♦♦♦  What is it about bacon? For many of us, the idea of it, the appearance of it, the aroma of it, just makes everything seem better. And now we can go into happiness overload with these 33 Bacon Recipes for BLTs, Burgers and Beyond. The “Beyond” gives us other sandwiches, pasta and other entrees, salads and other side dishes, tarts, the great sounding beer bread with brown ale, cheddar and bacon, and within the mix snacks and preps that can become snacks. Including these great tasting beans that we chose, with the maple bacon all but stealing the show.  Food & Wine

Serve the beans in small hot cups {be sure package specifies for hot foods & beverages} for snack time, and a little cheese on top can’t hurt

♦♦♦   To give credit where credit is due, the idea for this this fun s’mores-y treat for the sweet side of the Happy Hour table comes from a flyer in Sprouts Famers Market. Campfire Cones! No ice cream, instead filling coconut cones with chocolate, marshmallow, other stuff like coconut if you want, wrapping in foil and grilling.

We took off on this two different ways, in both cases using cup style cones and going a bit more S’mores-y with the addition of graham cracker crumbs . For our baby cone {see pic} we stayed ice-cream-free, layering hot fudge, marshmallow creme, fudge, creme, fudge, crumbs. For the larger one that does use ice cream along with the marshmallow and fudge, you’d probably want to set up a fun diy S’mores buffet.  CS

For the hot fudge the thicker ones work better like Hershey’s or Mrs. Richardson’s, either one OK right from the fridge. You don’t however want to refrigerate any filled cones as they will go soggy.

♦♦♦  In these lazy, hazy – OK, and HOT – days of summer, icy is nicy. Cooling off in the tastiest way is as close as these 12 Frozen Cocktails to sip into as long as the season lingers on. With one more colorful than the next and flavors galore there’s something for everyone to enjoy. Two I found particularly intriguing were the Miami Vice which uses frozen fruit instead of ice, and the Frozen Salted Espresso Martinis with all the interest right there in the title. Cheers!  Food & Wine

And keep those Happy Hour beverages icy with these freezable glasses

♦♦♦  Perfect summer fun. Any prep that starts with watermelon sure inspires further reading. And this one, Watermelon Dessert Pizza, whimsically has a thick slice of the melon taking on the role of “crust.” It then further rewards us with an innovative creamy layer topped off with some if the star’s cousins. And so, so easy. Btw, I took a clue from the comment section and mixed the coconut cream with cream cheese for a sturdier texture.  Tasty

Another tip in the comments suggests patting the watermelon dry so the cream doesn’t slide off

♦♦♦  This is like nachos and poutine meet up and party on a sheet pan. The basis is Disco Fries which first emerged along with the dance craze, reportedly in NJ as a fortifying dish that became popular in late night diners serving folks who got up and boogied into the wee hours. This version starts with the classic trio of fries, cheese and gravy but then adds toppings. It’s called Breakfast Disco Fries because those toppings are bacon and fried eggs. Mine shown here has a somewhat simpler gravy, but still bacony and creamy and yum. For this prep, a shoo-in for our end of the year fave list, and 20 others, thanks to . . .  MyRecipes

I usually use a lot more gravy but wanted you to be able to see all the ingredients. Btw, I love poutine, making my version with tots or fries or diced baked potatoes, sharp cheddar, and beef gravy. And leftovers are almost always joined by fried or poached eggs.

♦♦♦  What I really like about these Best Easy Chicken Croquettes is that the celery, onion, and poultry seasoning give the patties a flavorful stuffing vibe that’s a natural with the chicken. Part of the “easy” is that instead of having to cook up a roux as a thickener, you simply use some cream of chicken soup. Even better the rest of it forms the basis for the sauce. All very tasty. I made them them smaller than the prep specified so they would be a good fit for the snack table.  AllRecipes

♦♦♦   Well how fun is this, a conversation piece taking up residence right in your cocktail. Round ice cubes! How do they do it??? Well, one way is this clever machine that pops out two large “cubes” {speaking categorically} that the maker says “keep drinks colder, longer, and with less dilution.” As a bonus it also makes air bubbles disappear like magic to create crystal clear spheres. There are other choices too, going roundy by different means, but will just note that the featured one is Amazon’s Choice.  Amazon

♦♦♦  Look what just three ingredients can do. Unrolled and slightly flattened crescent roll dough is cut into squares, 3-Ingredient Bacon-Guacamole Crescent Cups lightly pressed into muffin cups, baked until golden. The remaining two ingredients in this prep add up to the title, Bacon and Guacamole Crescent Cups, and to a most tasty result.

