♦♦♦  I was so happy to find Molly Yeh’s technique for filling roll-ups that makes the process so much easier. By spreading the ingredients on dough and then cutting wedges to be rolled, all the filling is done at once and distributed evenly vs parceling out individually for each piece. In her prep & demo, which we featured in our 03.25.22 Salon, the roll-up was spinach and feta on pie dough. We decided to go brunchy {and no-cook} with smoked salmon, onion & chive cream cheese, red onion, capers, and a sprinkling of dillweed on a slightly softened burrito size tortilla.  CS

Tip: It’s a good idea to do this as close as possible to service so the tortilla stays dry

♦♦♦   That sunshiny brightness, the tongue-tickling bubbles, the graceful glasses, all make Champagne and orange juice a pluperfect brunch choice. But turns out even here, pairing counts. Or at least that’s the premise of this guide to “9 Champagnes That Are Perfect for Mimosas.” Mixing tips too. And if someone wants to skip the juice? ♦♦♦  You probably want to set out hand wipes for this one. It’s Bobby Flay’s  Pecan Pie Monkey Bread. ♦♦♦  You just never know where you might come across a recipe, let alone one with a past – in this case giving us the opportunity to dress up our brunch table with a famous salad. The source here is Sharon Gless’ memoir, an Amazon Editors’ Pick, where among other revelations we discover that her maternal grandfather, Neil McCarthy, a high-powered entertainment attorney for top Hollywood luminaries of the times {think Howard Hughes, Lana Turner, Katherine Hepburn, Ava Gardner, et al}, had a salad named after him at the Polo Lounge, a sort of re-imagined Cobb, where it remains on the menu to this day. ♦♦♦  Just seeing the words, “bacon wrapped,” snags attention pretty fast for many of us. And what’s behind the wrap here is also quite enticing. We’re talking about Bacon Wrapped Chicken Taquitos. ♦♦♦  Well here’s a fun way to gin up the party vibe. ♦♦♦  OK, back to bacon. This though is an encore with an enhancement. In our 03.18.22 Salon we featured cheesy bacon bread pudding. Very good as is, but since traditional sweet bread pudding is usually served with a sauce, why not a saucy companion for this savory one. I kept it pretty simple – mayo, enhanced with a touch of ranch dressing, lemon juice and dried parsley.  CS

♦♦♦  I feel like I’m being haunted by volcanos. In last week’s Salon, we featured our discoveries of volcano-shaped dishes for virtually every food group, plus wines from grapes grown on volcano slopes. Now a recent episode of “Bar Rescue” had a mixologist rimming a cocktail glass with volcanic salt. On Google it’s also called lava salt or black lava salt. Then searched using it for cocktails and found it’s mainly for rimming {but see below}. And among those finds was a pretty Strawberry Thyme Margarita from Food 52

♦♦♦  From the number of times I’m coming across this dish, it just might be an exploding trend {sorry,  sorry, sorry}. It’s food volcanos {some really do erupt}. How fun would that be on either the brunch or happy hour table. Lots of festive volcano variations on these google pages . . .  🌋

May I suggest that you take a look at the directions from start to finish before any preparation. Also might want to tap into the Misc page, as the pix before the recipe list shows some interesting ways you can decorate or even landscape your volcano.

♦♦♦  How about this for perfect timing? Volcanic Wines! The grapes are literally grown on the slopes of volcanos. Why, and do the workers collect hazard pay? The answer to the first part, as the story says, is that “volcanic soils seem to help impart a distinctive character to wine, both red and white, not found in other places.” There’s more to the tale, including the flavors these grapes yield and the best ones to buy now. Nothing about pairing but guess we could figure this out from the profiles shown for each selection. Just maybe something perfect to create a tasty Volcanic duo.  Food & Wine

♦♦♦   Pizza + Slider = Boffo cocktail companion. It starts with slider rolls, or parker house rolls, or any small rolls that pull apart, which are then sliced horizontally while remaining intact. In goes pepperoni, of course, plus sauce, cheeses, and seasonings. Did we mention garlic butter all over the place? In the oven, out of the oven, and voila! Pepperoni Pizza Sliders! ♦♦♦  In a recent episode of The Kitchen, Broadway actor Daniel Breaker prepared a Baked Egg Bar. What an easy way to make multiple servings that are also fun and colorful. On the show, and in the linked recipe, delectable toppings are added to eggs and cream in ramekins before the whole panful is baked. The recipe notes that you can also have guests add their own to the unbaked dishes. Just thinking, what if you added, say, just some colorful chives and cheddar before baking, and then after baking have the guests top off as they wish from a “bar.” Whichever way, just a great idea.  Food Network

