Kitchen Talk – Kudos to restaurants that tell us how to make their signature dishes. In this case it’s  IKEA’s Swedish meatball recipe or, as they call it in this Southern Living piece, an “at home alternative.” And yep, the cream sauce prep is there too.      If you made extra of the Mexican Bean Dip {05.21.21 Salon} and have leftovers, yowza you’re on your way to a super flavorful bean soup. I added beef bouillon and taco sauce, then on with the toppings – sour cream, avocado, bacon, cheddar, then cilantro over all. Yum.      Who doesn’t want to get ahead of the game? Look how we can do just that. 40+ Freezer Recipes To Make Ahead and Reheat Easily. Good stuff too, think Smoked pork stuffed shells, Green chile chicken stew, Tamale pie mix-up, Tex-Mex meatballs in red chile sauce, Buffalo chicken casserole, more.

Shopping Finds – After coming across that Oreo birthday gift that we had featured {04.23.21 Salon}, wondered if Amazon may have other nice gift packs for birthday celebrations. Yep, at the link.        So, I recently saw a passing reference to the nutritional benefits of dried fruits – in addition to being quite tasty – so googled and found interesting nutritional information. Then thinking, maybe Amazon has dried fruit gifts too. And again, yep.

This week’s featured CS-designed, Zazzle-crafted item – With June weddings here, definitely time to think about bride gifts. One with a whimsical touch is our pretty, flowery “Just Married” tee. For the honeymoon trip, to relax into the day after the ceremony, or just to say, “We did it!” On our Eclectic Mall page.

Feature – German Chocolate Brownies, several ways to get there

So, in last week’s Salon we featured German Chocolate Brownies available from goldbelly. And yikes they look good, but we do have ways to make our own, even if they aren’t quite the same showpieces.

Let’s start with the 5-star recipe from Taste of Home linked below. A classic brownie recipe, though using German sweet chocolate. And the classic pecan and coconut topping that we associate with German Chocolate cake. Likely worth every one of its stars.

But, I had some of the wonderfully dense, chewy brownies left over from our chocolate malt version {04.30.21 Salon}. And as a big fan of time saved if quality’s preserved, I made the ToH frosting and right onto the ready and waiting brownies {shown, right}. This frosting, btw, could easily become your sweet tooth’s bff.

No naked brownies in your freezer? If there’s a mix you like, that can certainly be a worthy shortcut. Or, for an even “shorter cut,” if your market’s bakery has brownies with just powdered sugar, snap ’em up, and lay down the frosting.

The cookbook shown here is just one from the many featured at the link below, but just look at that cover. You almost want to put it on a plate and get a fork. Have to wonder if that brownie on top was meant to be that way or if someone at the photo session lost control.

Recipe Notes – Instead of broiling the topped brownies I nuked the frosting for about 45 seconds. I also made an alternate version of the frosting for folks who need to avoid nuts, substituting chocolate chips instea}, and given the extra sweetness cut the sugar to 1/3 cup. Great with ice cream!

   What kind of snack table doesn’t “go nuts”??? Make sure yours isn’t one of them with this amped up version. The Spiced Pecans prep from Tastemade wrangles sweet from sugar, heat from cayenne, and a touch of exotic with cinnamon and ginger. Our own celeb chef Les Kincaid says these contrasting flavors are enhanced by a nice glass of rosé.

  Tastemade strikes again with a classic combo that in this incarnation can be breakfast, brunch, or . . . awesome addition to the snack table. Chicken & Waffle Bites! Kitchen Talk – Have you heard of this? Tea latte, officially dubbed London Fog. The basics are tea and steamed milk and then customization sets in. What’s your pleasure? Perhaps vanilla syrup or brown sugar, other sweeteners, maybe a touch of lavender. Thanks to Google see it all here, how to make or where to buy.      Love Oreos but hate the gluten? Rejoice! Yep, there are now gluten-free Oreos. Regular and Double Stuf. See them on the Oreo site.      Burger lovers love burgers anytime of the year, but as the weather turns balmy, there just seems to be something extra special about those tasty patties, in the pan or on the grill. For folks who might like to change up the current faves will want to take a look at the Best 33 Burger Recipes from Food & Wine.

Shopping Finds – So, we’ve played a lot recently with sparkly and colored sugar. But here comes a whole different take – sparkly syrup! Found Strawberry Sparkle on Amazon – I couldn’t really see glittering in the pix but one of the reviewers who had poured it into sparkling waters said, loved watching the sparkles swirl around the bubbles. And a company called Runamok {not familiar with them but shows the lock icon} offers a Maple Sparkle Syrup. Btw, on the Amazon page you can also find jars of mica, the stuff that creates the blingy magic.    For you, for someone just setting up housekeeping, for your cookster friend? Wowsie, 24-pc kitchen utensil set, #1 Amazon Best Seller, Prime eligible, $24.99.

This week’s featured CS-designed, Zazzle-crafted item Who’s rescued a dog from a shelter and given it a loving forever home. You? Someone you know? Feature – Hasselback Pizza Chicken, easy fun

Once again Alexa popped up a recipe where resistance was fu-tile. And so here it is, “upstairs,” in the Featured Recipe spotlight.

This is so fun. Like chicken parm meets pizza meets a technique usually confined to the potato province.

I did take a couple of CS-liberties here. Marinara instead of puree. Pepperoni instead of salami. But you know what, it sure seems the original would be great too.

I also experimented with cooked chicken breasts from the deli counter, baked until heated through and the cheese was all melty. Worked just fine.

I opted for fries and slaw as platemates, but think pasta or even risotto could work well. Some kind of salad is almost always a good counterpoint.

That’s because the shell is rolled and crisped potato slices, and the filling is creamy mashed potatoes, mixed with Gruyere and little hits of nutmeg and salt. A sprinkle of chives adds a touch of color to the fun. This recipe comes from Tastemade.

