ideas too for any leftover caramel sauce. Video and step by step demo. From SideChef.

Cubano Burger   Everything you love in a Cubano sandwich piled onto a well seasoned ground pork burger, all tucked into a brioche bun. Yum. From Tastemade.

Loaded Vegetarian Nachos   Show of hands for renaming these Fiesta Nachos, because just look at that celebration of colors, flavors and textures all on one plate. More ingredients than we usually feature but so worth it and you actually could if you want limit the toppings. One shortcut that I used was canned lentils, still stirring in all the seasonings. From Tasty.

♦  Eggs in a Cloud   The same folks bring us a prep that is pure fun. And, oh yeah, there’s bacon in there too, plus chives if you like, mixed into the whipped whites, baked for 3 min to emerge with golden crests. Then the yolks are plopped into these nests, a bit more baking and out comes a whimsical breakfast. A big bonus is the wacky hack you’ll see in the demo for separating out the yolks. From Tasty.

Chili Relleno Casserole   The creator of this prep calls the dish very easy to prepare and loaded with flavor. Reviewers agree, giving it 4+ stars. It starts with canned whole green chile peppers that are stuffed with both jack and cheddar, treated to a pour-over of eggs, evaporated milk and flour, then baked. The recipe calls for topping with canned tomato sauce, but I’m thinking taco sauce could be interesting. From AllRecipes.

Mini Cheesecakes with Melty Chocolate and Strawberry Hearts   Make any day Valentine’s Day with a dessert that’s as simple as it is elegant. Decadence checks in too with its buttery graham cracker crust, rich filling, and perfect toppings. Note that you want to make them a day ahead to then decorate them after an overnight stay in the fridge. Credited to Christina Lane at Food Network Kitchen

Hosted by Barbara J Nosek

While we’re on a brief break, please enjoy past Salons & and other CS pages. See you right back here on Sept 17. Happy Labor Day!

  Let’s chat

Kitchen Talk – So, I finally made Joanna Fluke’s chocolate chip crunch cookies. They’re featured in her bakery-themed book series and dvds, also among the recipes in her cookbook based on the bakery goods in that fiction realm. Links for all below in Shopping Finds        I did tweak a bit. First, I used a cup of chocolate chips and a cup of butterscotch chips, because I happened to have those on hand. Second, I measured with an ice cream scoop {walnut sized cookies – nope}. It made 26 and still baked at 375 in 10 min. I know this sort of undoes the whole idea, but not sure about the crunch. A commenter said she used Corn Chex™ {because that’s what she had on hand}, and wondering if just personally I’d like that texture better. The flavor in any case is excellent.        Need to use up some taters? Here’s a tasty, and I’d say healthful too, way to do just that. Thai Curry Potato Soup on Ihe Idaho Potato Commission site, calls upon assertive seasonings that are slightly tamed by coconut milk and chicken bouillon. Interesting garnishes too.

♦  ♦  ♦

Shopping Finds – For Joanna Fluke’s items on Amazon.  Mystery novels   Movies based on the novels   Cookbook with recipes from the stories.        More sparkly stuff! OK, don’t see them in my stores yet but maybe in yours. Nestle ® Toll House ® Disco ™ Semi Sweet & Edible Glitter Morsels. How fun is that??? See more on their page.

This week’s featured CS-designed, Zazzle-crafted item – Our featured item last week was especially for dog lovers. This week, if you’re a dog lover and a coffee lover, this one’s for you. Or maybe for a friend who shares those two passions. “Who’s a good coffeehound???”  Browse on Zazzle, your choice, mug or tee.

Featured Recipes

Jacques Pepin’s Cream Cheese Soufflé

Wait, come back! Despite a rep that precedes it and not always in the most favorable way, this savory souffle could not be easier. The link actually takes you to a YouTube video where the platinum-credentialed chef himself shows you how it’s done. At the end of the demo there’s a list of ingredients and amounts. That his dishes are so elegant yet simple is a common refrain in the comments. From the Masters at Home series on PBS.

Giant cheese stuffed cracker

While it may borrow some style notes from pies, this is indeed a big-a cracker. And the title really should say CHEESE ’cause that filling blends a whole lot of cheddar, cream cheese and Parm. After the two crusts are baked, it’s all fridge. I did wonder if the crust would be so crackery that it would shatter when cut, but no, demo shows the wedge coming out nice and smooth, pie-like. Interesting way to shape the dough too. From Food Network.

Giant taco roll

Can two things from the same folks make a pattern? Who cares, this sounds like some tasty fun. A wrap made of baby corn tortillas is lightly baked with cheese inside and out. Then in goes a savory filling of ground beef, beans, pico, pickled jalapenos, black olives, seasonings and more cheese, baked and sliced. From Food Network.

Nutella Marshmallow French Toast

One bite and you’ll want s’more {sorry!}. And simple as can be. I personally like this prep because of the quick dip in the egg/cream mixture and then into the pan. Those who may prefer the more custardy version could certainly let it sit in the drink a while longer.  No Nutella? Do what I did and mix melted chocolate chips with cashew butter {or pb or almond butter}. Btw you could make at least two and maybe more given the amount of egg & cream. From Tasty.

Italian Style Eggplant Parmesan

Well I guess most of us already attribute that dish to this culture. But . . . maybe some of the ingredients do earn this Parm extra Italian credits. Fresh tomatoes rather than a canned products as the base of the sauce. Fresh basil rather than dried. Fresh salted mozzarella. And freshly grated Parmigiano-Reggiano. That’s a whole lot of mmm mmm. From Epicurious.

Their very best pizza recipes

From classic Chicago style deep dish and veggie to breakfast and dessert dishes. And so many ways to put it on the table – English muffin, pocket, pretzel, rolled, snack and casserole versions, also keto and gluten-free options, and yep dessert too. 26 in all. From Food Network.

Have a cuppa in Alexa’s room – recipes & more

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

Just pour a cup and let’s talk food with Alexa. Echo owners, also note that in many cases she guides you step by step through the prep . . .

