♦♦♦  So we did a different version of last week’s breakfast pizza boats, using hollowed out bolillos instead of pizza dough.  I first layered a mozzarella and cheddar mix, then some marinara along with garlic salt and Italian seasoning, then pepperoni, then topped with more cheese mix. Into the toaster oven at 375 just until the cheese melted and the roll had crisped a bit. Check after 2-3 minutes. Meanwhile cook the eggs. For an evening version I used the same idea, just replacing the pepperoni with Italian sausage cooked with onion and green pepper, skipping the egg, and cutting into snack size pieces. Btw, used lots of cheese so they’re nice and sturdy{or, any excuse will do}.  CS

You could certainly substitute any boat-y shaped rolls for the bolillos, say sandwich or hoagie rolls. Or go round and just don’t call them boats. Rafts maybe. 😁

Pizza cookbooks, 4 stars & up

♦♦♦  Could this be among summer’s most refreshing drinks? Maybe you’ve already heard of a Shandy? I had not, but now know it’s basically beer, lemonade and fresh lemon, and has British origins. What I like about the linked one above is that it gives you the classic prep including what beers are generally used, and then five international variations. Any I think would be happy beside those pizza boats. Cheers!  thekitchn

♦♦♦  The loaded tater casserole we featured in our 05.20.22 Salon is not only a crowd pleaser but also a crowd filler which is to say it makes A LOT. And, turned into extra flavorful potato pancakes, based on your own recipe or one of those in the link below. ♦♦♦  So, here we have a creative cook’s shortcut turning into a crowd favorite. Instead of individual poppers, all the goodies join forces in “Ryan’s Reverse Popper Dip.” Wowsie, this is good. And I personally applaud a prep that calls for even more garlic than onion. The recipe did not mention a tomato garnish, but since the pic seems to show that I added it too.  AllRecipes

♦♦♦  Call up the Bloody Marys, Mimosa, and/or Champagne. Because have we got a brunch dish for you. Cheesy Bacon Bread Pudding. And once you’ve cubed the bread, the rest is a breeze. Two things to note. The prep calls for 45 minutes of baking, but you’re going to want to start checking it at 35. Second, those dark elements in my pudding may look like sausage, but actually some rye bread I folded in. Though sausage would be good as would ham.  I did use extra cheese in the mix and on top.  FramedCooks

This is 9″ x 13″ of goodness that may well have leftovers and that lets me segue to sharing my favorite container storage system. I’ve had mine for years, and it’s held up beautifully – compact, easy to access, three sizes and the lids, hooray, fit all of them. Four stars, Prime eligible . . .

♦♦♦  Intrigue! Did you know the kitchenware in your cabinets and drawers can lead a secret life as artist’s tools, with food as the medium? But it’s all good because this is pure fun. Call up the baking rack, hand mixer, rolling pin, melon baller, slotted spoon, even a fork, and move on to the pans and bowls and, yep, even bubble wrap. ♦♦♦   Fried chicken that isn’t fried? Well, more specifically it’s Oven Fried Chicken. And it’s darn good, lots of flavor going on. For my treatment, I cut thick slices of skinless, boneless chicken breast – perfect for Happy Hour. I didn’t have corn flakes at the time, so crushed up the corn snack, Bugles, and that worked out just fine. This Mary Berg prep features an accompanying recipe for spicy honey slaw.  Food Network

