The title candy bar plays three roles here, in the crust, in the filling, and as garnish.   Giant Breakfast Sandwich   In our 08.20.21 Salon we featured two “giant” preps. Now those same folks are at it again, offering us another tasty way to go big. In this case, supersizing the start of our day with a sammie that stacks pork sausage, cheese and eggs on a homemade biscuit {with biscuit mix for a shortcut}. A triple “bath” takes it over the top, cream on the biscuit, hot sauce on the eggs, warm syrup on the whole shebang.  From Food Network

   Chipotle Cheddar Corn Chowder  Credit Alexa for popping up a prep for cheddar corn chowder. But then when I went to fetch the link for you, found this version with a spicy twist from the same source. Hatch chilies also get in on the act, along with butter, veggies, aromatic seasonings and a full package of bacon.  From Epicurious

   BBQ Pulled Pork Fries  Oh my, these look so good. First, mercy sake, it starts with French fries. Then the layers begin, bbq pork, red onion, pepper jack, scallions, then one more time. Lots of folks weighed in to give this dish 5 stars on the google page.  From Tasty

   Autumn Muffins  A taste of fall in every bite. What makes it autumn? Apples, cranberries, figs and hazelnuts, plus all the wonderful seasonings that fill the house with the aromas that tell us baking season is back. One of the commenters changed out the butter for applesauce – way to amp up the autumn-ness!  From AllRecipes

Kitchen Talk – It was only a matter of time before I succumbed to the lure of the Oreo cake balls that were in Alexa’s Room in our 06.25.21’s Salon. They are so, so, easy to make and that might be the bad news because, mercy, they are rich and even luxurious. They were new to me, and a little tour on google revealed they’re generally formed from cream cheese or frosting and cake or cookie crumbs, dipped or rolled in other goodies. All no-bake. And they’re fun, the round shape ready to become sports balls, funny heads, bling, and in fact star pastry chef Buddy Valastro turned them into pretty eyeballs. And – no surprise – Amazon has whole books of them.      And now how about a shortcut? If you aren’t planning anything fancy with the balls, just pat the mixture into a pan and use the chocolate chips to make a ganache frosting, as seen here.  Like the richest ever brownie.      I don’t think I’m alone in appreciating the nutritional benefits of oatmeal without necessarily being a fan of its delivery method {eating it}, and accordingly the Salon has offered various add-in suggestions. My new favorite has a German chocolate cake vibe – after cooked, stir in coconut, pecans, chocolate chips, and brown sugar or maple syrup.

Shopping Finds – In our 06.25.21 Salon we featured Joanne Fluke’s foodie mystery novels, in turn the basis for a Hallmark series that we linked to in an earlier Salon. Now, what a nice find – her cookbook that reveals some of those recipes that teased us in the stories. Here it is on Amazon,  Joanne Fluke’s Lake Eden Cookbook.”        Well how fun is this. Could be for a get-together. Could be just so you’re always cooking in a partied-up kitchen. Food-themed balloons! Some are fun, some pretty, some downright appetizing. Note that you can find a specific food design – hamburger, pizza, ice cream, etc. – by entering it after “balloons” in the search window on the Amazon page. Many multi-packs too of food groupings, like the one shown here.

Chicago Deep Dish Pizza Dip

A full 5 stars for this fun and festive mix of of thick spaghetti sauce mix, pepperoni, ricotta, mozzarella, and Parm, ready to be paired with the suggested garlic bread or baguettes. Or how about a baked pizza crust cut in strips. Now while I am pretty sure with its rating this is mega-tasty, and some seasonings would check in from the sauce, still not sure it lives up to the Chicago adjective. I can tell you what would would do that trick is some garlic, oregano and red pepper flakes, maybe a bit of basil and fennel too. From AllRecipes.

Shoyu Chicken

All the classic Asian flavors come together to beautifully bronzed chicken thighs that taste as good as they look. While the demo shows that the skin was left on, I did remove the skin and would say no harm done. From Food Network.