♦♦♦  It looks like the new kid in town these days is Kava. A cup of Kava tea. Or a can of Kava drink. Or an alcohol-free Kava cocktail. The root-based beverage, a long-time favorite in the Pacific Islands, is trending here and especially among the younger set but its reputation as a stress reliever, muscle relaxant and sleep aid may hold appeal for all ages. Further evidence of the Kava wave is the emergence now of bars based solely on this specialty beverage. Despite its growing popularity, checking with your doc first is strongly recommended, especially if taking any Rx. Thanks to CS-er BLV for sending the link.  New York Post

♦♦♦  One of our best ever recipes was featured last year, reprised here not only because it’s such a crowd pleaser but also as a no-bake prep it’s perfect as a summer indulgence. It was actually Alexa that brought to our attention this No-Bake Chocolate Peanut Butter Cheesecake. Vying for the richness trophy, the melted chocolate chip layer vs the peanut butter/confectioners sugar tier.

Would certainly be good as is. But just to gussy it up a bit, melted another 1/4 cup of chips to drizzle overall.

Btw, I cut this recipe in half and made it in a deep dish pie plate. Used semisweet chips but think bittersweet could work well too. Also, ran both layers through the food processor so they would turn out silky smooth. Note that it needs fridge time in the process and afterward.

And now I’m wondering, hmmm, how would this be made into bite size treats in a mini muffin pan (???)  Tasty

♦♦♦  Well who wouldn’t be giving this a woohoo upon finding it on the snack table. Crispy Twisty Bacon. Sunny Anderson made this tempter on a recent episode of The Kitchen, seasoning the tight spirals with brown sugar, thyme, and spices. In her memoir, “Enough Already,” she takes us along on her journey of two progressions. First from Hollywood star to Food Network star. Second, her determined steps toward finally declaring that title.

In her own words, “As I have redefined my relationship with food over the past decade – first with my trip to Italy, then by writing a cookbook, and then with the tv series – I have redefined my life and reconnected with values I consider important.” Btw, recipes too, and we’ll be making her famous chocolate cake when baking season returns.  Amazon

♦♦♦   In our 05.27.22 Salon we featured Ocean Spray’s crab, cranberry and cream cheese appetizers, served in mini phyllo shells. Those snacks use such bitsy amounts of ingredients that I had leftover shells, cream cheese, and cranberry too, and decided to put them to use in an easy and pretty dessert plate. For some I beat cranberry and cream cheese till smooth, topped with reserved cranberry. For others I beat the cream cheese with a little juice from mandarin oranges, finished with halves of the mandarins. One important thing to note is that for cream fillings, or similar, you really want to do this as close to service as possible, as the shells can eventually go soft.  CS

♦♦♦  Ever have an upside down martini {spilled ones don’t count}? The Who and the What came out in a chat with Bobby Flay on CNN in advance of the network’s special on Julia Child. He was recalling having lunch with Ms Child when she ordered that libation 🍸 and he learned it’s an inversion of the classic ingredients, meaning reversing the measures for gin and vermouth. Now I could be wrong but I’m pretty sure while the next question was being asked he said almost under his breath, 4 or 5 of them. Cheers Julia, hope you’re enjoying a heavenly golden fountain of endless upside down tinis.  Julia Child

♦♦♦  So, here we have a creative cook’s shortcut turning into a crowd favorite. Instead of individual poppers, all the goodies join forces in “Ryan’s Reverse Popper Dip.” Wowsie, this is good. ♦♦♦   With Cinco de Mayo in sight, what a great time to look into some tasty ways to serve up the day’s classic libation. ♦♦♦  OK, back to bacon. This though is an encore with an enhancement. In our 03.18.22 Salon we featured cheesy bacon bread pudding. Very good as is, but since traditional sweet bread pudding is usually served with a sauce, why not a saucy companion for this savory one. I kept it pretty simple – mayo, enhanced with a touch of ranch dressing, lemon juice and dried parsley.  CS

♦♦♦  I feel like I’m being haunted by volcanos. In last week’s Salon, we featured our discoveries of volcano-shaped dishes for virtually every food group, plus wines from grapes grown on volcano slopes. Now a recent episode of “Bar Rescue” had a mixologist rimming a cocktail glass with volcanic salt. On Google it’s also called lava salt or black lava salt. Then searched using it for cocktails and found it’s mainly for rimming {but see below}. And among those finds was a pretty Strawberry Thyme Margarita from Food 52

