♦♦♦  This is like nachos and poutine meet up and party on a sheet pan. The basis is Disco Fries which first emerged along with the dance craze, reportedly in NJ as a fortifying dish that became popular in late night diners serving folks who got up and boogied into the wee hours. This version starts with the classic trio of fries, cheese and gravy but then adds toppings. It’s called Breakfast Disco Fries because those toppings are bacon and fried eggs. Mine shown here has a somewhat simpler gravy, but still bacony and creamy and yum. For this prep, a shoo-in for our end of the year fave list, and 20 others, thanks to . . .  MyRecipes

I usually use a lot more gravy but wanted you to be able to see all the ingredients. Btw, I love poutine, making my version with tots or fries or diced baked potatoes, sharp cheddar, and beef gravy. And leftovers are almost always joined by fried or poached eggs.

♦♦♦  Chilled wine + hot day + patio = warm wine. Noooooo. Here’s a  clever fix, though in some households it may elicit a chuckle and, Can’t work for us. The Secret to Chilling Wine Fast on Hot Days, According to a Winery Chef.   Food and Wine

♦♦♦  What I really like about these Best Easy Chicken Croquettes is that the celery, onion, and poultry seasoning give the patties a flavorful stuffing vibe that’s a natural with the chicken. Part of the “easy” is that instead of having to cook up a roux as a thickener, you simply use some cream of chicken soup. Even better the rest of it forms the basis for the sauce. All very tasty. I made them them smaller than the prep specified so they would be a good fit for the snack table.  AllRecipes

♦♦♦   Well how fun is this, a conversation piece taking up residence right in your cocktail. Round ice cubes! How do they do it??? Well, one way is this clever machine that pops out two large “cubes” {speaking categorically} that the maker says “keep drinks colder, longer, and with less dilution.” As a bonus it also makes air bubbles disappear like magic to create crystal clear spheres. There are other choices too, going roundy by different means, but will just note that the featured one is Amazon’s Choice.  Amazon

♦♦♦  I was recently reminded of a childhood favorite and though I may not have thought of it in years, in the Southern states it’s been a staple for what is apparently forever. And while my experience came out of a jar, that would be a NO if you want to truly as they say, “Put some south in your mouth.” Talking here about pimento cheese, and having now made Kardea Brown’s prep, let me say Wowsie. Thick and rich, it works in so many tasty ways – a great spread  for Happy Hour, but it can also go all melty for an omelet or open quesadilla, also cut-able to snack size – or as she used it, to stuff big burgers on the grill {recipe at link above}. Note – if you’re not planning to use the cheese as burger stuffing, you can skip step 2 under Method. Also, while it doesn’t show in the recipe, I’m pretty sure she said if she weren’t stuffing burgers with the mix, she would also have added some of the pimento juice, which I did.

♦♦♦  Another round of popsicles for everyone! How appealing is this? Combines a tasty dessert and an after dinner drink in one juicy bite. Icy-perfect for summer. Flavors galore. Talking Boozy Popsicles. Some examples – cucumber lime with gin, mojito watermelon, strawberries and cream with Grand Marnier, and a couple more. ♦♦♦  What a fun way to add a touch of whimsey, a touch of class, or both, to the table. Napkin designs! On plates or not. Some stand up, some lie down, some make pockets for flatware, some hold place cards – one actually looks like an envelope. And some look like something else entirely – fans, flowers, containers, a tie, tree, heart, placemat, centerpiece. Martha Stewart has her own ways with this fabric-y origami. I made this fan design from her Thanksgiving turkey napkin fold, securing the top with a yellow paper clip, the bottom with a key chain, and pulled the bottom folds back a bit to stabilize the fan {guessing Martha didn’t need these props but just in case like me, you do . . .}

Well that is a distinct possibility, though maybe they have their own little dining table and chairs. “They” would be Queen Elizabeth’s dogs, Corgis and others, who -yes!- have their own chef. Heard on ABC during the Queen’s Platinum Jubilee.