Kitchen Talk – Pssssst, Pistou. What a wonderful little find in the NYT Bread & Soup Cookbook we mentioned in the 10.01.21 Salon. It says a tablespoon of this distinctive paste will enliven almost any soup {and more, as with pesto}. To make it, boil 4 slices of bacon in a cup of water for 3 min, drain, chop. Blend with 2 egg yolks, 2 cloves garlic & 1 t dried basil until all ingredients are pureed. Pour into a bowl, stir in 6T on Parmesan & 1 t olive oil. Done.     So looking at the tasty stuff in Pistou, I started thinking it could morph into other apps. Here, I used already-fried bacon, left out the eggs, added enough extra oil until it to started to hold together, and pressed it onto hot toast.    Fancy some fancy butter? Shopping Finds – One of the best toys/tools ever, and yay inexpensive too. As you can see here, an offset spatula is just what is sounds like, zagged down from the handle so you can easily smooth out, e.g., tomato sauce, cheese mixtures, cake batter, pie fillings, and more and more. At your market or on Amazon.      So, I have an 8 oz pkg of xanthan gum to make King Arthur flour’s recipe for gluten free bread, but that needs only 1 1/4 t. What to do with the rest? Google has some great ideas regarding thickening gravy, sauces, salad dressings and more. The bread recipe is on that page too. Amazon just in case you can’t find it in the store. I bought the Amazon’s Choice one, shown.

It doesn’t have to be this way, does it? Yes, it is my stuff, but more than the sale I hope in some small way we can send the message that we’d like better manners, more civility. Best Grilled Cheese Ever

If you look on Google you’ll see that others also stake this claim to fame. This one may be among those that deliver. Ree Drummond includes roasted peppers, red onion, tomato and two kinds of cheese, all sparked up with Dijon. The recipe calls for just rye but the pic shows the more interesting marble rye {am I the only one picturing a white haired lady running like the dickens}.  From Food Network

Chicken-Tortilla Casserole

Love chicken tortilla soup? This prep promises to simulate that taste, but put it on a plate . . . with lots of cheese. With an ingredient list that also includes diced tomatoes & chilies, beans & corn, and Mexi flavors, it sure does sound tasty. And you know what – it is! Easy too, as you simply combine, cover with jack cheese {we added cheddar too}, and bake until the top is golden brown, and then garnish each serving.  From Southern Living

Caramelized Banana Bourbon Bread Pudding

Every word in that title is a winner. But wait, there’s more. Chocolate, cream, spices, and not one but two kinds of bread. The last line of the directions reads like a promise: “The bread pudding should have a nice caramelized crust and a moist (not wet or dry) interior.”  From Tastemade

Sunny’s Red Beans & Rice

This is almost always a full flavored dish, but the one Sunny Anderson made on tv just looked so extra appealing, I had to try it myself. May have been influenced by Katie Lee’s reaction, clearly smitten with the New Orleans treat that she called so comforting. What may well be the ruling ingredient here is the smoked ham hock. Now this may be a culinary violation but I piled some of the leftovers on cheese grits. Southern meets Southern!  On Food Network

Best Cookie Recipes

Well likely makes you wanna look. Once you look, likely wanna make. And maybe more than once, or as the title on the page says, cookies to “put on repeat.” Here are a few that caught my eye – butter cookies with clove sugar, candy cookies, butterscotch chocolate sandwich cookies, chocolate chip cookie in a mug, peanut butter breakfast cookies.  From Food & Wine

   Nice to see that Food & Wine doesn’t mind crashing through its titular walls. Well, to be fair, there is food involved – pickles to be exact. What makes a headline is that these pickles seem to be even more definitively pickled. And that’s because they are gin-flavored. No real gin, but all the botanicals of Hendrick’s Gin is right there in the jar. This ginny pickle would be a great conversation piece for the snack table {but maybe stop short of plopping it in the tini}.

  Truth be told I’m pretty much a purist when it comes to deviled eggs, but the gussied up ones that we featured in last week’s Salon looked pretty darn good. And you know what, they are!. Given the number of eggs, I decided a bit more bacon wouldn’t hurt, with even more for garnish. These cheddar bacon deviled eggs are from AllRecipes.

  Want to use fresh coconut water in your drinks? Want to serve your drinks in coconut shells? The first trick is getting the darn thing open. It was actually Alexa {see you next week!} who directed us to Wikihow for these 3 ways to open a coconut.