Reuben Dips  When this came up on the screen and I went to AllRecipes to fetch the prep for you, wowsie, about a bazillion came up. So I just linked to the whole AR page and if you click it, the one that should appear in the first slot is the same one that was on Alexa’s screen and of the ones I checked really looks the best to me, and it is 5 stars. Also see an alternative below particularly suited to Happy Hour.

Chicken Tamale Pie  Got a moment? Send your cursor back to the link, click, and see just how good and satisfying this looks. It’s loaded with lots of chicken, plus beans, scallions, salsa, and seasonings, all topped with a buttery, cheesy, cornmeal crust. Rave comments for this one give it its 4.5 stars. From Food Network.

Extra Crispy Spicy Fried Cauliflower  Well the double hit of a coating that includes both flour and cornstarch likely says crispy’s gonna happen. And with a teaspoon of cayenne and two tablespoons of hot sauce you can probably expect that spicy promise to deliver too. With many other flavors also checking in, this is a really nice side dish, but thinking it could easily jump into snackland and right down into Cocktail Hour Buzz. From Tasty.

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

As promised, here is the dip referenced above in Alexa’s Room. This one is a Slow Cooker Reuben Dip which could keep warm on the snack table. Whichever one you make, whichever way you make it, probably want a big surrounding pile of rye or pumpernickel pieces or even rye crackers.

Bad news. Tequila Day was last month and some of us might have missed celebrating it. Good news. Patron has give us enough tequila-based drink recipes to last us till next year’s big day. Shown, watermelon basil margarita. Cheers!

Trisha Yearwood always brings us such fun food. And tasty too! As a fine example, her Cheese Straws which get an added kick from garlic powder, black pepper and cayenne. Not only great finger food, but thinking could also be pretty good dippers. Demo too. On Food Network.

New Salon every Friday – c’mon in

CS friends, and help yourself to tasty resources

Hosted by Barbara J Nosek

  Let’s chat

Kitchen Talk – It was only a matter of time before I succumbed to the lure of the Oreo cake balls that were in Alexa’s Room in our 06.25.21’s Salon. They are so, so, easy to make and that might be the bad news because, mercy, they are rich and even luxurious. They were new to me, and a little tour on google revealed they’re generally formed from cream cheese or frosting and cake or cookie crumbs, dipped or rolled in other goodies. All no-bake. And they’re fun, the round shape ready to become sports balls, funny heads, bling, and in fact star pastry chef Buddy Valastro turned them into pretty eyeballs. And – no surprise – Amazon has whole books of them.      And now how about a shortcut? If you aren’t planning anything fancy with the balls, just pat the mixture into a pan and use the chocolate chips to make a ganache frosting, as seen here.  Like the richest ever brownie.      I don’t think I’m alone in appreciating the nutritional benefits of oatmeal without necessarily being a fan of its delivery method {eating it}, and accordingly the Salon has offered various add-in suggestions. My new favorite has a German chocolate cake vibe – after cooked, stir in coconut, pecans, chocolate chips, and brown sugar or maple syrup.

♦  ♦  ♦

Shopping Finds – In our 06.25.21 Salon we featured Joanne Fluke’s foodie mystery novels, in turn the basis for a Hallmark series that we linked to in an earlier Salon. Now, what a nice find – her cookbook that reveals some of those recipes that teased us in the stories. Here it is on Amazon,  Joanne Fluke’s Lake Eden Cookbook.”        Well how fun is this. Could be for a get-together. Could be just so you’re always cooking in a partied-up kitchen. Food-themed balloons! Some are fun, some pretty, some downright appetizing. Note that you can find a specific food design – hamburger, pizza, ice cream, etc. – by entering it after “balloons” in the search window on the Amazon page. Many multi-packs too of food groupings, like the one shown here.

This week’s featured CS-designed, Zazzle-crafted item  We hear more and more that shelters are are so overcrowded as a result of the pandemic. Is there room in your home and heart for a shelter dog{or cat}? If so, spread the word to others.  Shelter dog mug  Shelter dog tee

Featured Recipes –

Chicago Deep Dish Pizza Dip

A full 5 stars for this fun and festive mix of of thick spaghetti sauce mix, pepperoni, ricotta, mozzarella, and Parm, ready to be paired with the suggested garlic bread or baguettes. Or how about a baked pizza crust cut in strips. Now while I am pretty sure with its rating this is mega-tasty, and some seasonings would check in from the sauce, still not sure it lives up to the Chicago adjective. I can tell you what would would do that trick is some garlic, oregano and red pepper flakes, maybe a bit of basil and fennel too. From AllRecipes.

Shoyu Chicken

All the classic Asian flavors come together to beautifully bronzed chicken thighs that taste as good as they look. While the demo shows that the skin was left on, I did remove the skin and would say no harm done. From Food Network.

Chocolate Dipped Peanut Butter S’Mores

How much does that title telegraph a decadent promise? And it looks like it will definitely live up to it. Especially since there’s even more. Because Nutella and white almond bark also come to the party. More? Suggested toppings reach into pistachios, pretzels and sprinkles. From Food Network.

Stuffed Queso Meatloaf

Even non-meatloaf lovers may want to grab a fork. Crumbed corn tortillas, tomatoes, chili powder and cumin join the usual suspects in the meat mix. Then, soft cheese and jalapenos are channeled in, and a tomato/ketchup glaze goes on. Bake, wait, slice, yum. From Food Network.

31 No-Bake Desserts

Any “no-bakes” that look good I’ll be sending your way right here, so as little as possible see the oven {even as we may feel like we are}. These are from FoodFeed, and the sneaky petes draw you in right from the git-go with chocolate peanut butter bugle bars. 🎵

Have a cuppa in Alexa’s room – recipes & more

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

Just pour a cup and let’s talk food with Alexa. Below are recipes recently displayed on the screen. Echo owners, also note that in many cases she guides you step by step through the prep . . .

