♦♦♦ So, here we have a creative cook’s shortcut turning into a crowd favorite. Instead of individual poppers, all the goodies join forces in “Ryan’s Reverse Popper Dip.” Wowsie, this is good. And I personally applaud a prep that calls for even more garlic than onion. The recipe did not mention a tomato garnish, but since the pic seems to show that I added it too. AllRecipes

♦♦♦ With Cinco de Mayo in sight, what a great time to look into some tasty ways to serve up the day’s classic libation. I’m especially intrigued by the spicy black grape, the grilled citrus, and foam-topped salt air versions in the iconic mag’s offering of their “Best Margarita Recipes.” And we agree that it’s a “perfect drink to make at home.” Food & Wine

♦♦♦ Mai Tai to Tia Mia, Wicked Games of pear & pineapple, Smoky Fig Sour, gingery Ginger’s Lost Island, Cucumber, Salt & Smoke. What do they have in common? All are part of “12 Mezcal Cocktails for Warm Weather Inspiration.” What else these drinks have in common, according to the story, is their talent to “bring out the best made with the smoky, agave-based spirit.” Food & Wine

♦♦♦ Move over cheeseboard. Well, as it turns out, not entirely. But the thing is, mushrooms are the star of this show. They repose in a tasty marinade center stage, go all season-y atop goat cheese crostini, and join some colorful veggies on skewers. Filling out this Mushroom Grazing Board are olives, deli meats, hummus, cukes, crackers and, yes, cheese. As always, of course, you can add your own creative touch to the mix. ♦♦♦ How many ways could you serve these guys? Pretzel Shortbread Sticks! Dip in hot fudge, caramel, fruit preserves. Or, skip the chocolate tipping & go savory with peanut butter, hummus, beer & cheese dip. Demerara sugar is a sprinkle option, and in an alternate recipe it was listed instead of brown sugar in the main mix. The raw sugars just seem to have a richer taste – if you want to go to “class” on this interesting sweet stuff, see the link below. Food Network

♦♦♦ Do you know how to make a Golden Margarita? No? Well, here you go. And just how good does this description sound – “These cocktails are smooth, with sweet and sour flavors in perfect balance.” It uses all fresh ingredients which led to this addendum to the recipe – “Seriously, step away from the mix and give this drink a try. You’ll never go back.” FoodTalkDaily

♦♦♦ So, last week {02.18.22 Salon, recipe included} we referred to a cocktail called Izzy Bizzy that was featured in both Food & Wine and Food Network Magazine , and both gave a nod to its creator Tom Bullock, active in the “spirits” world in the early 1900s. As bartender at the St. Louis Country Club, a fave of local notables, he created other drinks as well, eventually gathered into the 1917 book, “The Ideal Bartender,” available in reprint in hardcover, paperback and Kindle, 4+ stars, Prime eligible. ♦♦♦ When brunch is on the agenda, cocktail hour moves up the clock. The food offerings span the gap between the traditional first and and second meals of the day, and also likely evolve into something a little hardier. Just imagine how a nice icy glass of Champagne would pair with this sweet treat with a breakfast-y vibe. Nutella®-Filled Donut Muffins! Donut texture, baked in a muffin tin, with a nutty surprise inside. AllRecipes
So, quite sure I’ll make these sometime, but meanwhile I had a package of jumbo biscuits loitering in the fridge and used these to make a version of those ^. Baked according to
directions, sliced off most of the top, cut out the center of the top as you see here. Then sliced off most of the bottom of the removed piece, leaving just a thin piece of the golden top. Placed the ring back on the bottom, filled the center with Nutella, and then replaced the cap. You could also just leave the caps off and use them separately as mini biscuits. Really good lightly warmed.
Also, I used chocolate Nutella®, in your market, or here on Amazon, singles & packs

♦♦♦ Does it make you kind of want to head for the kitchen just hearing about a recipe for Pizza Tots??? This one starts with 3 1/2 cups hash browns, seasoned, and eggy-ed up to create a moldable consistency. Small handfuls are then shaped around mozzarella and pepperoni, briefly frozen, then fried and served with marinara of your choice. Yum. Demo too. Tasty
I found online that 3 1/2 c = 1 lb hash browns, but all the packages I saw were larger than that. No worries about leftover taters though . . .

