♦♦♦  I was so happy to find Molly Yeh’s technique for filling roll-ups that makes the process so much easier. By spreading the ingredients on dough and then cutting wedges to be rolled, all the filling is done at once and distributed evenly vs parceling out individually for each piece. In her prep & demo, which we featured in our 03.25.22 Salon, the roll-up was spinach and feta on pie dough. We decided to go brunchy {and no-cook} with smoked salmon, onion & chive cream cheese, red onion, capers, and a sprinkling of dillweed on a slightly softened burrito size tortilla.  CS

Tip: It’s a good idea to do this as close as possible to service so the tortilla stays dry

♦♦♦   That sunshiny brightness, the tongue-tickling bubbles, the graceful glasses, all make Champagne and orange juice a pluperfect brunch choice. But turns out even here, pairing counts. While “from scratch” is always so good, Pillsbury offers this refrigerated biscuit version . . .

♦♦♦  You just never know where you might come across a recipe, let alone one with a past – in this case giving us the opportunity to dress up our brunch table with a famous salad. The source here is Sharon Gless’ memoir, an Amazon Editors’ Pick, where among other revelations we discover that her maternal grandfather, Neil McCarthy, a high-powered entertainment attorney for top Hollywood luminaries of the times {think Howard Hughes, Lana Turner, Katherine Hepburn, Ava Gardner, et al}, had a salad named after him at the Polo Lounge, a sort of re-imagined Cobb, where it remains on the menu to this day. For these individual servings you’ll want to dice everything extra small – also you can either layer the foods as shown on the right, or blend them, left, as is often done with Cobbs, either one then with levels of dressing.

♦♦♦  I’m guessing many of us have made roll-up appetizers. Crescent rolls, wonton wrappers, and puff pastry are all good for this purpose. But Molly Yeh has a different take, a welcome technique that takes care of all the filling at once, and apportions it equally. Yes! ♦♦♦   Five main claims to fame define this new line of mixers – clean ingredients only, lowered calories, light and refreshing taste, crafted in the USA. And the 5th biggie? These Betty Buzz mixers are the creation of actress Blake Lively, and come to us as tonic water, sparkling lemon lime, Meyer lemon club soda, sparkling grapefruit, and ginger beer. ♦♦♦   So, in a previous Salon we talked about making grilled cheese variations and cutting them party-size for the snack table. Here’s one we all may not have thought about. It’s Ree Drummond’s French Onion Grilled Cheese. Yowsie is this a stack-up of goodness, with onions x 3, cheese x 2, butter x 2, a blast of Dijon plus a touch of thyme. And since I didn’t have the fried onions, I substituted diced and crisped leftover onion rings. Yum.

Btw, instead of scattering the cheese shreds on the sandwich, I melted them right into the cooked onions and then formed it all into two bread shapes.

♦♦♦  So, what about snacks when cocktail hour is at 35,000 feet ? Of course you can just pair your beverage with a Lilliputian bag of peanuts. Or you can bring along a taste of home . . . literally . . . twice. With these 17 Best Travel Snacks – packaged treats mostly but as well cheese and even a frozen item – that it says here are TSA-approved. And they likely are since the general rule for both checked and carry on bags is – solid food yes, liquids and gels no.  🥨  Taste of Home

♦♦♦  Call up the Bloody Marys, Mimosa, and/or Champagne. Because have we got a brunch dish for you. Cheesy Bacon Bread Pudding. And once you’ve cubed the bread, the rest is a breeze. Two things to note. The prep calls for 45 minutes of baking, but you’re going to want to start checking it at 35. Second, those dark elements in my pudding may look like sausage, but actually some rye bread I folded in. Though sausage would be good as would ham.  I did use extra cheese in the mix and on top.  FramedCooks

This is 9″ x 13″ of goodness that may well have leftovers and that lets me segue to sharing my favorite container storage system. I’ve had mine for years, and it’s held up beautifully – compact, easy to access, three sizes and the lids, hooray, fit all of them. Four stars, Prime eligible . . .