Kitchen Talk – Dennis Weaver at Prepared Pantry, where all your baking shortcut dreams come true, notes in his recent newsletter that he uses cream cheese as a stabilizer for whipped cream, making it “taste like cheesecake.” He starts with softened cream cheese, whips in the sugar till smooth, then the heavy cream.      Did you know this? If a recipe for the air fryer calls for treating the food with oil spray, it really means oil spray, not cooking spray. Apparently the aerosol agents in the latter can damage the coating on the basket. I found it at my market, but of course Amazon has it too, and in a number of different varieties.

Shopping Finds –  The tale that unfolds is foreshadowed in “The Coincidence of Coconut Cake” by Amy Reichert. The title confection indeed is the catalyst in two sets of crossed paths – chef & boyfriend, chef & food critic – potentially closing one door and opening another. As with most romantic journeys, fictional and otherwise, there is a bump in the terrain but this one is more like a volcano, and that makes us gobble up the pages, anticipating that pivotal moment when it will inevitably erupt. It’s 4 1/2 stars on Amazon, multiple formats.       So in an episode of DDD on Food Network, an ingredient called tare was used. Eh? Turns out it’s a flavor-packed Asian sauce with multiple applications. Did not find it in local stores. Make your own? Google. Shortcut? Amazon.

This just seems like a dish slow cookers were made for. Potatoes, carrots and onions cook right along with the roast while a splash of wooster adds its own layer of flavor, all joined in the last hour of cooking by some fresh herbs. The directions call for shredding rather than slicing, but guessing the roast ends up so fall-apart that would probably be the only option.  From Tasty

Preps for Cheddar Lovers

They had me at the first one, cheddar scallion biscuits, with a bonus in the form of baking the biscuits on top of a whole bunch more cheddar, creating a frico effect. But it does go on, to other breads, burger, soups, Mex dishes, 10 in all. From Food & Wine

  Apple Buttermilk Loaves

The richness of buttermilk paired with the natural sweetness of Golden Delicious apples, further boosted by brown sugar, yields this delectable looking loaf. Nuts and vanilla make their tasty contributions too, along with the unexpected tang of grated orange peel. And here’s a whole bunch of them just waiting to be invited eyour kitchen. Among the choices, Enchilada deep dishes & other Mex, Lasagnas & other Italian faves, Cajun & Creole specialties, chicken & biscuit cobbler, Tamale pie mix-up, Sloppy Joes skipping the bun and going deep dish with some mac, side dishes too.   This zingy snack can lead more than one life. In a med size bowl, beat 4 eggs, then add 2 slices crisp crumbled bacon, 1/3 cup pepperoncini coarsely chopped, 3/4 c shredded cheddar, 1/4 c shredded parm. Bake 375 until set, about 15 min. Sprinkle with parsley and cut into squares. Revisit sautéed in butter for breakfast, or joined by veggies for lunch or brunch.

  Thanks to Food and Wine for gathering these “22 Fall Cocktails to Try This Season.” And they sure do look and sound good. Such possible household staples as hard cider, apple brandy, honey, pears, figs, brown sugar, nutmeg, cinnamon, and cloves pour autumn right into your glass.

♦  You could actually set this up like a caffeinated version of a bloody mary bar. All you need is a full urn, some cream, and the spirits that are front and center in these “7 Delicious Ways to Spike Your Coffee.” Also from Food & Wine.

  Caramel Bourbon Brownie Cookies   There’s a title that catches the eye. And it doesn’t even touch on the cocoa, chocolate chips and walnuts that also go into these treats described as chewy and chocolately with  a hint of spice. Includes some nice ideas too for any leftover caramel sauce. Video and step by step demo. From SideChef.

  Cubano Burger   Everything you love in a Cubano sandwich piled onto a well seasoned ground pork burger, all tucked into a brioche bun. Yum. From Tastemade.