♦♦♦ Here’s another dessert bar that’s sturdy enough to be cut to candy-size, especially if right out of the fridge. These Apple & Brown Butter Blondies can add a nice, sweet touch to the Happy Hour table. The mixer does most of the work, with the apple cutting being the only part that needs a bit of time – may experiment next time with apple pie filling or something else I found called fried apples. Meanwhile, may I add, these are really good. AllRecipes
So, the recipe I used was is the AR magazine, but the link shown on their page {and now above} went to a slightly different title, and slightly different prep, with the most notable changes being the handling of the butter & the number of apples. I’ve posted the mag version on our Recipe Page.

There are soooooo many of them available, but good news checks in again because you can filter the results by price, rating, discounts and more. Btw, the link above takes you to just the 4-star and up selections. Meanwhile, the kits variously include prep items, glasses, recipe books, mixes, plus some designed for drinks on the go, and two things new to me, whiskey stones and smoking tools. Amazon

Let’s not though take seriously “26 Bourbon Cocktails to Make Tonight” starting instead perhaps with one or two. Maybe the Maple bourbon smash, Banana Rum Old Fashioned {interloper!}, or the fun-named one with ginger oil & baking spices, Hello Friday. Food & Wine

Among the recipes in this listing of Gluten Free Snacks – Caramel & carrot snack cake, Spicy cheese crackers, No-bake honey peanut butter bars, Blooming onion with bacon chipotle dip {shown}, Cinnamon twists with vanilla glaze, and Italian Chex mix, and in fact a number of them offer the flavorful head start of g/f Chex Mix. Here we stuffed the cleaned, halved peppers with a mix of 4 oz softened block cream cheese, garlic salt, dried parsley and just enough avocado ranch to make a nice consistency, still thick enough to survive a bite

♦ Flying high takes on a whole new meaning as the New Zealand winery Invivo launches what is being called “the worlds first winery airline,” which will operate within the country. ♦ Shrimp toasts are a’comin {oops, age-busted by a song}. These traditional Asian appetizers are always just so satisfying, and now you can make them at home with a pretty easy process. A whirl in the processor with fairly familiar ingredients, a quick dip in hot oil and voila! Shrimp Toasts. The story calls them a cocktail hour staple. From msn.com
♦ This quesadilla is actually an encore, originally appearing as a Feature Recipe in CS over a year ago. It’s here partly because it’s a perfect cold weather snack, which it can so easily become with smaller slices and maybe sans the egg. But mostly because it’s just so full of flavor, exactly as you’d expect from a Bobby Flay creation, loaded with bacon, hash browns, onions, peppers, cheese, salsa and chives – and deserved another time in the spotlight. Happiest Holidays! From Thanksgiving Eve to New Year’s Day
Next week – Kitchen Talk, Shopping Finds, Featured Recipes & Cocktail Hour Buzz
Let’s wine & dine with Alexa
Tap into some of this culinary bounty that is an everyday part of Amazon Echo’s offerings – always CS-style recipes, sometimes tips and tidbits too
♦ Love a big breakfast? Hate big preps when your eyelids are still at half mast? Solved! And in a mighty tasty way. These Reheat-able Breakfast Calzones are hearty too, plump with chorizo, potatoes, onions, peppers & seasonings. The prep list may look scary long, but it’s basically cook the chorizo, then the veggies, stir in seasonings. Roll out store bought dough {or make from recipe provided}, fill and freeze. They reheat right from the freezer. Thinking, to make it even more of an eye opener, swap out the bells for jalapenos or habaneros. From Food Network
♦ Have you heard of Banoffee Pie? It’s sort of like banana cream gone wild. In the original English version there’s usually a biscuit base, but this prep calls for a graham cracker crust. Then it goes all caramel-y with a layer of dulce de leche that you make from sweetened condensed milk {or, guess you could just buy a comparable amount of dulce de leche}. Along with some cooling steps, then bananas, whipped cream and chocolate shavings. Btw, here’s another place where you would thank an offset spatula {mine from Amazon}. From Tasty
♦ Move over potatoes, there’s a new chick in town. More specifically, Hasselback Chicken. The classic technique delivers a mouthful of flavor, as the slots are filled with spinach & ricotta, topped with cheddar and paprika. One thing, you may want to add the
cheese later in the process. A tip I learned for anything hasselback is to lay wooden spoons or chopsticks on each side to insure you don’t cut all the way through. From Tasty
♦ Promise you won’t run when I mention . . . Chocolate Salami. This confection by Giada is a clever sendup on the deli fave, with buttery chocolate supplying the background and then nuts and crushed biscotti playing the “fat” roles. As a final touch, the whole shebang is rolled in powdered sugar. Yet one more dessert that also serves as a conversation piece. From Food Network Kitchen
♦ When Ixipixie, who posted this prep, calls it Hot Corn, you can believe that’s just what it is. And well beyond the warmth of being baked golden in the oven. That other kind of heat is contributed by a full 12 oz jar of jalapenos. Coming to the rescue, somewhat at least, is a lot of cream cheese and cheddar. The descrip says for this family it’s become “a must have for all holidays and special occasions.” From AllRecipes