My request: Show me some Nutella recipes Of the bunch that she pulled up, I think the one going on the to-make list is the Easy No Bake Nutella Pie from AllRecipes. Btw, the results also included a couple of ways to make your own version of Nutella.

  Eately offers up some wine suggestions for the snack table and the sweet table. The page also includes a link for their wine & cheese guide.

  Our CS Tasting Panel judged this a hit. Chicken Parm Dip! Starts with a store-bought rotisserie chicken {yay!}, then gets saucy and also adds in seasonings and cheese. Serve piping hot from the oven with crostini & veggies as dippers. And be prepared – it makes a lot. The good news, so many tasty ways to use the leftovers.

  Who loves margaritas {hand raised}? If you can still find the April/May issue of Taste of Home you’ll find 10 ways to gussy up the classic. Can’t find. Well then, double down instead with this page on their site, “20 of Our Best Margarita Recipes.”

Here are their 13 preps for pets. If you have any concerns about these preps, please check with your vet.      Sometimes the headline just pulls you in and then the opening line seals the deal – like this one, “What if I told you that I could guarantee perfectly cooked, perfectly tender pork chops, every time?” It turns out How to Cook Tender Juicy Pork Chops Every Time from the kitchn is a matter of cut, brine and oven.

Shopping Finds – You don’t have to be too many pages in to “Open Kitchen” to realize that all of the preps a re just so pretty, so party-ready. And that’s all the more notable because tons of work is definitely not part of the equation here. Both aspects are pretty well covered in the claim that this cookbook is “full of contemporary, stylish, and accessible dishes that will delight and impress with less effort.” By Susan Spungen, 4 1/2 stars on Amazon, hardcover and kindle, Prime eligible.       What would we do without whisks??? But does your inventory include this French design? Here’s where it shines – anytime you’re prepping say a sauce right in the pan, this is the one that incorporates those ingredients that try to hide all around the bottom edges, often missed by the pointy guys. Set of two mini French whisks, $5.90 on Amazon, 4 1/2 stars, Prime Eligible.

Feature – Chocolate Fudge Party Pie, a festive delight in every bite

Party? Well that can be, as our CS watchwords say, for a crew, or for two, or just for you. The festive spirit knows no limitations.

And with that in mind we put the spotlight on a big bunch of decadence. Borrowing a line from Reese’s, not sorry!

The original {shown in CHB, 11.06.20 Salon} on a somewhat ancient newspaper clipping, calls for a cooked filling. This re-do takes a clue from our Bailey’s chocolate pots {03.05.21 Salon} and replaces the egg with cream cheese for no-cook, no-bake {except for the crust} prep that’s still pretty faithful to the original.

Here’s what I used: 8 oz cream cheese, 1 c milk, 1/4 cup heavy cream, 2 T softened butter, 3.5 pkg chocolate fudge instant pudding mix, 2 T ea cocoa and brown sugar, all in the food processor. Into the baked crust, covered in the fridge for a few hours or till completely set. Easy!

Serve with whipped topping. Or our new friend, colored sugar. Or both!

Recipe Notes – You probably could use a ready-made graham cracker crust but I really think that could send the sweetness over the edge. Why a party pie? Thinking because with so many rich ingredients would probably be for a special occasion . . . and because it would likely be the star of any get-together.

Alexa says request: How do you make donut bread pudding? So, what actually comes up is even better, Cider Donut Bread Pudding. And if the picture tells the true tale, it is beyond moist. I’m guessing the large apple and cup and a half of cream help in that regard. This is 5 stars, from AllRecipes.

Alexa says request: How do you make Shepherd’s Pie Potato Bowls? What an interesting dish. And quite rich, with the major culprit being butter – brushed onto the potato skins, mashed into the potatoes, mixed into the shepherd’s pie ingredients, and then crowning the finished “bowl.” The recipe comes from Food Network.

My request: Do you have recipes for leftover ham? And up came preps for soups, salads, sandwiches and casseroles. This one was kind of an unusual application, Ham, Bean and Kale Slaw by Serious Eats. But I was drawn most of all to the Sheet Pan Cubanos by the easy method, and the interesting option of using chicken or turkey instead of pork.

  Campari fan? You’ll probably want to take a look at these 18 Delicious Campari Cocktails to Make at Home from Food & Wine. If you’re new to this Italian aperitivo note that F&W calls it herby, citrusy and pleasantly bitter. It’s also an essential in the popular drink Negroni, starring in recipes all over google.

   Foodtalkdaily seems to favor the sweet side of the prep spectrum {not that’s there’s anything wrong with that!}, but here it gives us a delectable appetizer, baba ganoush. While you may already be familiar with this smoky eggplant dip, what you may like to know as well is that it satisfies a lot of diets – being keto, gluten-free and vegan. The site suggests serving with pita, crackers or sliced veggies, and the next day I’ve discovered it’s a quite nice spread on morning toast.

  There’ll be no just sitting around a table for these folks. Nope. Sipping meets adventure in these Most Extreme Wine Tastings Around the World. Think undersea to high in the sky to deep in a cave and more.

Shopping Finds – Have you seen these? So clever. Designed to look like Mason jars but actually reusable plastic bags that tuck neatly into freezer, fridge or pantry. Four sizes, three packages 30-50, 10.99 -20.29. Prime eligible, 4 1/2 stars, and an Amazon’s Choice. Dimensions are shown on the page.   The reviews for the brownies from Prepared Pantry’s mix glow right off the page. Their most recent newsletter features a recipe for using the Seriously Fudgy mix to make pretty brownie cake pops. You’ll also find other flavors such as thick & chewy, chocolate raspberry, and chocolate chip blondies.