♦♦♦  Intrigue! Did you know the kitchenware in your cabinets and drawers can lead a secret life as artist’s tools, with food as the medium? But it’s all good because this is pure fun. Call up the baking rack, hand mixer, rolling pin, melon baller, slotted spoon, even a fork, and move on to the pans and bowls and, yep, even bubble wrap. ♦♦♦   Fried chicken that isn’t fried? Well, more specifically it’s Oven Fried Chicken. And it’s darn good, lots of flavor going on. For my treatment, I cut thick slices of skinless, boneless chicken breast – perfect for Happy Hour. I didn’t have corn flakes at the time, so crushed up the corn snack, Bugles, and that worked out just fine. This Mary Berg prep features an accompanying recipe for spicy honey slaw.  Food Network

♦♦♦  Finally, we can just about stand on tippytoes and see Spring. And Bobby Flay has a fabulous way to toast its arrival – with his Mojito Limeade. ♦♦♦  This magazine world guru has spoken. And the word is, these are the “Best Pinot Grigios and Pinot Gris to Buy Right Now.” Happily the story goes even beyond the recommendations to talk about the fact that though both come from the same grape and have similarities, there are also some nuanced differences in style. Pairing ideas too for each.  Food & Wine

♦♦♦  These bars not only stand up to being cut up into candy size pieces – they pretty much are candy. Favorite Chocolate Caramel Nut Bars. The fact that it starts with German Chocolate cake mix sure doesn’t hurt. Commenters loved the taste, ease of prep, and travel-worthiness, adding up a 5-star rating. ♦♦♦   If you like sauerkraut and corned beef, just wait till you see how they come together in an Irish-esque appetizer. The title ingredients cozy up to sour cream, garlic, and a whole bunch of tasty seasonings in this Sauerkraut Corned Beef Dip. Serve with rye or pumpernickel cocktail bread of crackers, maybe rye crackers. Commenters are pretty uniform in praise of, easy recipe, great taste, also noting the rapid disappearing act it seems to perform every time. ♦♦♦  On Food Network, Giada just mentioned how much she loves having a party in the kitchen, which made me recall how many times my get-togethers indeed ended up right there. Yours too? Now I already have decorations in the kitchen, colorful trivets, a small poster, a large artsy cookbook atop the fridge, a “Barbara’s Kitchen” sign. But wowsie, wait till you see the fabulous kitchen decor, 4 star & up we all could add. Prints, plaques, painted cutting boards, hanging baskets, key holders, themed clocks, sculptures, fanciful wall decor galore. I particularly like these pretty Mason jar sconces.  Amazon

♦♦♦  Move over cheeseboard. Well, as it turns out, not entirely. But the thing is, mushrooms are the star of this show. They repose in a tasty marinade center stage, go all season-y atop goat cheese crostini, and join some colorful veggies on skewers. Filling out this Mushroom Grazing Board are olives, deli meats, hummus, cukes, crackers and, yes, cheese. As always, of course, you can add your own creative touch to the mix. ♦♦♦  Does it make you kind of want to head for the kitchen just hearing about a recipe for Pizza Tots??? This one starts with 3 1/2 cups hash browns, seasoned, and eggy-ed up to create a moldable consistency. Small handfuls are then shaped around mozzarella and pepperoni, briefly frozen, then fried and served with marinara of your choice. Yum. Demo too.  Tasty

I found online that 3 1/2 c = 1 lb hash browns, but all the packages I saw were larger than that. No worries about leftover taters though . . .

♦♦♦  Here’s another dessert bar that’s sturdy enough to be cut to candy-size, especially if right out of the fridge. These Apple & Brown Butter Blondies can add a nice, sweet touch to the Happy Hour table. The mixer does most of the work, with the apple cutting being the only part that needs a bit of time – may experiment next time with apple pie filling or something else I found called fried apples. Meanwhile, may I add, these are really good.  AllRecipes

So, the recipe I used was is the AR magazine, but the link shown on their page {and now above} went to a slightly different title, and slightly different prep, with the most notable changes being the handling of the butter & the number of apples. I’ve posted the mag version on our Recipe Page.

♦♦♦  The good news – cocktail kits abound. The bad news – cocktail kits abound. There are soooooo many of them available, but good news checks in again because you can filter the results by price, rating, discounts and more. ♦♦♦  Lots of folks want their bourbon straight, some possibly inviting in a few ice cubes. But it can also be neat {sorry} to mix that spirit into tasty cocktails. Let’s not though take seriously “26 Bourbon Cocktails to Make Tonight” starting instead perhaps with one or two. Shopping FindsI just finished a truly pleasant read. Pamela Kelley’s tale of three sisters brought together inside “The Restaurant,” is a love story x 3, revealed by some gems excavated along the way – their Gram’s love secret behind the secret, the subplot for pet lovers, and love of comfort food, including a fish technique. Make that four when you add in the gentle love between the sisters who’ve lived apart for such a long time. Multiple formats, 4 stars on Amazon.   Which salsa to buy? This salsa taste test by MyRecipes gives you the scoop. Most should be at your market, but if not or you just want it delivered to your doorstep there’s a large selection on Amazon.