Banana Bread Ice Cream Cake  What is it about bananas that they just excel at adding flavor, texture and moisture in so many ways to so many goodies. Here they’re mashed into a fairly classic banana bread, but after it’s baked the magic begins. Sliced into three the long way, it’s layered first with vanilla ice cream, then with chocolate, then frozen. The thing is, looking at the demo it seems it doesn’t come out like a brick but rather supple slices, spoon-ready. From Tasty.

Country Style Pork Ribs with Bourbon & Cola BBQ Sauce  In the slow cooker! In addition to the title ingredients, the sauce gains even more flavor from ketchup, tomato paste, garlic, brown sugar, Wooster, chili powder, cayenne, vinegar and syrup. From Epicurious.

Berry Smoothie Bowl  Take a sip of summer. Strawberries, raspberries, blackberries and bananas whirl into yogurt, almond milk and peanut butter. The recipe serves two so can go into a couple of glasses or maybe be the destination for two straws. Or, apply a multiplier and voila . . . summer punch. From Tasty.

The gins of summer  After sacrificing on our behalf and taste-testing 65 gins, writer Ray Isle offers these nine selections for cocktails on the patio. He never quite says quite why he chose this lineup, but we do get clues from his descriptions, which speak of lemon, lime, orange, florals, mint, even seaweed. From Food & Wine.

Fresh Summer Appetizers  This lineup is a happy matchup for warm weather snacking, pretty much utensil-free and seasonally inspired. Think mini savory pancakes, little pizzas, stuffed veggies, quesadillas, nachos, dips and lots more. Shown, the mini corn cakes with smoked salmon and dill creme fraiche {shortcuts & subs – store-bought cornbread or muffins, sour cream, dried dill}.  From MyRecipes.

Bloody Mary Bar  One of my absolute favorite brunch places featured a bloody mary bar that looked a mile long. Such fun! On a nice site I found and will visit again is a great diy array of tasty stuff to mix in, dip in, or prop atop the marys. In addition to the bar checklist, you’ll also find “The Best Bloody Mary Recipe.” The site is FoodieCrush.

Kitchen Talk – This is pretty inventive. Tired of your k-cups being hither and yon or trapped in their supermarket box? Take a look right here on simplemost.com to see how this crafty soul solved the problem and cleared the counter. Rather buy than build? Take the “escalator” down to our Shopping Finds for all kinds of choices.        How would this be for a cool July 4 treat? I came across it when I was browsing the WatermelonBoard.org site recipe page which led to last week’s featured prep, Watermelon/Chocolate Dessert Tray. These clever cones substitute watermelon for ice cream, and then sweeten the deal with frosting and toppings. See that and more on the site’s recipe page.

♦  ♦  ♦

Shopping Finds – Well here’s a bit of historical cooking fun. The U.S. Navy has posted their 1902  General Mess Manual & Cookbook for shipboard use on their website. From the historical perspective it’s quite fascinating to see how the food reflected popular dishes at the time and even more, how they had to be adapted to the circumstances. From the cooking perspective, well you may not want to, e.g., chop 60 pounds of ham, but with the simplicity of these dishes it should be pretty easy to cut them down to size. Also available on Amazon. Thinking what a great gift for anyone who’s been to sea.       Use K-cups? Need a neat way to store them? Lots of ways on Amazon to give your k-cups a home. Towers, cubbyholes, drawers that become a platform for the coffeemaker, tiers of drawers, or stylish containers where the cups just pile in.

This week’s featured CS-designed, Zazzle-crafted item – And it’s brand NEW. It’s our take on a popular saying that we’ve re-worded especially for all of us wine lovers. “Yay!!! It’s Wine o’clock” No matter what that other clock says. Have it on a tee or a mug, choice of styles and colors. Find both linked on our Eclectic Mall page.

Featured Recipes

Cheesy Baked Tortellini

And cheesy it is, all melty with mascarpone, smoked mozzarella and Parmesan joining forces with cheese-filled tortellini {store-bought!}. Marinara checks in too, yours or not. From Giada on Food Network.

Blue Corn Waffles Ranchero

Savory waffles {though with a touch of maple syrup in the batter}, are transformed into a stick-with-you breakfast or brunch as they layer on fried eggs, aioli, salsa, and black beans, with suggested sides of avocado, lime wedges and cilantro. From Eating Well.

Herb-Basted Pork Chops

Yikes, these are some good looking chops. But the recipe title conceals a hot secret. In addition to a trio of fresh herbs the prep also folds in a trio of Thai chiles and a healthy dose of garlic. Flavor on flavor. From Food & Wine

Grilled Elote Flatbread

Oh what a good idea. Fresh sweet corn and all the tasty flavors of elote on store-bought or homemade pizza dough. Both the corn and the dough are grilled for a nice char-y taste. From Taste of Home. {Wonder how it would be to lightly process the mixture}

Guacamole recipes with secret ingredients

This popped up on the page for the elote flatbread above and of course had to take a look. Interesting! Some go fruity, some go spicy, some go into surprising territory. Eight in all.

Rise & Shine Eggs Benedict by Food Network. Don’t like to make Hollandise? No worries. No Hollandaise! Instead an inventive sauce based on mashed potatoes and it’s responsible for a lot of the wake-up part with leeks, shallots, garlic, white wine and cayenne. Pancetta instead of ham, but good ol’ English muffins are on the job.

Oreo Cake Balls by AllRecipes. Oh my. Oreo crumbs and cream cheese packed like little snow balls, quick freeze, dip in melted chocolate, refrigerate, done. No bake!

Double Cheeseburger Bread Bowl by Tasty. Don’t be scared off by the ingredient list. It is longer than we usually serve up, but most of that stuff is just layered. And the goodies – seasoned beef, spinach, bacon, double cheese & more – stack up in a hollowed out sourdough loaf into something mighty “tasty.”