♦♦♦  Wow, was I happy to find this recipe for Baked Pancake with Pancake Mix. I used to buy the store brand that had a good version on the box, but that is no longer available. Even better, this prep shows a preference for the brand sitting right on my pantry shelf. So much good going on here. First, and as usual foremost, the taste is phenomenal, and would be even without the chocolate chips I added. Now just look at the photo and you can see how tender this is, the way it curves onto its platemate. And because it bakes in a 9×13, you can feed a lot or freeze a lot.  The Seasoned Mom

Also to note in the photo – the top of the pancake {left} does not brown in the oven. but the bottom does. So just flip over and you’ll be serving the golden one on the right.

♦♦♦  One of the great things about brunch is the option to set out little bites of good stuff, often with a breakfast vibe. Sort of like an early cocktail hour. And wowsie does this dish fit the bill. Mini Cinnamon Roll Bites. Easy! Starts with a refrigerated pie crust. Butter it up, sprinkle with sugar and cinnamon, roll it up and bake. A simple glaze prep in also included, which is presented as a dip but seems it could also be a drizzle. Demo too. Add a cup of coffee and it’s the perfect brunch finale.  Tasty

I haven’t made this yet, but would be inclined to use the whole crust, even if a few of the rolls ended up less than uniform. My mom used to create a few of these from the dough scraps whenever she made a pie. Just one of the ways she was my role model in finding ways to not waste food.

♦♦♦   What can make a classic brunch beverage take on such additional traits as fun, festive, tasty, colorful, clever. Answer – the easy technique for making these Rainbow Mimosas. What’s so appealing about these glassfuls is their multiple flavors since they’re created mostly with natural juices – cranberry, carrot, mango, matcha lemonade, blue curacao, butterfly pea flower tea – topped off with Prosecco or Champagne. Wondering if  blueberry juice instead of curacao and grape juice instead of pea flower could work. There’s always of course food coloring, and as well you certainly don’t have to make all 6 colors.  Food Network

♦♦♦  Call up the Bloody Marys, Mimosa, and/or Champagne. Because have we got a brunch dish for you. Cheesy Bacon Bread Pudding. And once you’ve cubed the bread, the rest is a breeze. Two things to note. The prep calls for 45 minutes of baking, but you’re going to want to start checking it at 35. Second, those dark elements in my pudding may look like sausage, but actually some rye bread I folded in. Though sausage would be good as would ham.  I did use extra cheese in the mix and on top.  FramedCooks

This is 9″ x 13″ of goodness that may well have leftovers and that lets me segue to sharing my favorite container storage system. I’ve had mine for years, and it’s held up beautifully – compact, easy to access, three sizes and the lids, hooray, fit all of them. Four stars, Prime eligible . . .

♦♦♦  Intrigue! Did you know the kitchenware in your cabinets and drawers can lead a secret life as artist’s tools, with food as the medium? But it’s all good because this is pure fun. Call up the baking rack, hand mixer, rolling pin, melon baller, slotted spoon, even a fork, and move on to the pans and bowls and, yep, even bubble wrap. ♦♦♦   Fried chicken that isn’t fried? Well, more specifically it’s Oven Fried Chicken. And it’s darn good, lots of flavor going on. For my treatment, I cut thick slices of skinless, boneless chicken breast – perfect for Happy Hour. I didn’t have corn flakes at the time, so crushed up the corn snack, Bugles, and that worked out just fine. This Mary Berg prep features an accompanying recipe for spicy honey slaw.  Food Network

♦♦♦  Finally, we can just about stand on tippytoes and see Spring. And Bobby Flay has a fabulous way to toast its arrival – with his Mojito Limeade. ♦♦♦   So, last week {02.18.22 Salon, recipe included} we referred to a cocktail called Izzy Bizzy that was featured in both Food & Wine and Food Network Magazine , and both gave a nod to its creator Tom Bullock, active in the “spirits” world in the early 1900s. As bartender at the St. Louis Country Club, a fave of local notables, he created other drinks as well, eventually gathered into the 1917 book, “The Ideal Bartender,” available in reprint in hardcover, paperback and Kindle, 4+ stars, Prime eligible.  Amazon