Happiest Holidays! From Thanksgiving Eve to New Year’s Day

Let’s Chat
Kitchen Talk – In KT in our 11.12.21 Salon we talked about finally adding Gochujang to our seasoning repertoire but noted we’d not yet used it. Not being a big fan of ketchup, always used taco sauce for fries. Now? Gochu is the go-to! If you need a decadent treat in a hurry, here you go. Chocolate Chip Cookie in a Mug. Thanks Food & Wine.
Baking for the holidays? This could be helpful. The article “Don’t Make These Pie Dough Mistakes” from MyRecipes identifies a half dozen ways the process can go bad no matter which technique you use. {I’m trying not to take personal the one that says, Your fat particles are too big.}
♦ ♦ ♦
Shopping Finds – I just finished a truly pleasant read. Pamela Kelley’s tale of three sisters brought together inside “The Restaurant,” is a love story x 3, revealed by some gems excavated along the way – their Gram’s love secret behind the secret, the subplot for pet lovers, and love of comfort food, including a fish technique. Make that four when you add in the gentle love between the sisters who’ve lived apart for such a long time. Multiple formats, 4 stars on Amazon.
Which salsa to buy? This salsa taste test by MyRecipes gives you the scoop. Most should be at your market, but if not or you just want it delivered to your doorstep there’s a large selection on Amazon.
This week’s featured CS-designed, Zazzle-crafted item – Looking for gifts for cooks? There’s quite a treasure trove for you right here on CS – books, videos, gift cards, and merchandise, all from star power names, and all linked to trusted Amazon or the chef’s own site. Btw, did you know you can give Kindle books as presents using the Buy For Others button? Instant and easy. See it all on our Fine Chefs Book & Gift Shop.

Well these are fun. Mozzarella and pepperoni are wrapped in seasoned hash browns and deep fried to golden crispiness. A nice dip in marinara and the pizza vibe is complete. Demo shows all the steps and details. From Tasty
Really? Well let’s take a look. Cream cheese stands in for ricotta. Chocolate pudding replaces Italian sauce. And admittedly a stretch, chocolate chips top it all instead of Parm. All in all, seems to qualify for the lasagna category, just checking in for dessert rather than main course. From Southern Living
Bake Sale Winning-est Gooey Oat Bars
Oh CS-ers, these are good. The tender buttery crust is just the tasty start. After baked golden it’s spread with a filling reminiscent of pecan pie but instead of nuts a mix of coconut and other sweet treat goodies, in the case of ours here – chocolate chips, dates, and raisins. Then a final flurry of powdered sugar makes it pretty. As with many baked goods, even better the next day. From Food Network
That star ingredient is magnetic enough, but then add in the wave after wave of flavor contributed by fragrant, maybe even exotic, Indian seasonings. And even so, chances are many of them are already in your pantry and fridge, like onion, garlic, yogurt, brown sugar, canned tomatoes. This is definitely going to hover near the top of my to-make list. From Food & Wine
Well this could be a darn welcome resource for the holidays, especially if you have house guests. Generally sheet pan dishes simplify things and the ones here seem to be no exception. Among the preps, giant bacon-green chile Dutch baby, Breakfast disco fries, Ultimate sheet pan eggs {love the descrip!}, Slab quiche, Salsa roasted potatoes, Berry breakfast pizza, 21 in all. ♦ If you can still find a Oct/Nov 2021 copy of Taste of Home, among the other always fine food features you’ll find one entitled “Wisecrackers,” {sorry could not find a link}, with a “Tasty Ten” ways of dressing up a basic or fancy cracker. Just some of the ideas, Apple butter, white cheddar, pear and sliced toasted almonds. Hummus, green & black olives, garlic, feta, and a drizzle of olive oil. Queso fresco, shredded pork, salsa and jalapeno.
Can’t find it? Just start with any crackers you have and look upon them as blank canvases, just waiting to be turned into little works of art with the help of your fridge and pantry.
♦ Nothing wrong with some mini desserts on the snack table. Like these! Chocolate Peppermint Cheesecake Bites, from AllRecipes. Great holiday flavor. And easy to make right in your muffin tin.