Chocolate Dipped Peanut Butter S’Mores

How much does that title telegraph a decadent promise? And it looks like it will definitely live up to it. Especially since there’s even more. Because Nutella and white almond bark also come to the party. More? Suggested toppings reach into pistachios, pretzels and sprinkles. From Food Network.

Stuffed Queso Meatloaf

Even non-meatloaf lovers may want to grab a fork. Crumbed corn tortillas, tomatoes, chili powder and cumin join the usual suspects in the meat mix. Then, soft cheese and jalapenos are channeled in, and a tomato/ketchup glaze goes on. Bake, wait, slice, yum. From Food Network.

Any “no-bakes” that look good I’ll be sending your way right here, so as little as possible see the oven {even as we may feel like we are}. These are from FoodFeed, and the sneaky petes draw you in right from the git-go with chocolate peanut butter bugle bars. 🎵

Berry Smoothie Bowl  Take a sip of summer. Strawberries, raspberries, blackberries and bananas whirl into yogurt, almond milk and peanut butter. The recipe serves two so can go into a couple of glasses or maybe be the destination for two straws. Or, apply a multiplier and voila . . . summer punch. From Tasty.

  The gins of summer  After sacrificing on our behalf and taste-testing 65 gins, writer Ray Isle offers these nine selections for cocktails on the patio. He never quite says quite why he chose this lineup, but we do get clues from his descriptions, which speak of lemon, lime, orange, florals, mint, even seaweed. From Food & Wine.

   Fresh Summer Appetizers  This lineup is a happy matchup for warm weather snacking, pretty much utensil-free and seasonally inspired. Think mini savory pancakes, little pizzas, stuffed veggies, quesadillas, nachos, dips and lots more. Shown, the mini corn cakes with smoked salmon and dill creme fraiche {shortcuts & subs – store-bought cornbread or muffins, sour cream, dried dill}.  From MyRecipes.

   Bloody Mary Bar  One of my absolute favorite brunch places featured a bloody mary bar that looked a mile long. Such fun! On a nice site I found and will visit again is a great diy array of tasty stuff to mix in, dip in, or prop atop the marys. Quick Bites – What’s better than a celebrity chef recipe for cornbread? Five celeb chef recipes for cornbread. What’s even better yet? Someone on insider.com willing to test all five, take us through each process, and give us the results. You have to search a bit, but there are links in each description that will send you to the recipe.    A slide show from USA Today lifted the curtain on how pickle juice can elevate fried chicken, calling it a magical combination. Quite intriguing, but didn’t say exactly say how to go about that {amount, timing, other ingredients}. But AllRecipes does with its Pickle Brine Chicken recipe.    Thinking ginger root must have hired a pr agent since I’m seeing more and more about its health benefits and flavor perks. Food & Wine brings us no fewer than 29 ginger recipes in this slide show {or scroll for full list}, including an intriguing one for ginger-roasted acorn squash that adds greens for a very pretty platter. {Hey, could put these three together for a mighty fine dinner}

Shopping Finds – Did you know this? Panera Bread offers a decent variety of pantry items for contactless delivery or curbside ordering or pickup. See the details.     And did you know about this kitchen tool? You hold it kind of like a knife, run it over certain fruits or vegetables or even pastry or say slices of Swiss cheese for salad and end up with perfect uniform shreds. Many variations here on Amazon, all quite reasonably priced.

Kitchen Talk – All my previous ice cream breads have to move over, because there’s a new fave in this kitchen. Peppermint! Yes, peppermint stick ice cream bread, a semi-sweet treat that just dances in the mouth. See the original recipe in our 07.17.20 Salon, and remember, just three ingredients. Could be quite nice on the Valentine’s table.    Hot news! Yahoo Life reports that research presented at the recent AMA Scientific Sessions cited a wide-ranging chile pepper study that shows consuming these palate igniters could be instrumental in avoiding major diseases and increasing lifespan. The favorite spicy cookbook in this kitchen is The Fiery Cuisines, 5 stars on Amazon and notable for balancing flavor and heat in dishes from across the food groups and around the world.