  Loaded Vegetarian Nachos   Show of hands for renaming these Fiesta Nachos, because just look at that celebration of colors, flavors and textures all on one plate. More ingredients than we usually feature but so worth it and you actually could if you want limit the toppings. One shortcut that I used was canned lentils, still stirring in all the seasonings. ♦  Eggs in a Cloud   The same folks bring us a prep that is pure fun. And, oh yeah, there’s bacon in there too, plus chives if you like, mixed into the whipped whites, baked for 3 min to emerge with golden crests. Then the yolks are plopped into these nests, a bit more baking and out comes a whimsical breakfast. A big bonus is the wacky hack you’ll see in the demo for separating out the yolks. From Tasty.

  Chili Relleno Casserole   The creator of this prep calls the dish very easy to prepare and loaded with flavor. Reviewers agree, giving it 4+ stars. It starts with canned whole green chile peppers that are stuffed with both jack and cheddar, treated to a pour-over of eggs, evaporated milk and flour, then baked. The recipe calls for topping with canned tomato sauce, but I’m thinking taco sauce could be interesting. From AllRecipes.

  Mini Cheesecakes with Melty Chocolate and Strawberry Hearts   Make any day Valentine’s Day with a dessert that’s as simple as it is elegant. Decadence checks in too with its buttery graham cracker crust, rich filling, and perfect toppings. Kitchen Talk – Southern Living shares great ways to start the day with their Breakfast Casseroles Worth Waking Up For. Scroll down on their page for such casserole versions as Cheesy Sausage Croissant, Banana Bread French Toast, Bacon & Cheddar Grits Quiche, Cinnamon Roll, Huevos Ranchero, and Breakfast Enchiladas.        When is an egg carton not an egg carton? When it transforms into a holder to portion and preserve rice. Here’s what I did – treated the compartments with non stick spray, filled all 24 with rice, covered the top tray with a cut-to-fit piece of plastic wrap, holding the wrap in place turned top over bottom, closed up and into the freezer. As you can see, when you subsequently open the carton, most of the top portions pop out on their own {you can just close the top back over them after removing what you want}, and if they don’t just push on the bottom of the sections. Where the two have been removed you can see the shininess of the plastic wrap.       Chocolate in, chocolate on, and a pistachio chaser in this Chocolate Pistachio Wreath Bread that the description calls ooey gooey. Shopping Finds – Have you heard of goldbelly.com? I hadn’t until recently when I started coming across it as the ordering source for various food items. What it does is connect you to restaurant food via mail order. That means you can set your table with specialties from, e.g., Marcus Samuelsson, Daniel Boulud, Stephanie Izard, Guy Fieri, Carla Hall, as well as from steakhouses, ethnic places, bbq joints, and more, more, more. They also show you the reviews behind their 4.7 star rating.        So, I’ve now excavated a KitchenAid stand mixer from the back of a cabinet. I’d inherited it, never used, but now ready to give it a go. If you have one in hiding or are thinking of buying one, their cookbook can be a BIG help, with not just preps but also tips and techniques. Feature – Super tasty dip – and the flashes?

First surprise or did you already know this? Until it was revealed actually in a commercial I had no idea that Amy in Big Bang Theory not only plays a neuroscientist – she is one! With a phd from UCLA.

Second, in addition to that and Emmy nominated, award winning actress, Mayim Bialik’s resume includes this – she’s also a cookbook author, capturing her culinary passion in “Mayim’s Vegan Kitchen.”

Page after page delivers the third news flash – vegan doesn’t have to mean bland or boring. Classic dishes are all over these pages and what’s so interesting is how they’re bombarded with intense flavors that boot out the non-plant components in such a way that we’ll never miss them.

And then the actual recipe, Mexican Bean Dip, {below in Notes} showcases the fourth revelation. Look at the ingredients – all familiar, all likely already in your kitchen. Whether a whole meal or just some of its parts, we’ve all likely been cooking vegan stuff for years. It’s just plant-based, not scary at all. And of course it would make a great cocktail snack, a worthy addition to CHB below.

Recipe Notes – You may want to add a bit more soy or some salt, and I did add more cumin, then served with vegs and three kinds of corn chips {no guarantee they were vegan though}. One other thing, I didn’t go full frijoles on this, but rather left it a little chunky.