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

Summertime and the drinkin’ is easy. Which is to say, light and refreshing. Here’s a little help from the pros, thanks to Southern Living. “Infuse Fruit into Your Favorite Summer Cocktails With These Bartender Secrets”

The current issue of Eating Well has yet another clever way to serve non-communal snacks. We had previously shown “jarcuterie” {06.18.21}, often tucking deli meat and cheese, maybe pickles and olives, into cute little jars. This snack now is similar but as you can see it submerges veggie sticks, sprigs, and slices into a dip {the dips were actually the focus of the story}, served in individual glasses. Good idea!

The iconic 1928 New Yorker “I say it’s spinach” cartoon was revisited in the magazine in 2015. See it here.

Kitchen Talk – Southern Living shares great ways to start the day with their Breakfast Casseroles Worth Waking Up For. Scroll down on their page for such casserole versions as Cheesy Sausage Croissant, Banana Bread French Toast, Bacon & Cheddar Grits Quiche, Cinnamon Roll, Huevos Ranchero, and Breakfast Enchiladas.        When is an egg carton not an egg carton? When it transforms into a holder to portion and preserve rice. Here’s what I did – treated the compartments with non stick spray, filled all 24 with rice, covered the top tray with a cut-to-fit piece of plastic wrap, holding the wrap in place turned top over bottom, closed up and into the freezer. As you can see, when you subsequently open the carton, most of the top portions pop out on their own {you can just close the top back over them after removing what you want}, and if they don’t just push on the bottom of the sections. Where the two have been removed you can see the shininess of the plastic wrap.       Chocolate in, chocolate on, and a pistachio chaser in this Chocolate Pistachio Wreath Bread that the description calls ooey gooey. From Midwest Living, a Meredith Corporation publication.

Shopping Finds – Have you heard of goldbelly.com? I hadn’t until recently when I started coming across it as the ordering source for various food items. What it does is connect you to restaurant food via mail order. That means you can set your table with specialties from, e.g., Marcus Samuelsson, Daniel Boulud, Stephanie Izard, Guy Fieri, Carla Hall, as well as from steakhouses, ethnic places, bbq joints, and more, more, more. They also show you the reviews behind their 4.7 star rating.        So, I’ve now excavated a KitchenAid stand mixer from the back of a cabinet. I’d inherited it, never used, but now ready to give it a go. If you have one in hiding or are thinking of buying one, their cookbook can be a BIG help, with not just preps but also tips and techniques. And if you’d like to check out the various mixer models on Amazon, just click here.

This week’s featured CS-designed, Zazzle-crafted item – “Golden” moms and dads, this mug’s for you. You can find three mugs styles and lots of shirt choices too, all right here on our CS Eclectic Mall page.

   On the Table

Feature – Super tasty dip – and the flashes?

First surprise or did you already know this? Until it was revealed actually in a commercial I had no idea that Amy in Big Bang Theory not only plays a neuroscientist – she is one! With a phd from UCLA.

Second, in addition to that and Emmy nominated, award winning actress, Mayim Bialik’s resume includes this – she’s also a cookbook author, capturing her culinary passion in “Mayim’s Vegan Kitchen.”

Page after page delivers the third news flash – vegan doesn’t have to mean bland or boring. Classic dishes are all over these pages and what’s so interesting is how they’re bombarded with intense flavors that boot out the non-plant components in such a way that we’ll never miss them.

And then the actual recipe, Mexican Bean Dip, {below in Notes} showcases the fourth revelation. Look at the ingredients – all familiar, all likely already in your kitchen. Whether a whole meal or just some of its parts, we’ve all likely been cooking vegan stuff for years. It’s just plant-based, not scary at all. And of course it would make a great cocktail snack, a worthy addition to CHB below.

Recipe Notes – You may want to add a bit more soy or some salt, and I did add more cumin, then served with vegs and three kinds of corn chips {no guarantee they were vegan though}. One other thing, I didn’t go full frijoles on this, but rather left it a little chunky.

The prep is so simple, we’re just going to run it right here: saute 1/4 c chopped onion, 1 minced garlic clove, and 2 T finely chopped celery in 1 T olive oil until soft, about 5 min; add 1 1/2 c or a 14-oz can kidney or pinto beans, drained and rinsed plus 1/4 t ea soy sauce & ground cumin and 1/8 t cayenne {opt}; puree in a blender or processor until smooth; serve with veggies and warm tortillas.

A few additional bio notes from her Wiki page. Most folks first came to know Bialik in her starring role in the tv series Blossom. Have a cuppa in Alexa’s room – recipes & more

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

Just pour a cup and let’s talk food with Alexa. We also show the actual requests for those who are Echo owners, who should also note that in many cases she guides you step by step through the recipes.

Alexa says request: How do I make pineapple upside down pancakes? So, the fave cake for dessert becomes a new pancake for breakfast. And just like the classic there’s butter, brown sugar, sweet cherries, of course the pineapple rings, even rum if you want {another round of breakfast for everyone}, and pineapple syrup to top it all off. This morning treat is from Tasty.

Alexa says request: How do you make cheeseburger pie? Even better, AllRecipes serves up a Quick Cheeseburger Pie. The flavor vibe starts with seasoned beef and the sharper taste of Swiss cheese, and then gets kicked up with dill pickle and dill pickle juice. The crust goes a little faster than one that’s rolled out and fitted as it’s just patted into place. Of course a store-bought one would be faster yet.

Alexa says request: How do I make a cake bomb? Oh Tastemade, you are baaaaaaad. Exhibit A? This No-Bake Cookies & Milk Cake Bomb. Yikes, wait till you see it and you’ll know exactly what I mean. Btw, if the instructions don’t paint a clear picture of the prep, no worries, the demo does. One other thing, you’ll see how to make cookie milk, which just may have a promising future in your kitchen all on its own.

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

I found this on the editor’s page in Food & Wne, part of a piece on “getting out of a rut,” March 2021 issue. And it’s a pretty cool idea, sort of an upgrade on cocktail hour snacks. Or as Editor Lewis says, “Snack-ify dinner,” by setting out hearty snacks on a platter or sheet pan. He adds, “It’s fun, easy, and cleanup is a cinch.”