Kitchen Talk – Finding fun ways to play with the gold and silver decorating sugar I originally bought for the tie dye cookies featured in our 02.05.21 Salon. Striped both on a homemade banana donut, just gold on a chocolate filled pastry, a combo on buttered carrots, and just silver on my fave sundae, chocolate ice cream with marshmallow topping. One thing, how much the sugar sparkles depends on how much light is on it.    More fun. Blood oranges, which I’ve long heard of but just recently had in my kitchen. You slice through the darkish peel to find juicy, crimson fruit waiting inside. Expect a nice balance of sweet and tart {and also red drops on your hands}. Squeeze into water, add ice, and you’ll have an “ade” that looks sort of exotic.    Still playing with making my own marshmallow topping.

Feature – Ooey Gooey Turtle Bars

So, the Pillsbury refrigerated dough I used for the tie dye cookies mentioned above in Kitchen Talk made such good cookies I decided to take another look at their site for other recipes based on this dough. And just look what I found!

After the ready to go dough there are just a half dozen ingredients. And four steps.

Four of those ingredients add up to an elevation. Store-bought caramel sauce is kicked up with more butter and brown sugar and, somewhat unexpectedly, graham cracker crumbs. Interesting!

It rates 4 stars and the comments delivered rave reviews. One tip therein, two of the cooks said they lined the pan with parchment paper.

The top of my to-make list is getting pretty crowded but this has to go there. Will report the results in a future Kitchen Talk.

Alexa says request: How do I make caramelized banana peanut butter cheesecake? Are those all the right words, or what??? Prep for a large rich cheesecake meets up with a cup of creamy peanut butter, destined for a graham cracker crust. Then . . . it’s topped with sliced bananas that have been glazed with a creamy, buttery caramel sauce. And guess what? No bake! We can say our thanks for this recipe, once again, to Tasty.

Alexa displays: Show me this recipe. This option appears with every recipe that pops up on the screen. You can also just request it by name later – the good news at that point is that other possibilities also come along for the ride. The bad news, however rare, can occur when the request includes a quite unfamiliar name that Alexa may not recognize.

This happened recently with Socca, though as always you can of course look it up on line. The other good news embedded here is the opportunity every now and then to learn about a new food. Btw, Socca?  Born in Genoa, popularized in Nice, it’s like a cross between a pancake and a pizza, topped at will a la the latter. Here’s what I found on google and the first prep shown is the same one that had been shown by Alexa.

Alexa says request: How do I make roasted carrots with pistachio pesto? We previously posted a darn good recipe for roasted carrots in our 06.12.20 Salon. No harm though in taking a look at how it’s done in this demo. But what was really intriguing in this offering from Epicurious was the pistachio pesto, which interestingly takes a “nose to tail” approach to the carrots. Also wondering how it might work to just sub pistachios for whatever nuts you now use in a classic pesto prep.

And this week’s unexpected thing we found that Alexa can do – play the song quiz

♦  Molly Yeh of “Girl Meets Farm” on Food Network brings us a substantial happy hour treat. It starts with a multi-flavored Bloody Mary and ends with a multi snack. Anchoring the latter is a mini reuben sandwich on a stick that also holds a cornichon, the whole shebang then cozying up to the required celery stalk. Btw, one of the ingredients in the cocktail is caraway which bridges nicely to the rye bread in the reuben. And, it seems Yeh has a broad definition of happy hour, telling us, “Bloody Marys wake you up in a way coffee wishes it could.”   

  This taste-intensive Tex-Mex dip for the cocktail hour from Las Vegas celeb chef Les Kincaid – “Combine over lo-med heat until cheese melts, 1 lb Velveeta cubed, 8 oz jar cheese spread, 1 lb bacon cooked and crumbled, 1 bunch green onions sliced and 4 oz chopped green chiles – serve with chips and an assortment of veggies.” It’s quite amazing how so few ingredients, simply stirred together, can create such big flavor.

   We previously talked about martini variations – not the kind of drinks that bear no resemblance to the classic cocktail but adopt that name because they are served in a martini glass. But rather the requisite gin or vodka and vermouth, with the variations being usually just a single add-in, as in our previous references to the “dirty” one with olive juice or my fave with jalapeno or other hot pepper juice. Meanwhile there’s been a low level trend of a few years now of adding pickle juice to adult beverages. Tried it in a tini. Nope.

   While advice may not always be appreciated, this example might be welcome. “7 Best Cocktails to Drink While Cooking Weeknight Dinners.” Now if you’re wondering what makes these  sips different from others, here’s what the folks at Food & Wine say: “There’s something wonderfully therapeutic about cooking dinner after a long day. There’s something even more therapeutic about cooking dinner after a long day with a drink in your hand. Skip the martini— what you need is something quick, refreshing and relatively low proof so you’ll still be coherent by the time supper is ready.” {btw, the martini link takes you to F&W’s prep}

Their Buffalo Chicken Crescent Ring is kind of fun too, like a tasty craft  project.    Much as we CS-ers love to cook, guessing there are days when we could welcome “What to Cook When You Are Tired of Cooking” from MyRecipes.

Shopping Finds – Bakers, do you know about this magazine? Just received a flyer for “Bake from Scratch,” subtitled The Go-to Resource for Artisan Home Bakers, adding that it offers pro tips and visual guides. Haven’t decided yet it there’s room in my magazine rack for one more resident. In case you like to consolidate your purchases, the link takes you to Amazon and the price there is the same as on the magazine’s site.  Thinking of getting a multicooker? The folks at Cook’s Illustrated took an in-depth look at these appliances and reported the #1 pick as the 8 qt Duo-Evo Plus 9-in-1 Electric Pressure Cooker, and in 2nd place the 8-qt Express XL Stainless Steel Pressure Cooker. The links take you to Amazon – the Duo-Evo is I believe the correct one because the titles match; the second is the right one because the model numbers match. Here now is the rest of the story and a chance to sign up.