The prep is so simple, we’re just going to run it right here: saute 1/4 c chopped onion, 1 minced garlic clove, and 2 T finely chopped celery in 1 T olive oil until soft, about 5 min; add 1 1/2 c or a 14-oz can kidney or pinto beans, drained and rinsed plus 1/4 t ea soy sauce & ground cumin and 1/8 t cayenne {opt}; puree in a blender or processor until smooth; serve with veggies and warm tortillas.

A few additional bio notes from her Wiki page. Most folks first came to know Bialik in her starring role in the tv series Blossom. Along the way she’s also written books for kids and parents {and become a mom herself}. She’s as well a founding member of a Jewish organization that advocates for the ethical treatment for animals.

This morning treat is from Tasty.

Alexa says request: How do you make cheeseburger pie? Even better, AllRecipes serves up a Quick Cheeseburger Pie. The flavor vibe starts with seasoned beef and the sharper taste of Swiss cheese, and then gets kicked up with dill pickle and dill pickle juice. The crust goes a little faster than one that’s rolled out and fitted as it’s just patted into place. Of course a store-bought one would be faster yet.

Alexa says request: How do I make a cake bomb? Oh Tastemade, you are baaaaaaad. Exhibit A? This No-Bake Cookies & Milk Cake Bomb. Yikes, wait till you see it and you’ll know exactly what I mean. Btw, if the instructions don’t paint a clear picture of the prep, no worries, the demo does. One other thing, you’ll see how to make cookie milk, which just may have a promising future in your kitchen all on its own.

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

   I found this on the editor’s page in Food & Wne, part of a piece on “getting out of a rut,” March 2021 issue. And it’s a pretty cool idea, sort of an upgrade on cocktail hour snacks. Or as Editor Lewis says, “Snack-ify dinner,” by setting out hearty snacks on a platter or sheet pan. He adds, “It’s fun, easy, and cleanup is a cinch.”

   Pretty much by definition, a heavy appetizer usually has meat in a starring role, with cheese not far behind. If those appetizers come from deli fave Boarshead, both often come to play. Case in point, this beautiful board from their appetizer recipe page which is filled with fabulous ideas that just could quite easily add up to a dinner party.

Kitchen Talk – Leftover ham? Thankfully there are lots of ways to re-purpose it. But here’s another option, at least for some meals. Leave the ham as is in beautiful slices and let variation check in as tasty platemates. You can go big in your side dish choices with 101 from Epicurious or tame it down with 19 from AllRecipes, all ham-friendly.      We’ve talked before about, what to me anyway is a relatively new term, Pantry Meals. To avoid a trip to the store or maybe even to avoid waste, dip into the goodies already on hand. Here’s yet another take, “14 Recipes You Can Make Using Pantry Staples,” from Food & Wine.     So, Ree Drummond’s “perfect” spinach salad {04.09.21 Salon} sure looks like it can live up to its billing. But decided to make it and see for myself. Gotta say, pretty darn close. I did add a few halved cherry tomatoes for color.

Shopping Finds – We hardly ever see butter knives on the dining table anymore, but a newer version just may become a staple in the kitchen drawer because it can rescue us from a culinary problem – hard butter. As you run it over the top of an uncooperative stick, a lineup of small holes in the blade pick up curls that can quickly soften to usability. For bread. For pancakes. For baking. And? They’re called butter spreaders, but you have to be a wee careful because some just regular butter knives on the Amazon page also use this description.     No, we don’t have an affiliation with Oreos even though this is the second mention in a couple of weeks. But came across these Birthday Oreos on Amazon and they are just so festive, so cheery, so-gift-ready.

This week’s featured CS-designed, Zazzle-crafted item – With June weddings just around the corner, time to think about bride gifts. Feature – Shrimp cocktail goes Caribbean, in a fresh & spicy way

It’s first important to note that this recipe comes from Melinda, known for decades as a major force in the hot sauce realm. In fact, I blame, uhhh credit, them with my own introduction long ago to the wonders of habanero peppers.