♦♦♦  So we did a different version of last week’s breakfast pizza boats, using hollowed out bolillos instead of pizza dough.  I first layered a mozzarella and cheddar mix, then some marinara along with garlic salt and Italian seasoning, then pepperoni, then topped with more cheese mix. Into the toaster oven at 375 just until the cheese melted and the roll had crisped a bit. Check after 2-3 minutes. Meanwhile cook the eggs. For an evening version I used the same idea, just replacing the pepperoni with Italian sausage cooked with onion and green pepper, skipping the egg, and cutting into snack size pieces. Btw, used lots of cheese so they’re nice and sturdy{or, any excuse will do}.  CS

You could certainly substitute any boat-y shaped rolls for the bolillos, say sandwich or hoagie rolls. Or go round and just don’t call them boats. Rafts maybe. 😁

♦♦♦  Could this be among summer’s most refreshing drinks? Maybe you’ve already heard of a Shandy? I had not, but now know it’s basically beer, lemonade and fresh lemon, and has British origins. What I like about the linked one above is that it gives you the classic prep including what beers are generally used, and then five international variations. Any I think would be happy beside those pizza boats. Cheers!  thekitchn

♦♦♦  In a recent episode of The Kitchen, Broadway actor Daniel Breaker prepared a Baked Egg Bar. What an easy way to make multiple servings that are also fun and colorful. On the show, and in the linked recipe, delectable toppings are added to eggs and cream in ramekins before the whole panful is baked. The recipe notes that you can also have guests add their own to the unbaked dishes. Just thinking, what if you added, say, just some colorful chives and cheddar before baking, and then after baking have the guests top off as they wish from a “bar.” Whichever way, just a great idea.  Food Network

♦♦♦  Wow, was I happy to find this recipe for Baked Pancake with Pancake Mix. I used to buy the store brand that had a good version on the box, but that is no longer available. Even better, this prep shows a preference for the brand sitting right on my pantry shelf. So much good going on here. First, and as usual foremost, the taste is phenomenal, and would be even without the chocolate chips I added. Now just look at the photo and you can see how tender this is, the way it curves onto its platemate. And because it bakes in a 9×13, you can feed a lot or freeze a lot.  The Seasoned Mom

Also to note in the photo – the top of the pancake {left} does not brown in the oven. but the bottom does. So just flip over and you’ll be serving the golden one on the right.

♦♦♦  One of the great things about brunch is the option to set out little bites of good stuff, often with a breakfast vibe. Sort of like an early cocktail hour. And wowsie does this dish fit the bill. Mini Cinnamon Roll Bites. Easy! Starts with a refrigerated pie crust. Butter it up, sprinkle with sugar and cinnamon, roll it up and bake. A simple glaze prep in also included, which is presented as a dip but seems it could also be a drizzle. Demo too. Add a cup of coffee and it’s the perfect brunch finale.  Tasty

I haven’t made this yet, but would be inclined to use the whole crust, even if a few of the rolls ended up less than uniform. My mom used to create a few of these from the dough scraps whenever she made a pie. Just one of the ways she was my role model in finding ways to not waste food.

♦♦♦   What can make a classic brunch beverage take on such additional traits as fun, festive, tasty, colorful, clever. Answer – the easy technique for making these Rainbow Mimosas. What’s so appealing about these glassfuls is their multiple flavors since they’re created mostly with natural juices – cranberry, carrot, mango, matcha lemonade, blue curacao, butterfly pea flower tea – topped off with Prosecco or Champagne. Wondering if  blueberry juice instead of curacao and grape juice instead of pea flower could work. There’s always of course food coloring, and as well you certainly don’t have to make all 6 colors.  Food Network