♦♦♦  How cool is this. Wine  classes you can attend from the comfort of home. You’ll even find some that  guide you through a virtual tasting party. ♦♦♦  When brunch is on the agenda, cocktail hour moves up the clock. The food offerings span the gap between the traditional first and and second meals of the day, and also likely evolve into something a little hardier. Just imagine how a nice icy glass of Champagne would pair with this sweet treat with a breakfast-y vibe. Nutella®-Filled Donut Muffins! Donut texture, baked in a muffin tin, with a nutty surprise inside.  AllRecipes

So, quite sure I’ll make these sometime, but meanwhile I had a package of jumbo biscuits loitering in the fridge and used these to make a version of those ^. Baked according to directions, sliced off most of the top, cut out the center of the top as you see here. Then sliced off most of the bottom of the removed piece, leaving just a thin piece of the golden top. Placed the ring back on the bottom, filled the center with Nutella, and then replaced the cap. You could also just leave the caps off and use them separately as mini biscuits. Really good lightly warmed.

  Flying high takes on a whole new meaning as the New Zealand winery Invivo launches what is being called “the worlds first winery airline,”  which will operate within the country. A chartered plane will deliver guests to destination towns where they can enjoy exploration time, an overnight stay, and a visit to origin vineyards.  From Food & Wine

  Shrimp toasts are a’comin {oops, age-busted by a song}. These traditional Asian appetizers are always just so satisfying, and now you can make them at home with a pretty easy process. A whirl in the processor with fairly familiar ingredients, a quick dip in hot oil and voila! Shrimp Toasts. The story calls them a cocktail hour staple.  From msn.com

 This quesadilla is actually an encore, originally appearing as a Feature Recipe in CS over a year ago. It’s here partly because it’s a perfect cold weather snack, which it can so easily become with smaller slices and maybe sans the egg. But mostly because it’s just so full of flavor, exactly as you’d expect from a Bobby Flay creation, loaded with bacon, hash browns, onions, peppers, cheese, salsa and chives – and deserved another time in the spotlight.   Another round of desserts for everyone. OK, so these boozy confections were posted as holiday treats, but thinking they could make any day a holiday. Among the goodies, Mudslide Pie, Grasshopper Cheesecake, and Rum Truffles. Great for the sweet side of the snack table, many already individual servings, and the rest can be cut down to size. You should be able to scroll down on the site and see all the recipes listed rather than doing the slideshow.  From AllRecipes

Deconstructed Tamales – Pulled Pork  Cheese Grit Cake   Leave it to Trisha Yearwood to turn grits into a funfest. The dish starts with fried cheesy grits cakes. Then Mexi-seasoned pulled pork. And then on with the corn salsa, sour cream, green onions and cilantro. I did use the thick and creamy grits right from the pot rather than chilling and frying. Avocados make a great accompaniment. Cherry Cream Cheese Coffeecake   The base of this cake s a buttery marvel. Add the rich cream cheese layer and the flavor bombs that are cherries, and it’s destined to be a crowd pleaser. And, yep, it’s big enough to serve a crowd too. As you can see, I used a rectangular pan instead of the springform, though. Great for breakfast of course, but add a big scoop of ice cream and it transforms right into dessert. You really do want to let it cool completely before removing it from the pan.   Recipe    From 05.14.21 Salon

Loaded Mashed Potato Cups   This is such a perfect fit with all we love here at CS and it’s easy to see why. First, mashed potatoes just on their own qualify for the comfort food hall of fame. But here they’re joined by more good stuff – bacon, chives, parm and seasonings, cheese stuffing, sour cream topping. And it’s an easy prep. Ingredients that are few, familiar, likely already at hand. No complicated techniques. And a pan probably pretty much all of us already own. And by varying its platemates it can move from breakfast/brunch to lunch to dinner. Artsy Confections   For these Tie Dye Cookies, Molly Yeh divides sugar cookie dough into three pieces, each blended with food color, then formed into “balls” that are slightly flattened and baked. The finishing touch is a sprinkling of sanding sugar. “Fessing up, I did use refrigerated dough.  Then, this Painted White Chocolate Bark comes not surprisingly from Trisha Yearwood who just excels at making food fun. Loaded Vegetarian Nachos   Yes, indeedy, veggies can be tasty and fun and appetizing, here even a bit of a showpiece. In fact we vote for renaming them Fiesta Nachos because, as you can see it’s just such a celebration of colors and textures. It’s more ingredients than we usually feature but so worth it and you actually could if you want limit the toppings. And, yes, there actually are chips in there, and then all topped off sour a scoop of sour cream. One shortcut that I used was canned lentils, still stirring in though  all the seasonings.  Recipe    From 09.24.21 Salon