Kitchen Talk – Could this be one of the best tasting flour-free cookies ever? The miracle is that these Flourless Chocolate Chip Almond Butter Cookies from LiveWellBakeOften actually become . . . cookies! Because this is all that goes into them: almond butter, coconut sugar {or brown, which I used}, egg, vanilla, and chocolate chips.     Thinking whenever I next have a party, this would be a conversation-worthy side dish. French Onion Soup Casserole from Southern Living    Yum! Made french fries {store bought, frozen} in my new Ninja Grill and they were fabulous. I’m guessing there’s likely already a bit of oil on them but no more was needed to yield crispy exteriors, fluffy interiors. Also, the rest of the dinner wasn’t quite ready so just closed the cover back up and hallelujah they held that perfect condition.

Feature – Tie Dye Cookies

Have to wonder if Molly Yeh, host of Food Network’s “Girl Meets Farm,” is a student of Trisha Yearwood because like the latter she clearly likes to play with her food. And may I offer as Exhibit A, these oh so fun tie dye cookies.

Start with sugar cookies. Divide and conquer with food coloring. Twist and shout. OK, maybe not shout, but form into a ball. Sparkles complete the festive results.

Yeh used red, blue and yellow, but this cute idea could be emerge in any number of color combos. For example, a nice red and white, maybe pink too, for Valentine’s Day.

The recipe calls for nuking the dough so it can be under-baked and still safely consumed. Note that an asterisk under the ingredients provides an alternative for♦ fully baking the cookies.

Here’s another alternative. I used refrigerated cookie dough, easily divided into 12 cookies. A keeper.

Recipe Notes: I made the colors a little more marble-y to look even more like tie dye, and did the kneading inside plastic wrap. Also, rolled some of the cookies in gold sanding sugar, others in silver, with a light touch. Btw the Pillsbury cookie dough I used said on the package it can be consumed raw

Alexa says request: How do you make giant grilled cheese kebabs? To me, one of the biggest perks of my Echo Show is discovering new food sites, sources for the recipes that pop up on the screen. In this case it’s Tastymade which does show the lock icon. The recipe looks like great fun, and you creative folks I’m sure would come up with variations. Not too surprisingly the suggested accompaniment is tomato soup. One thing, expect to need clean-up on aisle 5, aka your grill pan.

Alexa says request: How do I make white chocolate pudding? The details reveal that it’s even better than the title would tell us. An Oreo cookie layer in the bottom of the individual serving glasses, and then grated chocolate on top. In the middle of course the main event, a rich and creamy white chocolate pudding. This comes from Ree Drummond on her Food Network show. Demo too!

Alexa says request: What’s the cheese ball story? We’re familiar with a number of things that can close down roads. But cheese balls? Yep, that actually happened late last year when a truck overturned on Interstate 495 in Maryland spilling out 20,000 pounds of the snack. After two hours of cleanup of the cheesey escapees and the resulting fuel spill plus lots of rerouting, all was well . . . mostly anyway. No human injuries but it appears none of the cheese balls survived.

And this week’s unexpected thing we found that Alexa can do – play the spelling game {adult & kid versions}

  CS Tasting Panel member Christine McKellar posted a plu-perfect dish for a wintry night on her Vegas Only Entertainment site. Wait till you see the layer upon layer of flavor in this Creamy Sausage Stew. And while there are lots of ingredients, fear not, just a few steps and it’s ready to go to the slow cooker {or I would guess a large pot OK too} and emerge as big bowls of goodness. 

  The same issue of Cook’s Illustrated that ran the cooker feature above offers this recommendation for spirits to stock in the basic home bar: Tequila, Vodka, Rum, Gin, Brandy, and Whiskey. Saying further, for cocktails stay with bottles in the $15-$40 range, upping the ante then for anything meant to be sipped on its own.

  Credit Ina Garten for this sexy cocktail snack. Large butterflied dates are filled with bleu cheese and wrapped with prosciutto, then warmed in the oven. Mmmmm. Here’s the whole recipe on Food Network. Btw, something Chef Garten used for a different drink but that I think could cozy up to a margarita is a rim of both salt and sugar.

Quick Bites – What’s better than a celebrity chef recipe for cornbread? Five celeb chef recipes for cornbread. What’s even better yet? Someone on insider.com willing to test all five, take us through each process, and give us the results. You have to search a bit, but there are links in each description that will send you to the recipe.    A slide show from USA Today lifted the curtain on how pickle juice can elevate fried chicken, calling it a magical combination. Quite intriguing, but didn’t say exactly say how to go about that {amount, timing, other ingredients}. But AllRecipes does with its Pickle Brine Chicken recipe.    Thinking ginger root must have hired a pr agent since I’m seeing more and more about its health benefits and flavor perks. Food & Wine brings us no fewer than 29 ginger recipes in this slide show {or scroll for full list}, including an intriguing one for ginger-roasted acorn squash that adds greens for a very pretty platter. {Hey, could put these three together for a mighty fine dinner}

Shopping Finds – Did you know this? Panera Bread offers a decent variety of pantry items for contactless delivery or curbside ordering or pickup. See the details.     And did you know about this kitchen tool? You hold it kind of like a knife, run it over certain fruits or vegetables or even pastry or say slices of Swiss cheese for salad and end up with perfect uniform shreds. Many variations here on Amazon, all quite reasonably priced.

Kitchen Talk – All my previous ice cream breads have to move over, because there’s a new fave in this kitchen. Peppermint! Yes, peppermint stick ice cream bread, a semi-sweet treat that just dances in the mouth. See the original recipe in our 07.17.20 Salon, and remember, just three ingredients. Could be quite nice on the Valentine’s table.    Hot news! Yahoo Life reports that research presented at the recent AMA Scientific Sessions cited a wide-ranging chile pepper study that shows consuming these palate igniters could be instrumental in avoiding major diseases and increasing lifespan. The favorite spicy cookbook in this kitchen is The Fiery Cuisines, 5 stars on Amazon and notable for balancing flavor and heat in dishes from across the food groups and around the world.