Feature – No-Bake Chocolate Peanut Butter Cheesecake

This might border on illegal {if so, blame Tasty.co & Alexa}. Or at least something you might not want to mention to your dentist.

Rich cheesecake goes a big step richer with melted chocolate chips blended in. Then cozies up to a thick layer of peanut butter that’s gone all sweet with powdered sugar.

Would certainly be good as is. But looked sort of plain, so melted another 1/4 cup of chips to drizzle overall.

While a number of desserts taste better after sitting out of the fridge for a while, this is best nice and chilled. Probably don’t need to add that small slices will suffice.

So, just for the heck of it thought I would see if Amazon offers a ready-made chocolate peanut butter cheesecake and yep they do, and quite showy but also quite pricey. What you might find surprising though are the other choc/pb items on the page including even coffee.

Recipe Notes – I cut this recipe in half and made it in a deep dish pie plate. It calls for just chocolate chips, but I opted for semi sweet and wondering if even bittersweet might work. Also, ran both layers through the food processor so they would turn out silky smooth. Note that it needs fridge time in the process and afterward.

Alexa says request: How do I make tater tot breakfast pizza? Tater tots + egg = a crispy, tasty crust, especially if you heed some of the commenters who seasoned both the potatoes and the eggs. Then, the toppings, yum. Two cheeses, bacon, the eggs, pepper, not in the list but looks like parsley in the demo, and then avocados. Check other comments too for different topping suggestions. However it came together, these folks love this recipe from Tasty.

Alexa says request: How do you make cinnamon roll pancakes? AllRecipes wins this delectable derby with their 4 1/2 star recipe. Let the description on the page tell the rest of the story – “Sweet and delicious buttermilk pancakes with a butter, brown sugar, and cinnamon swirl filling. These are great any time of the day and less time consuming than making real cinnamon rolls!” Wow, add the above prep and we’re talking a 5-star brunch.

My request: Most of the time Alexa is quite amazing in putting together the parts of your request to deliver exactly what you’re looking for. In this case though, it took some “negotiating.” What I really wanted was a 5-star recipe for New Orleans style barbecued shrimp which as you all know is a whole different category of bbq. After trying this and that I finally decided to name drop and asked for a barbecued shrimp recipe by Emeril. Voop up it came and Voila! 5 stars. On Food Network and actually called Emerilized Barbecued Shrimp, it has more ingredients than maybe most others but oh my each one just layers on more flavor.

And this week’s unexpected thing we found that Alexa can do – play dinner party music, such as classic jazz or classic rock

♦  Well look who dropped down out of her room. Alexa! That’s because she popped up some party food on her screen. S’Mores Popcorn. It comes to us from Giada on Food Network, and indeed has all the right stuff. You’ll see that she gives it a bit of a Valentine’s look, and woohoo it starts with store-bought popped corn.

  Well I’d say definitely soothing, but Food & Wine goes all in and declares, “Hot Cocktails Are Like Heating Lamps for the Soul,” and then goes on to describe some toddy siblings found in restaurants around the country. And fear not, there’s a link to another F&W story with actual recipes.

   Here’s how Ashe Cayne in “The Unspoken” dresses up a charcuterie plate: cured meats, hard and soft cheeses, olives, grilled artichoke hearts, pepper & fig spread, bruschetta, crackers, fresh & dried fruit, strawberry jam. There are just a couple of pages in this Amazon 4-star book where you wouldn’t want to be eating at the time, but it’s otherwise a relentlessly unfolding mystery in the toughened hands of Cayne, a Shakespeare-quoting, Food Network-watching Chicago detective, hard boiled and soft boiled. Here’s my recent plateful.