Pretty much by definition, a heavy appetizer usually has meat in a starring role, with cheese not far behind. If those appetizers come from deli fave Boarshead, both often come to play. Case in point, this beautiful board from their appetizer recipe page which is filled with fabulous ideas that just could quite easily add up to a dinner party.

Melinda’s Tropical Shrimp Cocktail, April 23-29, 2021

New Salon every Friday – c’mon in

CS friends, and help yourself to tasty resources

Hosted by Barbara J Nosek

  Let’s chat

Kitchen Talk – Leftover ham? Thankfully there are lots of ways to re-purpose it. But here’s another option, at least for some meals. Leave the ham as is in beautiful slices and let variation check in as tasty platemates. You can go big in your side dish choices with 101 from Epicurious or tame it down with 19 from AllRecipes, all ham-friendly.      We’ve talked before about, what to me anyway is a relatively new term, Pantry Meals. To avoid a trip to the store or maybe even to avoid waste, dip into the goodies already on hand. Here’s yet another take, “14 Recipes You Can Make Using Pantry Staples,” from Food & Wine.     So, Ree Drummond’s “perfect” spinach salad {04.09.21 Salon} sure looks like it can live up to its billing. But decided to make it and see for myself. Gotta say, pretty darn close. I did add a few halved cherry tomatoes for color.

Shopping Finds – We hardly ever see butter knives on the dining table anymore, but a newer version just may become a staple in the kitchen drawer because it can rescue us from a culinary problem – hard butter. As you run it over the top of an uncooperative stick, a lineup of small holes in the blade pick up curls that can quickly soften to usability. For bread. For pancakes. For baking. And? They’re called butter spreaders, but you have to be a wee careful because some just regular butter knives on the Amazon page also use this description.     No, we don’t have an affiliation with Oreos even though this is the second mention in a couple of weeks. But came across these Birthday Oreos on Amazon and they are just so festive, so cheery, so-gift-ready.

This week’s featured CS-designed, Zazzle-crafted item – With June weddings just around the corner, time to think about bride gifts. One with a whimsical touch is our pretty, flowery “Just Married” tee. For the honeymoon trip, to relax into the day after the ceremony, or just to say, “Yep, did it!” On our Eclectic Mall page.

   On the Table

Feature – Shrimp cocktail goes Caribbean, in a fresh & spicy way

It’s first important to note that this recipe comes from Melinda, known for decades as a major force in the hot sauce realm. In fact, I blame, uhhh credit, them with my own introduction long ago to the wonders of habanero peppers.

Melinda doubles down in this prep with the distinct potential to move the cocktail into incendiary territory. But what makes it all quite manageable is that the pepper’s legendary heat comes up against a counterbalance of cucumber, tomato, pineapple, orange, avocado, and more.

A really nice mix. Small servings would make a good first course or addition to the buffet table. But it’s also substantial enough for more generous scoops atop lettuce, spinach, or other greens to serve as a satisfying lunch or dinner.

Btw, still not hot enough for you? Do as we did and drizzle on a bit more Melinda.

Recipe Notes – The recipe actually specifies grapefruit and suggests orange as a sub, which what I did choose.

Next week – Chocolate malt brownies with malt marshmallow frosting

Have a cuppa in Alexa’s room – recipes & more

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

Just pour a cup and let’s talk food with Alexa. We also show the actual requests for those who are Echo owners, who should also note that in many cases she guides you step by step through the recipes.

Alexa says request: How do you make a croque madame casserole? It’s probably not too far fetched to call a croque monsieur the national sandwich of France. Simple as it is, the secret is in the top notch ingredients – crusty bread lightly grilled, lean ham, good Gruyere, homemade béchamel. Add a fried egg and it becomes a madam. While most I’ve seen were open face, I’ve also come across ones that were regular sandwich style with double bread, enclosed like a croissant, or even stacked up. But until Alexa put this on the screen, I’d never encountered the croque madame casserole – and glad I did. From Epicurious.

Alexa says request: How do you make chocolate covered pretzel toffee? So, chocolate covered pretzels have been been satisfying our sugar cravings for quite some time. Serious Eats sweetens the deal with the addition of rich toffee. Here’s the recipe, credited to Lucy Baker. Thanks, Lucy!

My request: Do you have a recipe for baked hot dogs? The actual reason for this request was a guess that if such existed it would deliver an easy way to prepare several franks at once in the oven. Not only did a prep like that come up from AllRecipes, but even better for Baked Chili Hot Dogs. You can probably predict the ingredients. But what’s helpful here is quantities, pan size, time, and temp.

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

Wait, what, they’re keeping stuff from us??? Food & Wine tells all in 12 Wines That Serious Collectors Don’t Want You to Know About. There’s also a link in the story for best Prosecco rosés to buy now.

The inspiration goes back to a coffee shop in suburban Chicago where our group convinced the owners to combine the olive burger and cheeseburger and make us olive cheeseburgers. Now, here it is in crispy snack form – brown 1/3 lb ground beef {fine crumble] with 2T minced onion and s&p, then add 2T minced pimento olives, 1T mayo and 1 t ea mustard & buffalo ranch. To assemble: Lay six 6″ eggroll wrappers on a work surface with the points toward you. Place a slice of American cheese on each, about a 1/2″ in from the point closest to you. Divide the meat mixture evenly, covering the cheese slices. Fold up the corner closest to you then roll it up, tucking in the sides as you go. Moisten and press to seal any open edges. Place seam side down in a baking pan treated with non-stick spray. Brush very lightly with peanut oil, sprinkle with sesame seeds, and bake at 400 for 10 min or until golden. Note that you can certainly substitute equal amounts of condiments of your choice. And then of course it’s easy enough to make multiples of this recipe. And called? Mini Olive Cheeseburger Eggrolls!