Feature – No-Bake Chocolate Peanut Butter Cheesecake

This might border on illegal {if so, blame Tasty.co & Alexa}. Or at least something you might not want to mention to your dentist.

Rich cheesecake goes a big step richer with melted chocolate chips blended in. Then cozies up to a thick layer of peanut butter that’s gone all sweet with powdered sugar.

Would certainly be good as is. But looked sort of plain, so melted another 1/4 cup of chips to drizzle overall.

While a number of desserts taste better after sitting out of the fridge for a while, this is best nice and chilled. Probably don’t need to add that small slices will suffice.

So, just for the heck of it thought I would see if Amazon offers a ready-made chocolate peanut butter cheesecake and yep they do, and quite showy but also quite pricey. What you might find surprising though are the other choc/pb items on the page including even coffee.

Recipe Notes – I cut this recipe in half and made it in a deep dish pie plate. It calls for just chocolate chips, but I opted for semi sweet and wondering if even bittersweet might work. Also, ran both layers through the food processor so they would turn out silky smooth. Note that it needs fridge time in the process and afterward.

Alexa says request: How do I make tater tot breakfast pizza? Tater tots + egg = a crispy, tasty crust, especially if you heed some of the commenters who seasoned both the potatoes and the eggs. Then, the toppings, yum. Two cheeses, bacon, the eggs, pepper, not in the list but looks like parsley in the demo, and then avocados. Check other comments too for different topping suggestions. However it came together, these folks love this recipe from Tasty.

Alexa says request: How do you make cinnamon roll pancakes? AllRecipes wins this delectable derby with their 4 1/2 star recipe. Let the description on the page tell the rest of the story – “Sweet and delicious buttermilk pancakes with a butter, brown sugar, and cinnamon swirl filling. These are great any time of the day and less time consuming than making real cinnamon rolls!” Wow, add the above prep and we’re talking a 5-star brunch.

My request: Most of the time Alexa is quite amazing in putting together the parts of your request to deliver exactly what you’re looking for. In this case though, it took some “negotiating.” What I really wanted was a 5-star recipe for New Orleans style barbecued shrimp which as you all know is a whole different category of bbq. After trying this and that I finally decided to name drop and asked for a barbecued shrimp recipe by Emeril. Voop up it came and Voila! 5 stars. On Food Network and actually called Emerilized Barbecued Shrimp, it has more ingredients than maybe most others but oh my each one just layers on more flavor.

And this week’s unexpected thing we found that Alexa can do – play dinner party music, such as classic jazz or classic rock

♦  Well look who dropped down out of her room. Alexa! That’s because she popped up some party food on her screen. S’Mores Popcorn. It comes to us from Giada on Food Network, and indeed has all the right stuff. You’ll see that she gives it a bit of a Valentine’s look, and woohoo it starts with store-bought popped corn.

  Well I’d say definitely soothing, but Food & Wine goes all in and declares, “Hot Cocktails Are Like Heating Lamps for the Soul,” and then goes on to describe some toddy siblings found in restaurants around the country. And fear not, there’s a link to another F&W story with actual recipes.

   Here’s how Ashe Cayne in “The Unspoken” dresses up a charcuterie plate: cured meats, hard and soft cheeses, olives, grilled artichoke hearts, pepper & fig spread, bruschetta, crackers, fresh & dried fruit, strawberry jam. There are just a couple of pages in this Amazon 4-star book where you wouldn’t want to be eating at the time, but it’s otherwise a relentlessly unfolding mystery in the toughened hands of Cayne, a Shakespeare-quoting, Food Network-watching Chicago detective, hard boiled and soft boiled. Here’s my recent plateful.

  Heard on Food Paradise, Food Network, “You season both sides because you eat both sides.” Kind of a cousin to Emeril’s oft-said “I hate one-sided tasting food.”

Quick Bites – Squash season! While I like mine with just a bit of butter and brown sugar, I have to say there are some good looking renditions in Food & Wines offering of Our 36 Best Squash Recipes, such as mashed winter squash with Indian spices, baked butternut squash with cheese polenta, winter squash with gruyere gratin, savory ricotta squash tart, acorn squash saltimbocca. {thanks to Jeffery Martin at Wikimedia Commons for the photo}    We like to share stories on avoiding waste whenever we see them so hoping you’ll take a look at this one on storing sweet potatoes from Extra Crispy. Love sweet potatoes!    So, Well Done sent us to MyRecipes sent us to Reddit for this hack on heating two bowls of food at once in the nuker. I have not tried this.

Shopping Finds – I know flavored syrups have been around for a long time, but was sort of surprised to discover how many infused maple syrups are available, and so many sound so good.  The link takes you to the page I saw on Amazon.    MyRecipes, especially as a protégé of AllRecipes, I think is a pretty trusted source. So I paid attention when they posted their pick for favorite pie filling. The winner: Duncan Hines Simply Pie Fillings & Toppings, available in apple, blueberry, cherry, peach, raspberry & strawberry.    Could help avoid waste? Amazon identifies this Automatic Food Sealer with starter kit as one of its current “Hot Releases.” Four and a half stars, Prime Eligible.