Let’s Chat
Kitchen Talk – It’s four steps, 10 minutes, and the crowd goes wild. 1} Whisk two 8-oz cartons whipped cream cheese, 1/4 c powdered sugar, 1 t vanilla, and pour into a store-bought graham cracker crust. 2} Carefully spread up to two 12 oz cans {depending on pan depth} apricot filling. 3} Top with Cool Whip. 4} Refrigerate for a couple of hours. And Voila! Apricot Cream Pie from CS. Found a recipe for tahini-smothered charred cabbage. The topping was actually a sauce that also stirred in honey, lemon and
seasonings. Pretty good but I think it would be awesome with just tahini. A surprise was how good the cabbage was with the caramelization brought on by the charring. You can see that original recipe here, from Bon Appetit.
I made the actor’s Mexican chocolate cookies featured in our 10.01.21 Salon and they are really good. I did half with the pepitas and half without, and actually liked the latter better. Second, I also added a bit of cinnamon, a la Mexican hot chocolate. And the last thing, you could leave out all the Mexi flavors and this would still be an excellent chocolate cookie.

Shopping Finds – OK, how cool is this for your holiday get-togethers??? Food scented candles! Vanilla you might expect. But how about salted caramel, warm buttered bread, lemon pound cake, blueberry muffins, pecan Belgium waffles, fresh strawberries, chocolate {shown}, marshmallow & more. All right here on Amazon
So, I finally bought the trending Gochujang. Interesting. Sugar sweet, red pepper spicy, mustard tangy, vinegar puckery, all wrapped up with onion and garlic. Think I like it, tasted but yet to use it. Bottle says wings, bbq sauce, dips & marinades. Likely at your supermarket, and of course on Amazon.
This week’s featured item – Fabulous videos galore! Watch then in action – your fave chefs & food shows, movies too. You can also sort by best sellers and best rated. All right here in CS on our Chef, Food, Cooking DVDs page.

Sweet & Sticky Caramel Hazelnut Rolls
Oh my, are those just all the right words or what. From Giada, the prep toasts the hazelnuts, ups the caramel ante with agave, and zings up the whole thing with cinnamon and nutmeg. And nice, it all starts with store-bought crescent rolls. From Food Network
All the usual tasty suspects from the classic salad cozy up to chicken for an easy cheesy dinner. Pan juices and reduced balsamic top it to perfection. From Food Network
Here’s another perfect way to start the day. And if you look at the comments below the linked recipe, you’ll see it’s eminently tweakable. Some added cooked potato, others mushrooms. Some made smaller versions. Some added more cheese on top. I added more cheese in the mix and used poblano instead of bell pepper. The prep even tweaked itself, calling for a baking dish in the directions, a cast iron skillet in the demo. From AllRecipes
What a fab idea. South of the border flavors meet a classic family dish in your muffin tin. Topped with a distant and savory cousin of ketchup. Easy too! Thinking this is one of those preps that can come to the table any time of day or night. From Tasty
Their Best Loved Soup & Stew Recipes
This icon of home and hearth has assembled an awesome roster of what most folks might consider the dual epitome of comfort foods. The soups and stews here come to the bowl as classic preps, ethnic specialties, and veggie transformations. Just some: baked potato soup, vegetarian gumbo, fast pho, sausage & white bean stew, green chile pork stew, seafood stew. From Better Homes & Gardens

♦ Lunchbox Snacks Kids Will Love So why is this in CHB? Well, looking at the stuff here, thinking we big kids should get in on the fun too. Some that seem an especially good fit for the snack table – Apple chips with honey-yogurt mint dip, Homemade cheddar cheese snack crackers, Cheesy pita chips, Crispy parm chickpeas, Smoked paprika popcorn, Pimento cheese puffs, Miniature corn muffins, Peanut butter and jelly cookie bars. From MyRecipes
♦ Books on wine pairing certainly have their place in our culinary realm, giving us solid guidelines for choosing a sip compatible with our menu. But, what I especially like about this one is the page after page of ready-made duos, with the bonus that’s it’s from a familiar name. It’s all in the title, “Food & Wine’s Guide to Perfect Pairings: 150+ Delicious Recipes Matched with the World’s Most Popular Wines.” Kindle & hardcover, Prime eligible, 4 1/2 stars on Amazon.
♦ Food & Wine again talks food {sort of} and beverage here, but overall it could not be more 180 from the item above. Say someone at your Thanksgiving gathering shuns alcohol, but you would like to offer something in the holiday spirit as you all enjoy pre-dinner drinks. Jones Brand sodas, famous for their wacko flavors, has you covered – with their Turkey & Gravy Soda. Yes, you read that right. And wait till you see some of their other “you put what in that bottle???” creations.