Have you noticed – dips are almost always hits on the snack table. MyRecipes shows us how to mix it up with 18 Things to Stir into Mayo for Instant Sauces & Dips. The good news is that most of these tasty add-ins are likely ready and waiting in your kitchen.

Kitchen Talk – Have you heard of this? Tea latte, officially dubbed London Fog. The basics are tea and steamed milk and then customization sets in. What’s your pleasure? Perhaps vanilla syrup or brown sugar, other sweeteners, maybe a touch of lavender. Thanks to Google see it all here, how to make or where to buy.      Love Oreos but hate the gluten? Rejoice! Yep, there are now gluten-free Oreos. Regular and Double Stuf. Shopping Finds – So, we’ve played a lot recently with sparkly and colored sugar. But here comes a whole different take – sparkly syrup! Found Strawberry Sparkle on Amazon – I couldn’t really see glittering in the pix but one of the reviewers who had poured it into sparkling waters said, loved watching the sparkles swirl around the bubbles. And a company called Runamok {not familiar with them but shows the lock icon} offers a Maple Sparkle Syrup. Btw, on the Amazon page you can also find jars of mica, the stuff that creates the blingy magic.    For you, for someone just setting up housekeeping, for your cookster friend? Wowsie, 24-pc kitchen utensil set, #1 Amazon Best Seller, Prime eligible, $24.99.

This week’s featured CS-designed, Zazzle-crafted item Who’s rescued a dog from a shelter and given it a loving forever home. You? Someone you know? Or choose a tee instead on our CS T-shirt page.

   On the Table

Feature – Hasselback Pizza Chicken, easy fun

Once again Alexa popped up a recipe where resistance was fu-tile. And so here it is, “upstairs,” in the Featured Recipe spotlight.

This is so fun. Like chicken parm meets pizza meets a technique usually confined to the potato province.

I did take a couple of CS-liberties here. Marinara instead of puree. Pepperoni instead of salami. But you know what, it sure seems the original would be great too.

I also experimented with cooked chicken breasts from the deli counter, baked until heated through and the cheese was all melty. Worked just fine.

I opted for fries and slaw as platemates, but think pasta or even risotto could work well. Some kind of salad is almost always a good counterpoint.

Thanks, Tasty!

Next week – Creamy topped caramelized pineapple, quick and easy

Just pour a cup and let’s talk food with Alexa. We also show the actual requests for those who are Echo owners, who should also note that in many cases she guides you step by step through the recipes.

Alexa says request: How do I make perfect spinach salad? So, when that popped up on the screen sort of had to see how it might live up the hype. Here’s what backs up the hype for a perfect spinach salad – peppered bacon, onions caramelized in the bacon fat, mushrooms also sautéed in the fat {with license to add more fat if needed}, baby spinach, and – look out – more bacon fat in the dressing  {cardiologists, look away}. From Ree Drummond.

Alexa says request: How so I make potato cannolis? As the description says, Think of this as two potatoes for the price of one. That’s because the shell is rolled and crisped potato slices, and the filling is creamy mashed potatoes, mixed with Gruyere and little hits of nutmeg and salt. A sprinkle of chives adds a touch of color to the fun. This recipe comes from Tastemade.

My request: Show me some Nutella recipes Of the bunch that she pulled up, I think the one going on the to-make list is the Easy No Bake Nutella Pie from AllRecipes. Btw, the results also included a couple of ways to make your own version of Nutella.

Smoky Poblano Corn Pudding, March 26-April 1, 2021

New Salon every Friday – c’mon in

CS friends, and help yourself to tasty resources

Hosted by Barbara J Nosek

 Let’s chat

Kitchen Talk – While cold March winds are still a-blowin,’ nice hot chicken soup remains a welcome counterpoint. And it’s Better Homes and Gardens at your service with bowls of their Best Recipes, many hearty enough to easily serve as a main meal.      Meanwhile MyRecipes has their own Best, and it’s a goodie. Our Best Restaurant Copycat Recipes {and some packaged goods too}. Yay! Legendary rolls, breads breakfasts, soups, sandwiches, sauces, desserts and beverages, ethnic specialtes, even Bailey’s, Nutella and Chili’s Baby Back Ribs      Oh what fun this colored sugar is! Especially as a decorating substitute for those {hand raised} who do not like sprinkles. A glittery upgrade for simple peach ice cream and whipped cream  A sparkly update on bagel and cream cheese. And as if donuts aren’t already fun enough, a step even beyond the chocolate frosting. Link goes to Amazon.      See Cocktail Hour Buzz below for yet another happy app.

{PS on the sugar – as much as possible add it just before serving because being sugar there may be some melting. Although if it’s going onto something sturdy like cream cheese, as on the bagel here, you can let it just blur into a different pretty pattern. Something more liquidy like whipped topping, maybe not so much.}

Shopping Finds – Have you heard of the sausage company called Seemore??? Oh my goodness wait till you hear their flavors. Chicken Parm, Chicken Soup, Broccoli Melt, La Dolce Beet-A, Loaded Blue Diamond Almonds, Bold Spicy Dill Pickle, 6 OunceBaked Potato. In a sausage! All can be ordered directly from them. I have to say I’ve never heard of these folks before, but their products are sold at Whole Foods and Amazon.      So, I had this somewhat addictive spicy dill snack mix, that was then {how rude} discontinued. Went online to see about something similar. Did, but wow, some unexpected pricing. Can This Help You FINALLY Quit Smoking ??? Finally found something not only dilly and reasonable but also a brand name. Blue Diamond Bold Spicy Dill Pickle Almonds on Amazon, and maybe at your own market.

This week’s featured CS item on Amazon – If quitting smoking is still one of your 2021 goals, maybe this can help. Our Kindle book of reinforcements about all the good to be gained and the bad to be gone when you kick this butt. Use with or without other methods. On our Eclectic Mall page.