♦♦♦  From the number of times I’m coming across this dish, it just might be an exploding trend {sorry,  sorry, sorry}. It’s food volcanos {some really do erupt}. How fun would that be on either the brunch or happy hour table. Lots of festive volcano variations on these google pages . . .  🌋

♦♦♦  How about this for perfect timing? Volcanic Wines! The grapes are literally grown on the slopes of volcanos. Why, and do the workers collect hazard pay? The answer to the first part, as the story says, is that “volcanic soils seem to help impart a distinctive character to wine, both red and white, not found in other places.” There’s more to the tale, including the flavors these grapes yield and the best ones to buy now. Nothing about pairing but guess we could figure this out from the profiles shown for each selection. Just maybe something perfect to create a tasty Volcanic duo.  Food & Wine

Here we stuffed the cleaned, halved peppers with a mix of 4 oz softened block cream cheese, garlic salt, dried parsley and just enough avocado ranch to make a nice consistency, still thick enough to survive a bite without depositing the rest of the filling on the floor. Toppings were, clockwise from rightmost, smoked paprika, chopped pimento olives, green onions, chopped pepperoni, dill weed, and for a sweet touch, diced dates. The CS Kitchen

   Cocktail Hour Buzz

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

Flying high takes on a whole new meaning as the New Zealand winery Invivo launches what is being called “the worlds first winery airline,”  which will operate within the country. A chartered plane will deliver guests to destination towns where they can enjoy exploration time, an overnight stay, and a visit to origin vineyards.  From Food & Wine

Shrimp toasts are a’comin {oops, age-busted by a song}. These traditional Asian appetizers are always just so satisfying, and now you can make them at home with a pretty easy process. A whirl in the processor with fairly familiar ingredients, a quick dip in hot oil and voila! Shrimp Toasts. The story calls them a cocktail hour staple.  From msn.com

This quesadilla is actually an encore, originally appearing as a Feature Recipe in CS over a year ago. It’s here partly because it’s a perfect cold weather snack, which it can so easily become with smaller slices and maybe sans the egg. But mostly because it’s just so full of flavor, exactly as you’d expect from a Bobby Flay creation, loaded with bacon, hash browns, onions, peppers, cheese, salsa and chives – and deserved another time in the spotlight. From Food Network site

Another round of desserts for everyone. OK, so these boozy confections were posted as holiday treats, but thinking they could make any day a holiday. Among the goodies, Mudslide Pie, Grasshopper Cheesecake, and Rum Truffles. Great for the sweet side of the snack table, many already individual servings, and the rest can be cut down to size. You should be able to scroll down on the site and see all the recipes listed rather than doing the slideshow.  From AllRecipes

Finish off the season in tasty style with these “16 Best Snacks for Game Day.” Wowsie, 7-layer taco dip, firecracker shrimp with bleu cheese dressing, mini brioche lobster rolls, lots more. Here too, should be able to scroll to full list.  From Food & Wine

Happiest Holidays! From Thanksgiving Eve to New Year’s Day

Next week – woohoo, our best cook-loving gifts from this year on CS

      Let’s Chat

Kitchen TalkIf buttery desserts are your thing, who better to ask than Land O Lakes. And hurray, we found a good ‘ol downhome one, so perfect for this time of year. Their classic apple cobbler is easy too, just 5 steps. Well, given that the 1st one is light the oven and the 5th one is serve, really 3, unless you consider adding a scoop of vanilla a step rather than a given 😁        Salsa, salsa cruda, salsa fresco, pico de gallo, aaaaaaaaaaah, what’s the difference? MyRecipes untangles it with this salsa scoop   Trouble sleeping? Can food help? Let’s ask the experts. According to The Sleep Foundation, these are The Best Foods to Help You Sleep. The good news is there’s some good stuff in this list. Zzzzzzzz.

Shopping FindsWant to shock your pancakes? Hit them with some wildside syrups. Talking botanicals & barks, and such interesting flavors on Amazon – lemongrass, hibiscus, geranium, basil, peppermint bark, wild cherry bark, cinnamon bark, and hickory. Any of these syrups could I think also jazz up coffee and cocktails.     Want to “holiday up” your kitchen?  Wow, does Amazon have you covered. Chair covers, centerpieces, napkins, tablecloths, runners, wall hangings, fridge decor and more.