  Heard on Food Paradise, Food Network, “You season both sides because you eat both sides.” Kind of a cousin to Emeril’s oft-said “I hate one-sided tasting food.”

Quick Bites – What the heck happens to meat we put in the freezer, where’s the taste and texture we bought? This story, “The Game-Changing Trick That Makes Defrosted Meat Taste Better,” explains why it changes and how to fix it. Btw, as not a big fan of balsamic wondering if other vinegars might work. But if you’re happily in that camp go for it.    It’s not surprising that lots of veggies are more nutritious raw, but what may be? – 12 Surprising Vegetables That Become Healthier When They’re Cooked. We already knew this about tomatoes but some in this American Journal of Clinical Nutrition list on the Yahoo/Life site are kind of unexpected.    They’re becoming an ever bigger thing – hot cocoa bombs – cocoa and maybe more inside a chocolate shell that “explodes” in hot milk. What fun! You can let google show you how to make them, or buy them in stores or online including Amazon. and the same page has molds to make your own.

Shopping Finds – Are you familiar with ghee” – butter slowly cooked to separate out the milk solids and yield a rich clear liquid that this Bon Appetit article calls butterscotchy but I’ve always thought of as nutty. The article covers uses and how to make your own, but also their recommendations about where to buy it.    I just LOVE these toaster oven pans. Seems so often what I had available was too small for the food or too big for the oven, but Goldilocks style, these are just right. Non-stick, 4 1/2 stars on Amazon, Prime eligible. And reasonable too! – at this writing $13.35 for the set, shows reg as $19.99.

Kitchen Talk – So, I was watching the Food Network Show, Food Paradise, and a chef put a layer of bread stuffing on the chicken and vegetables in a pot pie before fitting it with the crust. That made me wonder, why not just use the stuffing as the crust, even better maybe on a turkey pot pie, or make the whole thing as a casserole.     May I say, no matter what else might be in your salad, a topping of crushed Doritos and hot sauce can kick it right into the exciting zone.    The squash recipes we featured in our 10.23.20 Salon, all from Food & Wine, drew me magnet style to one particular recipe, mostly because I dearly love butternut, here in an interesting merger with polenta {I used less}, sage and smoked cheese. Lots of the steps can be completed in advance, including any toppings, my choice being pureed spinach and seasoned tomato sauce. But I liked it best with just a bit of melted butter, and the next day. Be sure to read the recipe comments.

Feature – Apple Crumb Cheesecake with Caramel Sauce

I haven’t made this yet, and I don’t know at what point I will. But it looks like such a nice holiday dessert I wanted to share it now.

It comes from the Food Network host I mentioned previously, whose treasure of a show is Delicious Miss Brown. I just love about everything she makes, and pretty sure this will be no exception.

This cake is kind of a showstopper. One of those creations you almost don’t want to ruin by cutting into it.

But just start thinking about the graham cracker/brown sugar crust, the creamy filling {with a secret}, the buttery apple crumb layer, all topped with {store-bought, thank you Miss Brown} caramel sauce, and – hand me the knife.

Recipe notes – probably any caramel sauce would work nicely, but I really like the kind that comes in a tub, usually found in the produce section, but so rich and thick you may want to warm it slightly to make it more spoonable.

Alexa says request: How do you make an Oreo Roll Cake? Anything starting with 3 packs of Double Stuf Oreos cant be all bad – especially when chocolate frosting, butter and confectioners sugar also join the party. This is from another newly-discovered foodie site {thank you, Alexa}, Tastymade, which also folds in travel and home design. One thing that’s a little puzzling in the directions is solved in the demo which shows you use only about four pieces of the filling for the frozen part. It will all come clear on the Oreo Cake Roll recipe page.