Really? Well let’s take a look. Cream cheese stands in for ricotta. Chocolate pudding replaces Italian sauce. And admittedly a stretch, chocolate chips top it all instead of Parm. Bake Sale Winning-est Gooey Oat Bars

Oh CS-ers, these are good. The tender buttery crust is just the tasty start. After baked golden it’s spread with a filling reminiscent of pecan pie but instead of nuts a mix of coconut and other sweet treat goodies, in the case of ours here – chocolate chips, dates, and raisins. Then a final flurry of powdered sugar makes it pretty. As with many baked goods, even better the next day.  From Food Network

Butter Chicken

That star ingredient is magnetic enough, but then add in the wave after wave of flavor contributed by fragrant, maybe even exotic, Indian seasonings. And even so, chances are many of them are already in your pantry and fridge, like onion, garlic, yogurt, brown sugar, canned tomatoes.    Say what? Doing shots after the entree{s}? Turns out it’s a French tradition known as a trou normand. And it’s quite an interesting concept. The link takes you to a story on MyRecipes that pours out the whole story, the what and the why – and what the heck that term even means.

   If you can still find a Oct/Nov 2021 copy of Taste of Home, among the other always fine food features you’ll find one entitled “Wisecrackers,” {sorry could not find a link}, with a “Tasty Ten” ways of dressing up a basic or fancy cracker. Just some of the ideas, Apple butter, white cheddar, pear and sliced toasted almonds. Hummus, green & black olives, garlic, feta, and a drizzle of olive oil. Queso fresco, shredded pork, salsa and jalapeno.

Can’t find it? Just start with any crackers you have and look upon them as blank canvases, just waiting to be turned into little works of art with the help of your fridge and pantry.

  Nothing wrong with some mini desserts on the snack table. Like these! Chocolate Peppermint Cheesecake Bites, from AllRecipes. Great holiday flavor. And easy to make right in your muffin tin.

Kitchen Talk – Dennis Weaver at Prepared Pantry, where all your baking shortcut dreams come true, notes in his recent newsletter that he uses cream cheese as a stabilizer for whipped cream, making it “taste like cheesecake.” He starts with softened cream cheese, whips in the sugar till smooth, then the heavy cream.      Did you know this? If a recipe for the air fryer calls for treating the food with oil spray, it really means oil spray, not cooking spray. Apparently the aerosol agents in the latter can damage the coating on the basket. I found it at my market, but of course Amazon has it too, and in a number of different varieties.

Shopping Finds –  The tale that unfolds is foreshadowed in “The Coincidence of Coconut Cake” by Amy Reichert. The title confection indeed is the catalyst in two sets of crossed paths – chef & boyfriend, chef & food critic – potentially closing one door and opening another. As with most romantic journeys, fictional and otherwise, there is a bump in the terrain but this one is more like a volcano, and that makes us gobble up the pages, anticipating that pivotal moment when it will inevitably erupt. It’s 4 1/2 stars on Amazon, multiple formats.       So in an episode of DDD on Food Network, an ingredient called tare was used. Eh? Turns out it’s a flavor-packed Asian sauce with multiple applications. Did not find it in local stores. Make your own? Google. Shortcut? Amazon.

   Slow Cooker Pot Roast

This just seems like a dish slow cookers were made for. Potatoes, carrots and onions cook right along with the roast while a splash of wooster adds its own layer of flavor, all joined in the last hour of cooking by some fresh herbs. The directions call for shredding rather than slicing, but guessing the roast ends up so fall-apart that would probably be the only option.  From Tasty

  This zingy snack can lead more than one life. In a med size bowl, beat 4 eggs, then add 2 slices crisp crumbled bacon, 1/3 cup pepperoncini coarsely chopped, 3/4 c shredded cheddar, 1/4 c shredded parm. Bake 375 until set, about 15 min. Sprinkle with parsley and cut into squares. Revisit sautéed in butter for breakfast, or joined by veggies for lunch or brunch.