Kitchen Talk – I’m inspired by the current Better Homes & Gardens to “put down the carving knife” and instead turn the surface of pumpkins, real or craft, into pop art. The cover punkin gets its festive look from tissue paper, Better Homes And Gardens Magazine October 2020while others in the story call upon electrical tape, cording, yarn, and paint – brushed on, splattered on, or a fun trick where you blow bubbles into it {don’t inhale}.    The other pic? Popcorn balls? Nope, but first, in our 09.25.20 Salon we linked a story on foods other than muffins you can make in your muffin tin. I have another way I like to use that pan, and that’s to freeze {covered} individual portions of various items, in the case here cooked macaroni. Also good for rice, cooked shrimp, stuffing, frozen veggies, cooked veggies, e.g. Just be sure to treat the cups with non-stick spray so the food can be popped out and into a freezer bag.    Another good use for the ginger syrup {09.18.20 Salon} – in a spicy stir-fry, a tasty offset to the peppers.

Feature – Bobby Flay’s Bacon & Hash Brown Quesadillas with Salsa & Eggs

I’ve had the pleasure of meeting Flay – briefly – and enjoying dinner at his Mesa Grill – not so brief!. No, you want to linger over this fiesta of flavors, a showcase for his passionate take on southwest cuisine.

And so I was drawn magnet-style to this quesadilla {OK, the bacon helped}. That bacon plus homemade hash browns join onion and peppers and cheese in a tasty tortilla stack, topped with a nice fried egg, fresh tomato salsa, and chopped chives.

A perfect way to start the day. Especially a day with a late and lazy start. Bloody marys anyone?

The recipe is on the Food Network site. If the same page comes up that I saw, you should be able to also scroll down for a demo showing pumpkin gooey butter cake.

Recipe Notes – The recipe makes four very generous servings, and if there will likely be leftovers, just leave the eggs and salsa off the extra stacks and and freeze them. I diced the potatoes instead of grating and cooked them together with the onions, par-fried bacon, pepper and chile powder in the oil. The salsa has the unusual addition of honey and truth be told I was kind of skeptical about it, but in fact it brings a nice touch of richness to the party. Possibilities in advance: make salsa, cook potatoes, lightly fry bacon, chop onions & chives.

Substitutions if needed – while it won’t be the same intense flavor you could probably use chile powder in place of ancho powder.

Alexa says request: How to make French style beef? Oh my, a winner emerged in short order, a slow cooker treatment of a beef chuck roast, rich with broth, veggies, herbs, and a sun dried tomato tapenade. It’s Beef Provençale, from Food Network Kitchen.

Alexa says request: How to make cheese waffles? Among the results was an interesting take that went one better. Ham & Cheese Waffles, with those two guest ingredients going right into the batter. Served warm with butter and maple syrup. From Epicurious.

My request: Do you have a good Bolognese sauce recipe? I’m guessing a good many of you have had this experience too. You throw together an impromptu version of a known dish and it turns out great. But then somehow you just can’t re-create it and nor do any of the recipes you find. For me, that’s a Bolognese sauce. and under the banner of hope springs eternal going to try a 5-star one Alexa found from Side Chef, a site we just recently discovered. If it’s what I’m looking for, you’ll be the first to know.

Called, and with good reason, Skrewball, it’s just as it sounds, whiskey and peanut butter which, as the maker says, “go together so well the make pb&j jealous.”  Those folks, the husband and wife creators and their team, have lots of fun on their website with the name and while there you’ll also see their hashtag, and meanwhile will leave it to your imagination.

  Good thought, broaden your sipping horizons even further! One thing may be of interest regarding cocktails — cocktails from around the world.  Sure, most everyone knows about margaritas and mojitos, but how about the lesser known cocktails like Pimm’s Cup (UK), Aperol Spritz (Italy),  Caipirinha (Brazil), Kir Royale (France)” – Linda K-P, Orlando

  Guessing there are some folks that can defy this promise, but for the most part this is a very welcome prospect – “spill-proof wine glasses!” They’re 12 oz and “naturally aerating.” Four and a half stars and an “Amazon’s Choice.”

   Btw, just as with the rye croutons, the bacon croutons in Kitchen Talk in last week’s Salon also make a mighty fine cocktail snack. Hot, warm, or cold.

Shopping Finds – I don’t know about you but it seemed I never had enough spatulas . . . until I found this festive set. Plus a food brush! Right now the 7-pc spatula set is $8.99, Prime eligible, 5 stars, and an “Amazon’s Choice.”    Want to decorate the kitchen for Halloween? And to cite the spirit of the Salon – whether for a crew, or for two, or just for you – Amazon’s got you covered.    If you’re having trouble finding bouillon powder, as I have, you might try the jarred bases which I have found at the grocery store – have to be careful of the saltiness but quite the flavor whammy.

Kitchen Talk – So, I finally took a look at the necktag that was on the ginger syrup {09.18.20 Salon}, and in   addition to a recipe for seasoned ginger party nuts, even more uses – ice cream, baked chicken, oatmeal {always like some help in that bowl}, yogurt parfait, chocolate cake, even cocktails . . . and roasted carrots to which I added a bit of butter, and mmm-mmm.    If you’re avoiding gluten, have I got a recipe for you. The title, Flourless Oat Banana Muffins, doesn’t do it justice given its flavor boosters of peanut butter, honey, spices and chocolate chips. Actually even better the next day.

      On the Table 

Peach cobbler – five ingredients – tons of yum

As this week’s title tells you, the peach filling has some company in the pan. Pecans for crunch, bits for extra richness.

About the bits. The recipe calls for toffee but once I spotted caramel chips, a substitution was immediately in play.

And this tasty dish couldn’t be easier. Layer, sprinkle x 2, stir briefly, sprinkle x 3. Ready to bake.

About the baking. This prep is actually designed for campfire cooking, buried in hot coals. It bakes in a parchment-lined Dutch Oven.

No problem. I used a 9 x 13 pan treated with baking spray. Then based on other cobbler recipes, baked at 350 for 50 minutes covered. Checking if it’s done all the way through can be dicey since the tester will be going through the fruit too. If you’re not sure, remove a scoop of the cobbler and use the tester on some of the cake that’s fallen to the bottom.