Alexa says request: How do I make banana split cake? And it’s a no-bake cake! A vanilla wafer crust is layered with a cheesecake-like mix, then topped with crushed pineapple and sliced bananas, and then non dairy topping, chopped walnuts and maraschino cherries. This prep is from AllRecipes.

So, a couple of notes. First, you may want to be a bit more generous with the walnuts. Second, ummm, a most important classic topping is not represented – chocolate syrup! which you are of course free to add, or maybe chocolate chips on top.

Alexa says request: How do I make bacon jalapeno chicken? So, while this is a fairly simple  and most appealing dish, it’s based on a Traeger Grill. If you have one, yay, here’s their recipe. Meanwhile so the rest of us don’t have to miss out entirely, found these Chicken Bombs with Bacon and Jalapenos on AllRecipes. Oh boy, Monterey jack and cream cheese are wrapped up in there too, then all glazed with bbq sauce.

Alexa says request: How do I make smoky poblano corn pudding ? The smoky and the poblano elements start off this recipe with a trip to the oven for the peppers to get nice and charred. They then merge their smokiness with butter and whipping cream, cheddar and chives, to turn the frozen corn into a beautiful casserole. Thanks for this super side dish also goes to AllRecipes.

Sparkly sugar comes to happy hour. And its sweet contribution so nicely plays against this vodka sour. As you can see, I didn’t use it in the usual way. Instead of upending the glass into the sugar thus creating only a narrow coating inside and out, I ran the cut lime about a 1/2 inch down around the rim on the outside, then rolled the glass back and forth on a band of the sugar. This method also means no sugar on the inside to be washed away as you make the drink. This sugar on Amazon.

   Like your beer well aged? Archeologists have uncapped quite a discovery in Egypt – what’s regarded as the oldest biz-size brewery in the world, dating back over 5,000 years. OK, probably no suds left in these tanks, but it’s estimated that at its peak, the facility could pour out 5,900 gallons of beer at a time. Turns out though most of the output was used ritually rather than for consumption. Cheers! {or not}

While I don’t have an Aldi’s in my town, their map shows a bunch east of the Mississippi and even a sprinkling on the other side of the river. And so for all you folks in Aldi towns, here is the Well Done Newsletter’s report from EatingWell on best wines there under $15.

Tasty Ham & Tater Cake-ettes, March 19-March 25, 2021

New Salon every Friday – c’mon in

CS friends, and help yourself to tasty resources

Hosted by Barbara J Nosek

Please note – CooksSalon was recently subjected to what’s known as a brute force attack, which means launching thousands upon thousands of attempts to crack your password. Fortunately WordPress alerted me to this activity and I was eventually able to get it fixed, though losing some content in the process.

Clearly it could have been much worse. So, if you have a site and see anything like this going after it, do everything you can to stop it because what I saw on google said that otherwise they won’t stop until they’re successful.

 Let’s chat

Kitchen Talk – This was an interesting journey. When Stanley Tucci was in Rome for his “Searching for Italy” series he was served meatballs with a cocoa powder sauce. Ehhh? Went to google and did find one sauce for spaghetti with cocoa powder from The Spice House, but just a 1/4 t among many other seasonings. Interestingly, the search also turned up a marinara with dark chocolate from Gimme Some Oven. Could be worth a try.    I’ve now added multi-colored sugar to the “toys” and should have some goodies to show you next week    And here’s another journey, one that started with an online comment that sweet potatoes didn’t have to be pierced before baking. Googled, decided they probably should. But several stories showed the sweets topped with peanut butter. Really? Tried it, pretty good, but maybe see if classic toppings could play nice with pb to make a sauce. The result –  2 T brown sugar, generous pinches of salt, nutmeg and cinnamon worked into 1/2 stick softened butter, then blended with 1/4 c peanut butter. Be sure the taters are good and hot if you want the sauce to be all melty.

♦  ♦  ♦

Shopping Finds – Have you seen these? Clips that stick. More specifically, Magnetic Multipurpose Bag Clips on Amazon. Pretty too! They’re clips so they, by def, close bags of all sorts. But because they’re also magnetic they can turn your fridge into the place for grocery lists, coupons, reminders, notes, appointment slips, photos, even lightweight holiday decorations.    One somewhat unexpected place I like to shop now – Bass Pro Shops. For the sports stuff? Nah. It’s for their food section, especially the wide selection of salsas, but also because there are so many interesting items there that I don’t see anywhere else.

This week’s featured CS-designed, Zazzle-crafted item – Let’s all scream – for Ice Cream! If you look closely you’ll see flavors galore tucked right into the letters. And as those words say, only after there’s been Ice Cream Ice Cream Ice Cream will there be everything else. Find in on our Food Themed Mugs page. On our Food Themed T-shirts page too.

   On the Table

Feature – Ham and Tater Cake-ettes, love these

The first woohoo here is that these are just super tasty. The second is, no grating, because these cakes start with mashed potatoes.

There’s another interesting point in the prep. The crumbs serve not only as a coating, but also as an ingredient in the mix which, much as in say meatloaf, helps the whole shebang stick together.

And wow are they versatile, at home any time on the table. Thinking they could even make a nice snack.

For breakfast or brunch topped with fried or poached eggs, here paired simply with fresh tomatoes. For lunch, we followed the traditions for regular potato pancakes and paired the cakes with applesauce and sour cream. For dinner, plated them with sweet potato casserole and peas.

The prep popped up on Alexa, but had “feature recipe” written all over it. It comes from AllRecipes.

Recipe Notes – Since I really don’t do a lot of fried foods, I put four of the patties into a pan treated with baking spray, also sprayed the tops, and baked them for 20 min at 400, turning them over at the halfway point. As you can see here, they aren’t as “pretty” as the fried ones but I found them every bit as good. As always when oil is involved keep an eye on the proceedings especially if in a toaster oven.