Oreo Cake Balls {or just cake as shown here}  Oh my. Oreo crumbs and cream cheese packed like little snow balls, quick freeze, dip in melted chocolate, refrigerate, done.  They are so, so, easy to make and that might be the bad news because, mercy, they are rich and even luxurious. And they’re fun, the round shape ready to become sports balls, funny heads, bling, and in fact star pastry chef Buddy Valastro turned them into pretty eyeballs. Ham & Beef Tavern Chili   My great uncles owned taverns in the Chicago suburbs, and served cups of this chili gratis to their patrons. I don’t know the dates of operation for those establishments. The family was sort of vague about that. So, this was passed down to me by my Aunty Peggy who actually won a recipe contest with it conducted by the Chicago Tribune. I do like a bit more chili powder and a couple of tablespoons of cumin. And depending on the heat level in the chili beans, I may add some hot sauce. Snacks for Dinner   This is not so much a recipe you’d cook or bake, but rather one for putting together a pretty plate. It all began when I cam across this magnetic headline :“Why Snack Dinner is the Best Thing You Can Make for Yourself Tonight”  Wow, there are some fine looking assemblies here. Lasagna Bites   Yikes, these are good, and very lasagna-y even though there’s no pasta in sight. Rather, they’re made with wonton wrappers that are fitted into your muffin tin. The filling holds to tradition though with pretty much classic lasagna ingredients. It calls for ground turkey, but notes the original used ground beef, and so did I. As you can see, its versatility carries it all over the hours. A great appetizer for sure. But also, send it morningside with a poached egg, so satisfying for breakfast or brunch. Chocolate Peanut Butter No-Bake Cheesecake   Rich cheesecake goes even richer with one layer that blends in melted chocolate chips & a second one of sweetened peanut butter, each separately whirled in the food processor till silky smooth. I did add a drizzle of melted chips, also cut the prep in half and used a deep dish pie plate. FYI, Amazon offers a ready-made chocolate peanut butter cheesecake, quite showy but also quite pricey. Tap into some of this culinary bounty that is an everyday part of Amazon Echo’s offerings – always CS-style recipes, sometimes tips and tidbits too

     Love a big breakfast? Hate big preps when your eyelids are still at half mast? Solved! And in a mighty tasty way. These Reheat-able Breakfast Calzones are hearty too, plump with chorizo, potatoes, onions, peppers & seasonings. The prep list may look scary long, but it’s basically cook the chorizo, then the veggies, stir in seasonings. Roll out store bought dough {or make from recipe provided}, fill and freeze. They reheat right from the freezer. Thinking, to make it even more of an eye opener, swap out the bells for jalapenos or habaneros.  From Food Network

    Have you heard of Banoffee Pie? It’s sort of like banana cream gone wild. In the original English version there’s usually a biscuit base, but this prep calls for a graham cracker crust. Then it goes all caramel-y with a layer of dulce de leche that you make from sweetened condensed milk {or, guess you could just buy a comparable amount of dulce de leche}. Along with some cooling steps, then bananas, whipped cream and chocolate shavings. Btw, here’s another place where you would thank an offset spatula {mine from Amazon}.  From Tasty

     Move over potatoes, there’s a new chick in town. More specifically, Hasselback Chicken. The classic technique delivers a mouthful of flavor, as the slots are filled with spinach & ricotta, topped with cheddar and paprika. One thing, you may want to add the cheese later in the process. A tip I learned for anything hasselback is to lay wooden spoons or chopsticks on each side to insure you don’t cut all the way through.  From Tasty

     Promise you won’t run when I mention . . . Chocolate Salami. This confection by Giada is a clever sendup on the deli fave, with buttery chocolate supplying the background and then nuts and crushed biscotti playing the “fat” roles. As a final touch, the whole shebang is rolled in powdered sugar. Yet one more dessert that also serves as a conversation piece.  From Food Network Kitchen