Recipe Notes – You could certainly still use parchment paper if you wanted. I think next time I would skip the brief stir, maybe instead just using the back of a spoon to press down a little bit of the cake mix. Sweetness is front and center here so if too much add a dollop of sour cream.

You don’t have to have an Amazon Echo Show to tap into the particular tidbits we’ve linked below, drawn from its vast culinary bounty.

So, pour a cup and let’s talk food with Alexa. We also show the actual requests for those who are Echo owners, who should also note that in many cases she guides you step by step through the recipes.

Alexa says request: How do you make a French omelette? Of the four that immediately pop up on the screen, we’re going to link to Chef John’s prep on AllRecipes because he is more detailed on what makes it an authentic French omelette, also shunning extra ingredients because as he says, it’s “just eggs and butter, no filling . . . 10% ingredients, 90% technique.” Demo too.

Alexa says request: How do you make banana bread cake? But the option from Food Network Kitchen takes it a big step further. Called Banana Bread Lava Cake, it’s rich in spices and of course bananas, but the star of the show, the “lava,” the secret ingredient – here revealed – is ice cream bars! This one also has a demo.

My request: Alexa, how do you soften hard brown sugar? Wikihow is cited for two solutions, one that calls for imprisoning the sugar with a slice of bread or apple in a plastic bag, the other pressing the nuker into service. But if you go to the Wikihow site for this advice you’ll actually find six ways.

  One of perhaps the best pieces of advice from the Playboy book featured in our 09.04.20 Salon: Take care of all  the preliminaries hours before or, if possible, the day before the event – e.g., amassing ice cubes, polishing brandy snifters, shopping, cooking, marinating, table setting, disks for the stereo, setting out cocktail napkin napkins, or if that’s the plan, hiring help. And then the real nugget: during the party Relax! – “. . . enjoy yourself at your own party.”

  Well, we don’t know if Linus will see the Great Pumpkin for this first time ever this year. But what whiskey-sippin’ folks can see for the first time ever this year is Pumpking Pumpkin Whiskey, a sibling to the well-established Pumpking Imperial Ales by Southern Tier Brewing.  🍺  Cheers.  

  More foodie chat. The acronym DOP on such Italian treats as salumi, fromaggi, olive oil, balsamic vinegars, stands for “protected designation of origin” . . .  showing that it “is legally guaranteed by the European Union to be ‘authentic, or made in the original town or region with traditional ingredients'” (in other words: no mystery ingredients). This bit of instruction from Eately and thanks for making us smarter.

Newsy, schmoozy stuff for cooks 

  Last week we featured lava cakes, a restaurant specialty you could make at home with the Ghirardelli recipe we included. Ready? Here are a lot more thanks to Taste of Home serving up “30 Restaurant Copycat Recipes Ready in 30 Minutes {or Less!}.” Now you can make in your very own kitchen such dining out specialties with recipes for, inspired by as they say, Cheddar Bay biscuits, Culver’s butterburger, KFC Crispy, Olive Garden breadsticks, Orange Julius, Cheese Factory Spicy Cashew Chicken, Shamrock Shake, and lots more.

Tut tut {lorgnette to eyes}. My dear, do you not know the “11 Fine-Dining Etiquette Rules You’ve Probably Broken Your Whole Life.” Some are just plain practical, others I think we may regard as optional. About the napkin, e.g. – long ago a tuxedo-ed server showed me the trick of laying it flat in the lap, then folding the far edge back about a third, providing a handy hand-wiping area that also keeps your dress safe. And then the one about always leaving one bite {hahahahaha}.

Btw, did the writer take this all super seriously? There might be a clue in this intro comment about learning the “few rules of formal dining that you can follow even if you’re hosting in your own home, serving delivery that you are trying to pass off as your own cooking.”

  Can you make a fake? Not create a fake food item, but rather know one when you see one. Cooking Light has identified for us seven foods that are on the suspect list for not being what they seem, and then telling us what to look for to distinguish the genuine article from the impostor. It’s all here in “The 7 Most Common Counterfeit Foods and How to Identify Them.”

Red wine braised red cabbage – a Eureka moment in the kitchen 

To give credit due, it was a same-named recipe in “The Unofficial Downton Abbey Cookbook,” featured in our 02.14.20 Salon, that started this process. My favorite version was in a cookbook that apparently was swept up in a donation to a culinary instructor.

The one in the Downton book came close to the one I’d had, and inspired a further search. Thank you Taste of Home for providing the simple and similar prep I was looking for.

A ‘fess up though – to bring it even closer to what I recall I tweaked somewhat. Sauteed the onion in a half stick butter. Brown sugar instead of white sugar. Red wine instead of vinegar {thus the title here vs. the name on the recipe}. If it dries out too much while cooking pour in a bit of stock, and if you’d like it a little sweeter increase the sugar or, as I did, add a bit of syrup.

Sooooo happy with this dish. Hope you will be too.

A tasty way to switch out carbs

Thanks to AllRecipes, I found a great remake for hash browns. Now, if I promise there will also be a rich potato version, can you please promise you’ll give this a chance after you read . . . cauliflower.

Their Dec/Jan issue had side by side preps for Keto Cauliflower Hash Browns and Loaded Breakfast Potatoes that were made with regular hash browns. I liked the cauliflower idea but wanted it a little richer like the potato one.

Wait, how about plugging the cauliflower into the potato prep???

Below you’ll find both original recipes. I made the potato one with 2 16 oz bags frozen florets, thawed and blotted, just cutting down the largest ones. I used a cup of cheese in the mix and then another cup for the topping, and also 2 T chopped chives “borrowed” from the cauliflower prep. Pretty good, maybe just a tweak or two needed.