  Thanks to Food and Wine for gathering these “22 Fall Cocktails to Try This Season.” And they sure do look and sound good. Such possible household staples as hard cider, apple brandy, honey, pears, figs, brown sugar, nutmeg, cinnamon, and cloves pour autumn right into your glass.

Kitchen Talk – Though Prepared Pantry sells mixes and other baking necessities, owner Dennis Weaver is quite generous with posting even recipes that don’t require those goods. And this one, for the classic cheesy brunch dish, is a keeper. How to Make Any Quiche You Can Imagine shows us a basic prep and tips, then one for the classic Lorraine, variations, and then helpful resources.        Need to peel tomatoes? Here’s what I did as an alternative to the dip in boiling water, wait to cool, method. Halved the matoes and placed them cut side down on a plate, covered with a paper towel, nuked for 1 min. Depending on their size may take less or more time. Cooled quick, peeled easy as you can see on the front one.        If, as many do, you believe food can be medicine, this list is for you. Foods that can clear arteries, on google.

Shopping Finds – A name we’ve trusted for years has published a new cookbook with a title that can warm the hearts of all Cs-ers. Easy Meal Prep by Good Housekeeping offers preps developed by their test kitchen chefs, “using their best time-saving, flavor building wisdom combined with their genius plan-ahead tips and tricks.”        When a recipe calls for a certain amount of an item – meat, fish, taters, or even ingredients in some baking preps that go by weight rather than volume – you can always get it just right with a kitchen scale. I use mine {shown, an “Amazon’s Choice”} quite a bit, more than I expected. Nice that they’re quite inexpensive on Amazon, some with discounts or coupons. The photo link goes to that product, and the blue link goes to scales that are 4 stars and up.

   On the Table  

Feature – Bloody Mary Gazpacho with Shrimp, snack & cocktail all in one!

We’ve seen a lot of recipes for gazpacho flavored bloody marys, but loved coming across this more substantial reversal. We can thank Adam Richman,  known for Man v Food, The Food That Built America, and Modern Marvels, but here showing us how this is done on the Today Show.

Richman remixes all the best flavors of both and then adds the tasty bonus of flavorful shrimp. In sum, pretty much snack squared.

Now in his intro he notes the novel notion of stirring vodka into soup, but then the prep doesn’t really include this, though it is in the shrimp marinade. Of course if the chef isn’t looking you could certainly tip a bit of the spirit into the gazpacho anyway.

Many layers of flavor going on here, and especially love the add-in of olive juice and the generous hand with the hot sauce. Fun to serve by the cup for happy hour, or upgrade to a bowl for lunch or dinner.

Recipe Notes – I pureed only half of the vegetables and left the rest diced, which created a juicier consistency. And if you do that might want to make spoons available, and as well some crusty toast for dipping into those juices. Also, when the shrimp were pretty much done I turned up the heat just long enough to create a nice char.

And now I’m wondering something else – how it would work to pull out some of the center of each baked roll {wait, don’t toss, save for a snack} and tuck the marshmallow half down inside. Or . . . just do it as specified. 😁

Alexa says request: How do I make 40 garlic clove chicken?  Let’s set aside the fear right here. You don’t have to peel them! Nope, the cloves cook along with other ingredients to flavor browned chicken thighs and then emerge ready to pop out and be scooped onto crusty bread. This dish is from Tasty and there’s a demo too.

Alexa says request: How do I make peach caprese salad with balsamic cherries ? Is this the perfect warm weather salad or what? Fresh peaches stand in for the usual tomatoes, but mozzarella and fresh basil are still checking in. And then there are the cherries, yummed up with not only the balsamic but as well olive oil, shallots, s&p. And as a bonus, this Katie Lee medley on Food Network is quite pretty.

Kitchen Talk – So, in a recent rerun of The Kitchen on Food Network, Katie Lee went full-on Thanksgiving with a Fall Meatloaf that mashed up ground turkey, stuffing mix, celery, onion, and a cranberry mix that goes both into and atop the loaf. Hmmm, I wondered, how might a version of this work for turkeyburgers. Answer: pretty good, if a wee crumbly, at least as I made it – 1 lb gr turkey, 1 c stuffing mix, 1 egg, s&p – but really good!      One of our favorite words at CS joins with the season in 36 Comforting Spring Casseroles, from Southern Living   She says she’s been sautéing mushrooms wrong her whole life. You too? Me too? Anyway, the fix actually turns out to be as simple as can be. Here’s the mushroom solution from the Takeout site.