Deconstructed Tamales – Pulled Pork  Cheese Grit Cake   Leave it to Trisha Yearwood to turn grits into a funfest. The dish starts with fried cheesy grits cakes. Then Mexi-seasoned pulled pork. And then on with the corn salsa, sour cream, green onions and cilantro. I did use the thick and creamy grits right from the pot rather than chilling and frying. Avocados make a great accompaniment. Cherry Cream Cheese Coffeecake   The base of this cake s a buttery marvel. Add the rich cream cheese layer and the flavor bombs that are cherries, and it’s destined to be a crowd pleaser. And, yep, it’s big enough to serve a crowd too. As you can see, I used a rectangular pan instead of the springform, though. Great for breakfast of course, but add a big scoop of ice cream and it transforms right into dessert. Loaded Mashed Potato Cups   This is such a perfect fit with all we love here at CS and it’s easy to see why. First, mashed potatoes just on their own qualify for the comfort food hall of fame. But here they’re joined by more good stuff – bacon, chives, parm and seasonings, cheese stuffing, sour cream topping. And it’s an easy prep. Ingredients that are few, familiar, likely already at hand. No complicated techniques. And a pan probably pretty much all of us already own. And by varying its platemates it can move from breakfast/brunch to lunch to dinner. Artsy Confections   For these Tie Dye Cookies, Molly Yeh divides sugar cookie dough into three pieces, each blended with food color, then formed into “balls” that are slightly flattened and baked. The finishing touch is a sprinkling of sanding sugar. “Fessing up, I did use refrigerated dough.  Then, this Painted White Chocolate Bark comes not surprisingly from Trisha Yearwood who just excels at making food fun. Loaded Vegetarian Nachos   Yes, indeedy, veggies can be tasty and fun and appetizing, here even a bit of a showpiece. In fact we vote for renaming them Fiesta Nachos because, as you can see it’s just such a celebration of colors and textures. It’s more ingredients than we usually feature but so worth it and you actually could if you want limit the toppings. And, yes, there actually are chips in there, and then all topped off sour a scoop of sour cream. One shortcut that I used was canned lentils, still stirring in though  all the seasonings.  Recipe    From 09.24.21 Salon

Oreo Cake Balls {or just cake as shown here}  Oh my. Oreo crumbs and cream cheese packed like little snow balls, quick freeze, dip in melted chocolate, refrigerate, done.  They are so, so, easy to make and that might be the bad news because, mercy, they are rich and even luxurious. And they’re fun, the round shape ready to become sports balls, funny heads, bling, and in fact star pastry chef Buddy Valastro turned them into pretty eyeballs. Ham & Beef Tavern Chili   My great uncles owned taverns in the Chicago suburbs, and served cups of this chili gratis to their patrons. I don’t know the dates of operation for those establishments. The family was sort of vague about that. So, this was passed down to me by my Aunty Peggy who actually won a recipe contest with it conducted by the Chicago Tribune. I do like a bit more chili powder and a couple of tablespoons of cumin. And depending on the heat level in the chili beans, I may add some hot sauce. Snacks for Dinner   This is not so much a recipe you’d cook or bake, but rather one for putting together a pretty plate. It all began when I cam across this magnetic headline :“Why Snack Dinner is the Best Thing You Can Make for Yourself Tonight”  Wow, there are some fine looking assemblies here. Lasagna Bites   Yikes, these are good, and very lasagna-y even though there’s no pasta in sight. Rather, they’re made with wonton wrappers that are fitted into your muffin tin. The filling holds to tradition though with pretty much classic lasagna ingredients. It calls for ground turkey, but notes the original used ground beef, and so did I. As you can see, its versatility carries it all over the hours. A great appetizer for sure. But also, send it morningside with a poached egg, so satisfying for breakfast or brunch. Chocolate Peanut Butter No-Bake Cheesecake   Rich cheesecake goes even richer with one layer that blends in melted chocolate chips & a second one of sweetened peanut butter, each separately whirled in the food processor till silky smooth. I did add a drizzle of melted chips, also cut the prep in half and used a deep dish pie plate. FYI, Amazon offers a ready-made chocolate peanut butter cheesecake, quite showy but also quite pricey. The title candy bar plays three roles here, in the crust, in the filling, and as garnish.   Giant Breakfast Sandwich   In our 08.20.21 Salon we featured two “giant” preps. Now those same folks are at it again, offering us another tasty way to go big. In this case, supersizing the start of our day with a sammie that stacks pork sausage, cheese and eggs on a homemade biscuit {with biscuit mix for a shortcut}. A triple “bath” takes it over the top, cream on the biscuit, hot sauce on the eggs, warm syrup on the whole shebang.  From Food Network