Melinda doubles down in this prep with the distinct potential to move the cocktail into incendiary territory. But what makes it all quite manageable is that the pepper’s legendary heat comes up against a counterbalance of cucumber, tomato, pineapple, orange, avocado, and more.

A really nice mix. Small servings would make a good first course or addition to the buffet table. But it’s also substantial enough for more generous scoops atop lettuce, spinach, or other greens to serve as a satisfying lunch or dinner.

Btw, still not hot enough for you? Do as we did and drizzle on a bit more Melinda.

Recipe Notes – The recipe actually specifies grapefruit and suggests orange as a sub, which what I did choose.

Alexa says request: How do you make a croque madame casserole? It’s probably not too far fetched to call a croque monsieur the national sandwich of France. Simple as it is, the secret is in the top notch ingredients – crusty bread lightly grilled, lean ham, good Gruyere, homemade béchamel. Add a fried egg and it becomes a madam. While most I’ve seen were open face, I’ve also come across ones that were regular sandwich style with double bread, enclosed like a croissant, or even stacked up. But until Alexa put this on the screen, I’d never encountered the croque madame casserole – and glad I did. From Epicurious.

Alexa says request: How do you make chocolate covered pretzel toffee? So, chocolate covered pretzels have been been satisfying our sugar cravings for quite some time. Serious Eats sweetens the deal with the addition of rich toffee. Here’s the recipe, credited to Lucy Baker. Thanks, Lucy!

My request: Do you have a recipe for baked hot dogs? The actual reason for this request was a guess that if such existed it would deliver an easy way to prepare several franks at once in the oven. Not only did a prep like that come up from AllRecipes, but even better for Baked Chili Hot Dogs. You can probably predict the ingredients. But what’s helpful here is quantities, pan size, time, and temp.

   Wait, what, they’re keeping stuff from us??? Food & Wine tells all in 12 Wines That Serious Collectors Don’t Want You to Know About. There’s also a link in the story for best Prosecco rosés to buy now.

  The inspiration goes back to a coffee shop in suburban Chicago where our group convinced the owners to combine the olive burger and cheeseburger and make us olive cheeseburgers. Now, here it is in crispy snack form – brown 1/3 lb ground beef {fine crumble] with 2T minced onion and s&p, then add 2T minced pimento olives, 1T mayo and 1 t ea mustard & buffalo ranch. To assemble: Lay six 6″ eggroll wrappers on a work surface with the points toward you. Place a slice of American cheese on each, about a 1/2″ in from the point closest to you. Divide the meat mixture evenly, covering the cheese slices. Fold up the corner closest to you then roll it up, tucking in the sides as you go. Moisten and press to seal any open edges. Place seam side down in a baking pan treated with non-stick spray. Brush very lightly with peanut oil, sprinkle with sesame seeds, and bake at 400 for 10 min or until golden. Note that you can certainly substitute equal amounts of condiments of your choice. And then of course it’s easy enough to make multiples of this recipe. And called? Mini Olive Cheeseburger Eggrolls!

Kitchen Talk – So, in a recent rerun of The Kitchen on Food Network, Katie Lee went full-on Thanksgiving with a Fall Meatloaf that mashed up ground turkey, stuffing mix, celery, onion, and a cranberry mix that goes both into and atop the loaf. Hmmm, I wondered, how might a version of this work for turkeyburgers. Answer: pretty good, if a wee crumbly, at least as I made it – 1 lb gr turkey, 1 c stuffing mix, 1 egg, s&p – but really good!      One of our favorite words at CS joins with the season in 36 Comforting Spring Casseroles, from Southern Living   She says she’s been sautéing mushrooms wrong her whole life. You too? Me too? Anyway, the fix actually turns out to be as simple as can be. Here’s the mushroom solution from the Takeout site.