Alexa says request: How do you make bread burgers? Well wasn’t sure quite what to expect here, maybe a stuffed dish. burgers on bread instead of buns, burgers with bread in them {other than just crumbs} ??? None of the above. Rather, Alexa delivered a couple of recipes that had bread in the title, the first one a burger with {Alexa!} bread and butter pickles. But the other one was a little truer to the promise and a tasty choice at that, Pepperoni Garlic Bread Cheeseburgers from the respected Serious Eats site. The “bread” is actually a bun but who cares when the assembly includes gussied up garlic butter and pepperoni turned into a sauce with, yep, more garlic.

Alexa says request: How do I make buttercup marshmallow s’mores ? So, am I the only one new to buttercup squash? Sounds like a delightful discovery, even more so with this unusual prep. Here’s the original recipe from Food Network Kitchen. Then may I be so brazen as to suggest my own likely version. Mix all of the cooked & scooped squash with the maple syrup, butter, cream cheese and salt {and maybe some ginger} and heat through.  We’ve invited Chef Phillip Dell of Las Vegas into our Salon to talk about food, his bbq sauce, and indoor grills, and even share one of his rib recipes, and we’re honored he accepted. His resume features many impressive wins, not the least of which is Chopped Champion on Food Network.

  First of all, big congratulations on qualifying for the World Food Championships. Can you tell us a little about this competition?Every year the creators of the WFC (MMA Creative) put on qualifying events to create entry opportunities for foodies to win. In doing so, the winning competitor then secures a spot in the big show – The World Food Championships! It’s the pinnacle of what we like to call, food sport, the competition competitors all hope to not only compete in, but WIN! Competitors from all over the world come together to compete in one of ten categories, to take home at least a piece of over $100,000 in prizes and cash. They had to be canceled this year, and are now scheduled for November of 2021.   

  And what was that winning dish? It looks fabulous.
In this competition we were tasked to incorporate a La Lechonera marinade into our dishes. Since I love everything barbecue, I just knew I had to go that direction. Here is the description of the winning dish I entered in the Chef category – Mojo Costillas Cortas (magical short ribs – CAUTION! May cause mild to severe cravings!}.Rich and succulent beef short rib is nestled in soft, cheesy jalapeno grits and turns magical when topped with criollo bacon jam. It’s a fiesta for your taste buds.

  And we also need to talk about your very own bbq sauce, Sweet Addiction
We are very excited to finally have our sauce available to everyone!  For years, people have asked where they could get my bbq sauce after tasting it on the famous – Original Pork Star! (as featured on Cooking Channel’s Carnival Eats and Carnival Kings), finger-licking ribs or even drizzled over vegetables. Now it’s available! at both Premier Barbecue and Fire and BBQ Concepts in Las Vegas, and both are happy to ship it to you. In the very near future, we hope to offer it online.

  Here at CooksSalon we like dishes that are first and foremost comforting, satisfying, and fairly easy in terms of ingredients and techniques. Would you have a recipe like that you might share with us?
I for one find anything cooked outdoors to be comforting, especially ribs! You see, I have many childhood memories around ribs. They make my heart and taste-buds smile. I hope you will enjoy this recipe for Artisan Style Ribs as much as I do. Please note:  All recipes are just that- A recipe!  Change them as you feel fit. And, flavor profiles are very subjective, so use a seasoning that gives you all the warm and fuzzy feelings associated with comfort food. For me that could be my own concoctions, or a blend from companies like Oakridge BBQ Seasonings (Competition pork and beef) or Brantley Creek (you really must try the “pecan rub”).

  Now turning from food to prep, it would be great to hear your take on indoor grills. Do they have a place in our kitchens, are there particular features we should look for?
The short answer is – YES! Not everyone can have a grill outdoors, so I say, get it where you can. A good ventilation system is always helpful, but you can still produce great food on an indoor grill nevertheless. I am a huge fan of gas-powered kitchen equipment, as they tend to have the most consistent cooking capabilities. However, electric is perfectly fine too. Just look for something that is heavy duty and has the highest btu output. This will help when it comes to heat retention and recovery.