This week’s featured CS-designed, Zazzle-crafted item – Perfect gift for dog moms & dads – take a look and see if their {or your} baby is pictured on one of our tees or mugs. All right now in our Eclectic Mall

  Featured Recipes

Bacon Cheeseburger Bake

These fun dish combines two welcome techniques – sheet pan baking and a pull-apart dish. What gives the prep extra interest {not that it needed it when we already have bacon and cheese} is the foundation of Hawaiian rolls, the flavor boost of canned tomatoes with garlic & onion, and a buttery, tangy glaze. In the oven, out of the over, party-ready.  From Taste of Home

Explosion Cakes

It was Tasty.com that first alerted me to this birthday cake phenom. And they say that credit goes to The Flour Shop in NYC for inspiring the confection. May I add though that bd or not, this cake would be a primo conversation piece on any table, maybe especially a holiday one. As you’ll see at the link there are other sources with variations on the theme, all quite spectacular.  On Google.

Guess what I found for you on Amazon! “The Power of Sprinkles: A Cake Book by the Founder of Flower Shop” – all about those colorful stacked cakes, and in a funny nod to the main title, this: “any mistake can be covered by sprinkles.” Prime eligible, $7.59 {70% discount}.

Beefy Tortilla Rollups

These Tortilla Rollups pack a lot of flavor into the colorful, almost artsy, resulting pinwheels. For that we can credit jalapeno cream cheese, pimento cheese and salsa among other goodies.

I actually used deli beef instead of dried beef, and just four tortillas with extra generous filling. Also thinking if you don’t want the jalapeno heat, onion & chive cream cheese would be a tasty substitute.

As a bonus, the red salsa and green onions give it a bit of Christmas spirit. Btw, if you substitute, do keep the pimento cheese.  From AllRecipes

Coconut Desserts with a bonus

At least that’s the promise, that they will “transport you right to the tropics.” The star ingredient can check in as sweetened or unsweetened,  flaked or shredded or chips, or as coconut oil, milk, cream, custard, or extract, sometimes tapping more than one. And the tropical vibe is helped along in the various dishes by, e.g., key limes, pineapple, bananas, lemon, oranges, rum, and spices. Of the 35 preps, have my eye on the slow cooker Coco-Loco Chocolate Fondue.  From Southern Living

Easy Hot Sandwich Recipes

What is it about a good sammie that is just so satisfying?? And at this time of year adding the word hot into the equation makes it even better. And, yes, these do look good. Lots of variety too. Now here’s the thing – after the first half dozen keep scrolling and you’ll see the sausage & pepper heroes, and then keep scrolling for more and more hot sandwiches. So, lots to love too.  From Food & Wine

   Cocktail Hour Buzz

Sundowner snacks, drinks, talk – whether for a crew, or for two, or just for you

Thanks goes to CS Tasting Panel member Debbie Vinson for these tasty tidbits for the sweet side of the snack table. No-Bake Cookies recipe: Bring to a boil 2 c sugar, 1/2 c margarine {butter?}, 1/2 c milk & 2 T peanut butter, cook for 1 min. Off heat, quickly mix in 2 T cocoa, 1 t vanilla & 3 c quick cooking oats. Drop by spoonfuls onto wax paper, cool, store leftovers in fridge.

Debbie adds, “I’ve found 1 cup of sugar is plenty, but I am very generous with the peanut butter, cocoa and vanilla. I also add walnuts.” And think I would add a bit of salt. I left them as is dropped from the spoon but I guess you could also flatten them a bit cookie-like. Lots of ways to play, all good.

Well how fun is this??? But there is a danger here – it may be too pretty to eat, as you can see. This edible holiday wreath is actually a charcuterie board. Of course you crafty CS-ers can make this your own with your choice of elements. But do include apples because this festive idea comes from the Washington Apple Commission {photo too}. Probably don’t necessarily make it apple shape though.

♦  Wow, how nice to see someone honoring the classic cocktails. That someone is Liquor.com and that’s exactly what highlights their “11 Cocktails to Make for the Holidays” featuring such oldies but goodies as Brandy Alexander, Tom & Jerry, even a Flip. Cheers!

Snack chat: heard from competing chef Jonathan Wakefield on Last Call Food Brawl, the Atlanta-based episode “Wings & Bar Bites,” on Travel Channel – “If you want to make a late night snack, wrap it in bacon . . . There’s always room for bacon” –   {applause, applause}