Shopping Finds – Have you tried this? Petit Pot dark chocolate French pudding. They may call it pudding but it’s more like dense mousse meets the candy called French cremes. Their site shows we can also be tempted by vanilla bean, salted caramel, CA lemon, and rice pudding, and helpfully offers suggested pairings for each. There’s also a store locator on the page.      You know what I think adds to the charm of this tasty confection – the adorable little 3″ jars. And guess what. You can find your very own to cradle any of your own desserts. Btw if you scroll down on the Amazon page you will see other sizes, shapes and quantities.

Feature – Caramelized Pineapple Slices, with 3 ways to do the creamy topping

How much good stuff applies here, let us count the ways. Five ingredients. Prep time 15 minutes. To table 25 minutes. Toasted coconut. Creamy. Caramelized. Pineapple. CS shortcuts & tips.

Pineapple topped with cottage cheese, or vice versa, is a diner staple. The simple act of caramelizing the pineapple slices and then topping the whole affair with golden coconut elevates it to company-worthy status.

Now I can almost hear some noses wrinkling at the mention of cottage cheese, and the fact is while I enjoy the taste I don’t consider the texture a bff. So I did just what I’ve done before – blend till it’s nice and smooth. Now you could substitute sour cream, but that little bit of cheese saltiness kicks up the other flavors.

The prep comes from Daisy and no, no affiliation with them, but I do like their sour cream, and for this dish did indeed use their cottage cheese. Their site features a number of fine recipes using the two products.

Recipe Notes – I used store-bought pineapple slices, not only for the convenience but as well because I prefer fresh pineapple in its pure state. I do wonder if store-bought caramel topping could work, especially the tub kind which is a little sturdier than the jarred ones. Here though I really liked the brown sugar component and actually made extra. I would not skip toasting the coconut, really adds a nice texture and takes only a few minutes {with careful watching though}.

Alexa says request: How do I make Philly Cheesesteak Pull-Apart Bread? May I suggest that you use this link on Food Network to just look at this ever so appealing dish for breakfast, brunch, lunch or even snack table. All the right ingredients are right in there but in a whole new fun way. From Trisha Yearwood who we’ve seen is just the best at playing with food.

Alexa says request: How do I make coconut shrimp? The thing about any prep from Serious Eats is that you can be sure it’s been well researched to deliver the best possible version. And sure enough their recipe rated a solid five stars. While the shrimp part is nice enough, quite simple, I’m thinking maybe a contributor to those kudos was the sweet and sour and spicy and salty chili sauce accompaniment.

My request: Do you have a recipe for chicken curry served over French fries? Truth be told, I did not expect to find anything, even with Alexa’s vast resources. The request stemmed from a long ago but fondly recalled dinner at a British pub here in town that offered their chicken curry on rice or fries. Whaaaat? Ordered the fries of course and it was a revelation for the palate. Whatever brought it back to mind, wondered if this was an aberration or a real thing. Ha! The latter! See it here.   CS Tasting Panel member Layne Whiteman adds a savory dimension to cocktail hour phone or video chat visits. Snacks! So both people, or however many folks are on the call, each then have a nibble of choice along with the beverage of choice. Makes it even more like an in-person Happy Hour. Btw, if you’re now having more actual visits, this is still a great way to party on with out-of-town family and friends.  Love it, Layne!

  I like to do a kind of snack storm. Shake up all kinds of goodies in my snack jar, always a little different with each handful and each refill. This particular one merges Chex Buffalo Ranch Mix, already a medley, plus Caesar flavor pea snacks, Cheez-it Double Cheese Snap’d, dilled almonds, Butter Toffee Coconut Peanuts, and for a touch of sweetness, Hazelnut Cocoa Pillows cereal. This a great way to use up partial bags, though of course you can also start with all fresh stuff . . . or, mix it up.

  Food & Wine brings us news from Haus, a company they report in 2019 started producing wine-based aperitifs. In the story they go on to talk about how these drinks have become popular among those who like low-alcohol cocktails. The news? The newest flavor – grapefruit jalapeno which sounds like a really nice spring sip.