Next week – Smoky Poblano Corn Pudding, put it in the Super Sides category

And following up on Alexa, here is some good news. “Found this on the abc.net.au site. Because of changes in the tariffs, their story says, Australia red wine prices should ‘plummet’ in various countries including ours” – LVB

Lasagna Poppers? Oh, what fun! The seasoned beef, marinara and mozzarella merge into a filling for lasagna noodles, rolled, double breaded, and deep fried {some freezer steps in between}. Here’s the recipe From Tasty.

So, in our 02.26.21 Salon we featured smoked salmon pinwheels in our Shopping Finds. And for sure they are convenient. But truth be told, you can pretty easily make your own. Here, wrapped them up with green onions and dillweed. And some on pumpernickel with cuke slices.

This is variously attributed, but most citations give it to Steve Allen. “Do not allow your children to mix drinks. It is unseemly and they use too much vermouth.”

Shopping Finds – So, we’ve already seen ice cream for dogs. But here’s what’s new – ice cream for dogs from Ben & Jerry’s    In Amazon’s Hot New Releases, and “hot” applies doubly here – Mott’s Hot Apple Cider Keurig pods.

This week’s featured CS-designed, Zazzle-crafted item  If we thought the new year would see high fives across the aisle and a bipartisan chorus of kumbaya in govs in DC and beyond . . . nope! Let’s flash this message everywhere we can.  See all 5 “Decent” items on our Eclectic Mall page.

Kitchen Talk – Here’s one of those magnetic headlines I came across from MyRecipes. Why Snack Dinner is the Best Thing You Can Make for Yourself Tonight”  Wow, there are some fine looking assemblies here. But shown is the plate we featured from our cheese board in the 01.22.21 Salon and to the article’s point, it sure did add up to dinner.   So, had a lot of Genoa salami hanging around and decided to put it in the food processor with the other ingredients that would typically go into ham salad {including peanuts, love peanuts in ham salad}. Turned out good. But, duh, now had even more leftovers. Hmmm. After using some for sandwiches, mixed the rest with egg and bread crumbs, browned in a skillet, and then I had something I could freeze. Some has already come back out to join eggs and salad for a boffo brunch.    When you’re making chili, e.g., do you brown the meat trimmings and add veggies to make a stock? Me too. Then usually strained, defatted and made it into gravy. But recently instead added into the chili. Turned out to be a tasty idea.

   On the Table

Feature – Cheesy Bacon-Tater Tot Pie

For being so simple, this savory treat from Food Network is a supremely satisfying dish. Tater tots, which are already somewhat seasoned, make a tasty base for an easy combo of cheddar and bacon, later joined by sauce and chives.

You know what’s a big bonus? That sauce! And as a double down, you’re likely to have some left over to kick up other preps you creative CS-ers can imagine.

One thing, looking at FN’s rendition {link below} the light color of the sauce makes me think they pulled back on the Sriracha. Depending on your heat tolerance, might want to taste as you mix.

And an egg good is so good on here. But just take a look and you can see how it’s sort of a natural playmate for these particular ingredients.

And with eggs, what a great centerpiece for brunch, especially joined by guac, tomatoes and olives. But you sure don’t have to wait for Sunday.

Recipe Notes – After the tater tots are baked, the assembled dish needs to bake for only about 5 minutes.

Substitutions if needed – Thinly sliced green onion tops can stand in nicely for chives. Also, you could certainly consider other cheeses or a combo.

Next week – Ooey Gooey Turtle Bars, starting with store-bought cookie dough

Have a cuppa in Alexa’s room – recipes & more

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

Just pour a cup and let’s talk food with Alexa. We also show the actual requests for those who are Echo owners, who should also note that in many cases she guides you step by step through the recipes.

Alexa says request: How do I make No-churn Peppermint Chocolate Chunk Ice Cream? Oh my, with a title like that about all we need to do is add this recipe link. Maybe just note that both the peppermint and the chocolate make more than one appearance. From Food Network. Really sounds good.

Alexa says request: How do I make Mexican Cornbread Salad? This is nice, something like a 7-layer salad but as the title suggests with a decided south of the border accent. Colorful too! See it here from AllRecipes.

Alexa says request: Play the cookie dough secret video  Well, this couldn’t be easier. Chill the dough – 30 min in the fridge or 15 in the freezer. It says the fat will melt more slowly in the oven and thus help prevent overspreading. As a bonus chilled dough is easier to handle, and sturdier for cut-out cookies. Left it in too long? Just let the bowl sit on the counter until the dough softens a bit.

And this week’s unexpected thing we found that Alexa can do – play sleep and meditation sounds

Would you like your own Echo Show?

   Cocktail Hour Buzz

Sundowner snacks, drinks, talkwhether for a crew, or for two, or just for you

CS Tasting Panel member Debbie Vinson gives five stars to a recipe she passed along for a sambal sauce to be drizzled on cod, but as she and I noted it could be equally good on other fish, maybe even chicken. I’ve since made this sauce, and btw did use it on cod, and my palate and I 100% agree with her rating – sweet and spicy, tangy and tasty. You can see it right here on parade.com.

How fun would this be for a sweet finish to cocktail hour? A cousin to last week’s tie dye cookies but this time it’s candy all the way as once again Trisha Yearwood shows us how to play with our food. White chocolate meets pastel wafers to create bark that’s an edible work of art. Melt x 5, spread, drizzle, swirl, then chill {both you and the confection}. Done!

A pop quiz – when are ice cubes not cubes? When they’re spheres or hexagons or sticks. Or opt for classic cube shape but tiny or HUGE. Many trays are made of silicone or other easy release material and some come with lids. All right here on this Amazon page.

Here’s a whole bunch of stuff we love tucked into one book. It’s Susan Spungen’s new work, “Open Kitchen,” a place, her site says, to “welcome company and enjoy togetherness.” It goes on to describe her entertaining approach as a “‘get-ahead’ cooking philosophy that ensures streamlined, stress-free preparation, so you can spend more time opening your kitchen to new menus, flavors, and guests–effortlessly.” Kindle and hardcover on Amazon.