Shopping Finds – Have you tried this? Petit Pot dark chocolate French pudding. They may call it pudding but it’s more like dense mousse meets the candy called French cremes. Their site shows we can also be tempted by vanilla bean, salted caramel, CA lemon, and rice pudding, and helpfully offers suggested pairings for each. There’s also a store locator on the page.      You know what I think adds to the charm of this tasty confection – the adorable little 3″ jars. And guess what. You can find your very own to cradle any of your own desserts. Btw if you scroll down on the Amazon page you will see other sizes, shapes and quantities.

Feature – Caramelized Pineapple Slices, with 3 ways to do the creamy topping

How much good stuff applies here, let us count the ways. Five ingredients. Prep time 15 minutes. To table 25 minutes. Toasted coconut. Creamy. Caramelized. Pineapple. CS shortcuts & tips.

Pineapple topped with cottage cheese, or vice versa, is a diner staple. The simple act of caramelizing the pineapple slices and then topping the whole affair with golden coconut elevates it to company-worthy status.

Now I can almost hear some noses wrinkling at the mention of cottage cheese, and the fact is while I enjoy the taste I don’t consider the texture a bff. So I did just what I’ve done before – blend till it’s nice and smooth. Now you could substitute sour cream, but that little bit of cheese saltiness kicks up the other flavors.

The prep comes from Daisy and no, no affiliation with them, but I do like their sour cream, and for this dish did indeed use their cottage cheese. Their site features a number of fine recipes using the two products.

Recipe Notes – I used store-bought pineapple slices, not only for the convenience but as well because I prefer fresh pineapple in its pure state. I do wonder if store-bought caramel topping could work, especially the tub kind which is a little sturdier than the jarred ones. Here though I really liked the brown sugar component and actually made extra. I would not skip toasting the coconut, really adds a nice texture and takes only a few minutes {with careful watching though}.

Alexa says request: How do I make Philly Cheesesteak Pull-Apart Bread? May I suggest that you use this link on Food Network to just look at this ever so appealing dish for breakfast, brunch, lunch or even snack table. All the right ingredients are right in there but in a whole new fun way. From Trisha Yearwood who we’ve seen is just the best at playing with food.

Alexa says request: How do I make coconut shrimp? The thing about any prep from Serious Eats is that you can be sure it’s been well researched to deliver the best possible version. And sure enough their recipe rated a solid five stars. While the shrimp part is nice enough, quite simple, I’m thinking maybe a contributor to those kudos was the sweet and sour and spicy and salty chili sauce accompaniment.

My request: Do you have a recipe for chicken curry served over French fries? Truth be told, I did not expect to find anything, even with Alexa’s vast resources. The request stemmed from a long ago but fondly recalled dinner at a British pub here in town that offered their chicken curry on rice or fries. Whaaaat? Ordered the fries of course and it was a revelation for the palate. Whatever brought it back to mind, wondered if this was an aberration or a real thing. Ha! The latter! See it here.   CS Tasting Panel member Layne Whiteman adds a savory dimension to cocktail hour phone or video chat visits. Snacks! So both people, or however many folks are on the call, each then have a nibble of choice along with the beverage of choice. Makes it even more like an in-person Happy Hour. Btw, if you’re now having more actual visits, this is still a great way to party on with out-of-town family and friends.  Love it, Layne!

  I like to do a kind of snack storm. Shake up all kinds of goodies in my snack jar, always a little different with each handful and each refill. This particular one merges Chex Buffalo Ranch Mix, already a medley, plus Caesar flavor pea snacks, Cheez-it Double Cheese Snap’d, dilled almonds, Butter Toffee Coconut Peanuts, and for a touch of sweetness, Hazelnut Cocoa Pillows cereal. This a great way to use up partial bags, though of course you can also start with all fresh stuff . . . or, mix it up.

  Food & Wine brings us news from Haus, a company they report in 2019 started producing wine-based aperitifs. In the story they go on to talk about how these drinks have become popular among those who like low-alcohol cocktails. The news? The newest flavor – grapefruit jalapeno which sounds like a really nice spring sip.