  A PEEK AT MY WEEK  

Welcome to my kitchen and living room

  Thanks to a friend’s recent excursion followed coincidentally by a Smithsonian article I’ve become familiar with the archaeological/architectural wonder in Jordan known as Petra, site of an ancient and remarkably advanced culture, where up to 30,000 people dwelt among temples, theaters, gardens, tombs, villas, Roman baths, trade routes and marketplaces. The link leads to much more detail.

  Bringing it into CS land, what was on those tables over 2000 year ago? Oxen, sheep, chickens, wheat, grapes, olives, pomegranates, sesame, often starring in great feasts and banquets. And . . . “the king holds many drinking bouts in magnificent style – but no one drinks more than 11 cupfuls.” {!}

Whenever I see a way to salvage otherwise trash-bound food, like to share it with you. What happened is that I was making my butter cookie recipe with the addition of lemon curd, but that changed the timing and so the first batch was underbaked. So, beat them smooth with an egg, a bit of flour, baking soda and peanut oil, dolloped into a skillet and, voila, not bad pancakes.

  Let’s play trivia. On a recent episode of The Kitchen, I saw Geoffrey Zakarian made two take-offs on the non-alcoholic beverage known as a Shirley Temple. One was a Dirty Shirley, a cherry flavored gin drink. The other, with a similar flavor profile but no alcohol, he named Don’t Call It Shirley. Here’s the trivia – what movie does this latter one refer to and what is the exact line?

Newsy, schmoozy stuff for cooks 

I so look forward to receiving the MyRecipes online newsletter because it’s always filled with good stuff that I like to share with you. But sometimes a single newsletter is just a total culinary home run and one I just caught up with from last month is a perfect example. All three tidbits come from that one newsletter

  Here’s another one of those {at least to some of us!} irresistible headlines. 34 Cheesy Chicken Casseroles. So much good stuff here, classics like parmesan and enchiladas to some a bit more out there including a loaded baked potato version and a Tex-Mex squash combo. Btw, if you don’t want to do the slide show, should be able to just scroll down on the page that opens with the link. And . . . “surf” takes a turn next week in our Featured Recipe, baked seafood au gratin.

  Oh yum. Move over jello shots, here comes pudding. After pudding of your choice and alcohol of your choice, the variations are endless, as their story, “How to make pudding shots: the easy, boozy treat you never knew you needed,” shows in living color. It’s sort of like a spirited, drinkable, trifle. Now, it doesn’t specify where the alcohol goes, but guessing jello shot vets know it will be mixed into the pudding. Some other pudding shots I saw online combined everything into one mixture, but this layered approach makes a really nice presentation.

  So the holidays are over, but the reasons/excuses for a party large or small are fortunately never ending. A star of the show can often be a selection of cheeses. But have to say I never realized that “This ingredient is a crucial addition to your cheese board.” Not trying to be mysterious here, but before you click the link, see if you can guess what ingredient is not usually on the board but in fact makes great sense to join the array. I like it!

Just simply good 

Even though spring is not yet even close to visible on the horizon, a touch of it can come to your plate with this fish dish from Giada. And because the salad accompaniment is so “springly,” the goodness of the salmon remains the star of the show.

The filet is treated gently in both the prep and the cooking process. A quick broil and done.

As for that light, bright salad, it actually serves double duty, as a bed under the fish and then as a garnish. That would be a lightly dressed mix of fennel, radish, and basil, a great counterpoint to the richness of the salmon. Btw, I also used some of the pretty and flavorful fennel fronds as garnish.

Encore! This is indeed a re-run but it fits in well with our other sections this week.

There are suggestions galore online on the best way to store packaged store-bought cheese. This is what has always worked well for me . . .

Cut off the end of the package wrapper. Then cut along both top edges all the way to the back, but leaving the back intact so that you end up with a kind of hinged flap.

After slicing off the cheese you need, fold the two loose ends of the wrapper over the cheese, and place it in a food storage bag, pressing the opened end tightly against the inside of the bag so the wrapper ends stay in place as you press out the air, seal the bag, and fold the rest of it around the block of cheese.

  A PEEK AT MY WEEK  

Welcome to my kitchen and living room

  The cookbook, “AMA – A Modern Tex-Mex Kitchen” served up a nice discovery. Though I’d heard of it before, had never really delved into Tejano cooking, the south Texas home vs nationwide commercial version of Tex-Mex. It’s marked by lots of beef, chili plain and simple, lots of chiles fresh and dried, cumin, and two surprises – considerable German influence and more bacon than I expected. The title refers to the chef/author Josef Centeno’s LA restaurant, Ama: A Modern Tex-Mex Kitchen (Mexican Food Cookbooks, Tex-Mex Cooking, Mexican and Spanish Recipes)whose name in turn honors Centeno’s great grandmother’s cooking, and the cuisine is the product of four generations of food-oriented Tejanos {Texans of Mexican heritage} on both sides of his family. Haven’t tried any of the recipes yet, but surely will.

  I just love the Mad Genius tips. This time it’s donuts, which he calls the easiest ever and they just may be. The magic is in puff pastry, and the rest of the story is in his donut demo. Btw, since I don’t do a lot of deep frying, I made some by dipping both sides of puff pastry shells in peanut oil and then baking them per instructions. {Hold off for Part II in two weeks.}

  Oh, the memories. As a Chicago native and long time Las Vegas resident, the story is of more than passing interest. My first contact with any of the elements was when my husband and I, visitors at the time, dined at a fabulous Italian restaurant near the Las Vegas convention center – called Villa d’Este, it was parlayed from a previous site called Villa Venice, in turn previously Anjoe’s. After a history of a gunshot, a fire, Chicago mob ties, and a touch of Sinatra, it eventually evolved into Piero’s, now an equally famous institution for almost four decades. One of my very favorite chefs, Hubert Keller, will visit this legendary restaurant during his January 25 “Secrets of a Chef” episode on PBS.