   Chipotle Cheddar Corn Chowder  Credit Alexa for popping up a prep for cheddar corn chowder. But then when I went to fetch the link for you, found this version with a spicy twist from the same source. Hatch chilies also get in on the act, along with butter, veggies, aromatic seasonings and a full package of bacon.  From Epicurious

Tap into some of this culinary bounty that is an everyday part of Amazon Echo’s offerings – always CS-style recipes, sometimes tips and tidbits too

  Two-Ingredient Chocolate Souffle  Chocolate hazelnut spread and eggs. That’s it. Whisk, whisk, whip, bake, done. I don’t know how long this has been around but I found dark chocolate hazelnut spread and plan to us that here, because this is definitely going on the to-make list.  From Tasty

  Bacon Cheddar Deviled Eggs  Truth be told I’m pretty much a purist when it comes to deviled eggs, but these gussied up ones look good and would make a nice addition to the snack table. The ingredients are right there in the title, joined by the usual suspects. In the demo, I wonder if the trouble with peeling might be because they weren’t immediate covered with cold water to stop the cooking.  From AllRecipes    

  French Onion Frittata  This is soup for breakfast in the best possible way. The star of the show for sure is the golden panful of slowly caramelized onions. The bread here is not the soaky slice as in soup but rather buttery croutons that go right into the mix. Gruyere too and a good hit of Dijon.  From thekitchn

♦  Beef Braciole I’ve been wanting to try this dish for quite a while, and it took just at glance at this particular recipe to say, it’s time. The glorious mix of flavors in the filling is all wrapped up in thin slices of beef that simmer to fall-apart tenderness.  From Tastemade

Notes: All puree worked just fine. Though they aren’t shown as “divided,” be aware that the parsley is used 3 places, the garlic, raisins and pine nuts 2 places. I put about 3/4 of the cheese inside the rolls. Really like the sauce.

  Garlic-Herb Roasted Potatoes  The title actually starts out with “Easily the best . . .” and they may be right. What’s interesting is that the fresh herbs & garlic are cooked into the oil and then strained out, so when the taters emerge from the 450 oven {crispy, thank you} they aren’t dotted with burnt bits. As a bonus you get to release some aggressions in the process.  From Tasty

Recently, in reference to wine pairing, Alexa mentioned “bridge foods” and cited as examples butter, cream, toasted nuts, mushrooms, tarragon, bacon and corn specifically for chardonnay – turns out it means adding something to your dish that will make it more compatible with the flavor notes of the wine you’re serving – interesting, especially since it means in this case the wine is influencing food decisions rather than vice versa

Kitchen Talk – Dennis Weaver at Prepared Pantry, where all your baking shortcut dreams come true, notes in his recent newsletter that he uses cream cheese as a stabilizer for whipped cream, making it “taste like cheesecake.” He starts with softened cream cheese, whips in the sugar till smooth, then the heavy cream.      Did you know this? If a recipe for the air fryer calls for treating the food with oil spray, it really means oil spray, not cooking spray. Apparently the aerosol agents in the latter can damage the coating on the basket. I found it at my market, but of course Amazon has it too, and in a number of different varieties.

Shopping Finds –  The tale that unfolds is foreshadowed in “The Coincidence of Coconut Cake” by Amy Reichert. The title confection indeed is the catalyst in two sets of crossed paths – chef & boyfriend, chef & food critic – potentially closing one door and opening another. As with most romantic journeys, fictional and otherwise, there is a bump in the terrain but this one is more like a volcano, and that makes us gobble up the pages, anticipating that pivotal moment when it will inevitably erupt. It’s 4 1/2 stars on Amazon, multiple formats.       So in an episode of DDD on Food Network, an ingredient called tare was used. Eh? Turns out it’s a flavor-packed Asian sauce with multiple applications. Did not find it in local stores. Make your own? Google. Shortcut? Amazon.