    When Ixipixie, who posted this prep, calls it Hot Corn, you can believe that’s just what it is. And well beyond the warmth of being baked golden in the oven. That other kind of heat is contributed by a full 12 oz jar of jalapenos. Coming to the rescue, somewhat at least, is a lot of cream cheese and cheddar. The descrip says for this family it’s become “a must have for all holidays and special occasions.”  From AllRecipes

Kitchen TalkIn KT in our 11.12.21 Salon we talked about finally adding Gochujang to our seasoning repertoire but noted we’d not yet used it. Not being a big fan of ketchup, always used taco sauce for fries. Now? Gochu is the go-to!      If you need a decadent  treat in a hurry, here you go. Chocolate Chip Cookie in a Mug. The article “Don’t Make These Pie Dough Mistakes” from MyRecipes identifies a half dozen ways the process can go bad no matter which technique you use. {I’m trying not to take personal the one that says, Your fat particles are too big.}

Shopping FindsI just finished a truly pleasant read. Pamela Kelley’s tale of three sisters brought together inside “The Restaurant,” is a love story x 3, revealed by some gems excavated along the way – their Gram’s love secret behind the secret, the subplot for pet lovers, and love of comfort food, including a fish technique. Make that four when you add in the gentle love between the sisters who’ve lived apart for such a long time. Multiple formats, 4 stars on Amazon.   Which salsa to buy? This salsa taste test by MyRecipes gives you the scoop. Most should be at your market, but if not or you just want it delivered to your doorstep there’s a large selection on Amazon.

Well these are fun. Mozzarella and pepperoni are wrapped in seasoned hash browns and deep fried to golden crispiness. A nice dip in marinara and the pizza vibe is complete. Demo shows all the steps and details.  From Tasty

Chocolate Lasagna

Really? Well let’s take a look. Cream cheese stands in for ricotta. Chocolate pudding replaces Italian sauce. And admittedly a stretch, chocolate chips top it all instead of Parm. All in all, seems to qualify for the lasagna category, just checking in for dessert rather than main course.  From Southern Living

Bake Sale Winning-est Gooey Oat Bars

Oh CS-ers, these are good. The tender buttery crust is just the tasty start. After baked golden it’s spread with a filling reminiscent of pecan pie but instead of nuts a mix of coconut and other sweet treat goodies, in the case of ours here – chocolate chips, dates, and raisins. Then a final flurry of powdered sugar makes it pretty. As with many baked goods, even better the next day.  From Food Network

Butter Chicken

That star ingredient is magnetic enough, but then add in the wave after wave of flavor contributed by fragrant, maybe even exotic, Indian seasonings. And even so, chances are many of them are already in your pantry and fridge, like onion, garlic, yogurt, brown sugar, canned tomatoes. Well this could be a darn welcome resource for the holidays, especially if you have house guests. Generally sheet pan dishes simplify things and the ones here seem to be no exception. Among the preps, giant bacon-green chile Dutch baby, Breakfast disco fries, Ultimate sheet pan eggs {love the descrip!}, Slab quiche, Salsa roasted potatoes, Berry breakfast pizza, 21 in all.  From MyRecipes

   Say what? Doing shots after the entree{s}? Turns out it’s a French tradition known as a trou normand. And it’s quite an interesting concept. The link takes you to a story on MyRecipes that pours out the whole story, the what and the why – and what the heck that term even means.

   If you can still find a Oct/Nov 2021 copy of Taste of Home, among the other always fine food features you’ll find one entitled “Wisecrackers,” {sorry could not find a link}, with a “Tasty Ten” ways of dressing up a basic or fancy cracker. Just some of the ideas, Apple butter, white cheddar, pear and sliced toasted almonds. Hummus, green & black olives, garlic, feta, and a drizzle of olive oil. Queso fresco, shredded pork, salsa and jalapeno.

Can’t find it? Just start with any crackers you have and look upon them as blank canvases, just waiting to be turned into little works of art with the help of your fridge and pantry.

  Nothing wrong with some mini desserts on the snack table. Like these! Chocolate Peppermint Cheesecake Bites, from AllRecipes. Great holiday flavor. And easy to make right in your muffin tin.