   Slow Cooker Pot Roast

This just seems like a dish slow cookers were made for. Potatoes, carrots and onions cook right along with the roast while a splash of wooster adds its own layer of flavor, all joined in the last hour of cooking by some fresh herbs. The directions call for shredding rather than slicing, but guessing the roast ends up so fall-apart that would probably be the only option.  From Tasty

Whether you’re playing bridge or other card or board games, watching tv, working on your laptop, whatever, this makes the candy more handy. All the usual suspects are there with two kinds of melty chocolate taking care of biz by binding them together and then topping them off.  From Food Network

Preps for Cheddar Lovers

They had me at the first one, cheddar scallion biscuits, with a bonus in the form of baking the biscuits on top of a whole bunch more cheddar, creating a frico effect. But it does go on, to other breads, burger, soups, Mex dishes, 10 in all. From Food & Wine

  Apple Buttermilk Loaves

The richness of buttermilk paired with the natural sweetness of Golden Delicious apples, further boosted by brown sugar, yields this delectable looking loaf. Nuts and vanilla make their tasty contributions too, along with the unexpected tang of grated orange peel. And here’s a whole bunch of them just waiting to be invited eyour kitchen. Among the choices, Enchilada deep dishes & other Mex, Lasagnas & other Italian faves, Cajun & Creole specialties, chicken & biscuit cobbler, Tamale pie mix-up, Sloppy Joes skipping the bun and going deep dish with some mac, side dishes too.    Cocktail Hour Buzz   

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

  This zingy snack can lead more than one life. In a med size bowl, beat 4 eggs, then add 2 slices crisp crumbled bacon, 1/3 cup pepperoncini coarsely chopped, 3/4 c shredded cheddar, 1/4 c shredded parm. Bake 375 until set, about 15 min. Sprinkle with parsley and cut into squares. Revisit sautéed in butter for breakfast, or joined by veggies for lunch or brunch.

  Thanks to Food and Wine for gathering these “22 Fall Cocktails to Try This Season.” And they sure do look and sound good. Such possible household staples as hard cider, apple brandy, honey, pears, figs, brown sugar, nutmeg, cinnamon, and cloves pour autumn right into your glass.

  Caramel Bourbon Brownie Cookies   There’s a title that catches the eye. And it doesn’t even touch on the cocoa, chocolate chips and walnuts that also go into these treats described as chewy and chocolately with  a hint of spice. Includes some nice ideas too for any leftover caramel sauce. Video and step by step demo. From SideChef.

  Cubano Burger   Everything you love in a Cubano sandwich piled onto a well seasoned ground pork burger, all tucked into a brioche bun. Yum. From Tastemade.

  Loaded Vegetarian Nachos   Show of hands for renaming these Fiesta Nachos, because just look at that celebration of colors, flavors and textures all on one plate. More ingredients than we usually feature but so worth it and you actually could if you want limit the toppings. One shortcut that I used was canned lentils, still stirring in all the seasonings. ♦  Eggs in a Cloud   The same folks bring us a prep that is pure fun. And, oh yeah, there’s bacon in there too, plus chives if you like, mixed into the whipped whites, baked for 3 min to emerge with golden crests. Then the yolks are plopped into these nests, a bit more baking and out comes a whimsical breakfast. A big bonus is the wacky hack you’ll see in the demo for separating out the yolks. From Tasty.

  Chili Relleno Casserole   The creator of this prep calls the dish very easy to prepare and loaded with flavor. Reviewers agree, giving it 4+ stars. It starts with canned whole green chile peppers that are stuffed with both jack and cheddar, treated to a pour-over of eggs, evaporated milk and flour, then baked. The recipe calls for topping with canned tomato sauce, but I’m thinking taco sauce could be interesting. From AllRecipes.

  Mini Cheesecakes with Melty Chocolate and Strawberry Hearts   Make any day Valentine’s Day with a dessert that’s as simple as it is elegant. Decadence checks in too with its buttery graham cracker crust, rich filling, and perfect toppings. Note that you want to make them a day ahead to then decorate them after an overnight stay in the fridge. Credited to Christina Lane at Food Network Kitchen
